wonderfully soft bread/ buns

assalamu'alaikum wrm wbt

last 2 days i tried to use the BM's dough menu
but my yogurt bread turns weirdo!
forgot to snap though.. too frustated i guess.
today i tried once again.. to use dough menu 
since the yogurt has khalas.. i had  to try other recipe

wonderfully soft bread
source: yateasybakes
  • 310g bread flour
  • 60g cake plain flour
  • 40g Nestle CoffeeMate milk powder
  • 115ml skim milk (fresh milk)
  • 20g condensed milk
  • 55g castor sugar
  • 3g salt
  • 7g instant yeast
  • 1 egg + 2 egg yolks (I used 2 large eggs)
  • 40g butter (room temperature)
  • Egg Glace : 1 egg lightly beaten with 1 teaspoon water fresh milk <-- i just use 1Tbs fresh milk + few drops of honey

sikecik tak sabar nak makan

  1. Sieve flour mixture into a large mixing bowl.
  2. Make a well in the middle of flour mixture and add in all the rest of ingredients except butter.
  3. Mix till a dough is formed and knead in the butter till you get a smooth dough.
  4. Prove dough for 50 minutes or till double in size.
  5. Divide dough into 12 portions of 60g each and shape it or wrap in the filling. Prove for another 50 minutes or till double in size.
  6. Brush with egg wash and bake at 190C for 15 minutes or till cooked.

    Note : I used my breadmaker to do the job for me...

Congrats dah own a BM ;) Senangkan buat roti dah ada BM. Bila the recipe calls for grams, I will put my BM pan dkt weighing machine and weigh them terus kat dlm pan....jadi tak byk cuci utensils hehehez.

Totally agree with u abt this bun kan....so soft!!

Alhamdullillah, finally u dapat hasilkan roti yang gebu dan sedap. I takde BM, so bila nak buat roti, I just gunakan my giant mixer to do the kneading....ok tak?
btw, i ada nampak this recipe kat rumah Kak YatMaria, tapi belum berkesempatan untuk membuatnya...:-))

Ehhh...kapan arr buat wonderfulicious soft bread ni ya? baru ku tahu Cik Anie kita short cut terus timbang pan atas weighing scale.

I pat buat roti pakai BM, I am very paranoid abt the yeast jump starting with the liquid content sebelum I on the machine, unless calls for by the recipe. That is also why I am so meticulous bab letak tpg after the liquid..punya teruja mak ensure no liquid terkeluaring dari tepung tu.ok sekian ceramah antara liquid & tpg dalam BM pan :)

sblm ni dok guna mixer jugak tp rasa macam BM will shorten my time to knead dan paling seronok bila boleh prepare on the night before & tmrw morning dah boleh enjoy fresh homemade bread.. :D

sis yatmaria.. itu macam ka tips dia. maybe my dough yg hancus & overproof tu diakibatkan oleh yeast & liquid 'ter'bercampur kot??? tengkiu for your ceramah! baru kutahu :D
