sultana oat squares

the munching stock in office dah pupus
since i had gain weight considerably over 3months..
no more brownies and high calories munchies
(iyolah tu!)

so, welcome healthy baking! ;)

am not sure whether this recipe can be considered as healthy or not
(the amount of butter is quite huge! if only i have applesauce..)
but when the word OAT is in the recipe
that is so very healthy already. at least for me :)

For the Crumble:
  • 5 1/4 ounces rolled oats (1 1/2 cups)
  • 7 1/2 ounces soft light brown sugar (1 cup, packed))
  • 6 1/2 ounces of plain flour (1 1/2 cups)
  • 1 tsp bicarbonate of soda
  • 1/4 tsp salt
  • 6 ounces butter, melted (3/4 cup)
Filling:
  • 3 3/4 ounces soft light brown sugar (1/2 cup packed)
  • 2 TBS cornflour (cornstarch)
  • 6 fluid ounces water (3/4 cup)
  • 6 ounces sultana raisins (1 cup)
  • the juice and finely grated zest of one unwaxed lemon
  1. Preheat the oven to 180C. Lightly butter an 8 inch square baking pan. Line with baking parchment, leaving an overhang to help lift the baked squares out.
  2. Place all the ingredients for the filling in a saucepan, with the exception of the lemon and lemon zest. Cook and stir until the mixture boils and thickens. Remove from the heat and stir in the lemon zest and juice. Set aside.
  3. Whisk the oats, brown sugar, flour, soda and salt together in a bowl. Pour the melted butter over top and mix well together until nice and crumbly. 
  4. Press half of the crumbs into the prepared pan. Spoon the sultana filling evenly over top. Sprinkle the remainder of the crumbs over top and press down lightly.
  5. Bake for 35 - 40 minutes until golden brown and firm to the touch. Allow to cool completely before cutting into squares to serve. (i put in fridge then only i cut to pcs..)

puding laici oren

lupa pulak nak post puding ni..
walaupun simple tapi..
mak sangat suka!!

puding laici-oren in pink ;)

bahan2:
  • 25gm agar2 strips <-- saya guna agar2 serbuk
  • 1 tin laici - blend together with juice laici
  • 1.5 litre air
  • 1/2 cup gula
  • 1 tin susu cair <-- saya guna separuh tin
  • 4 tbs sunquick orange <-- saya guna 3biji oren kecik2 (takdak stok sunquik)
tatacara:
  1. Didihkan air, add agar2 strips.
  2. Bila agar2 dah hancur, tapis air kemudian, masukkan semula ke dalam periuk.
  3. Masukkan gula, kacau sehingga gula larut. (sebab guna agar2 serbuk, saya masak semua sekali hingga mendidih: agar2, air dan gula)
  4. Masukkan laici yang telah di blend halus (saya blend oren kecik2 sekali dengan laici)
  5. Bila campuran agar2 dah mendidih, masukkan susu cair dan sunquick oren (tak letak). Tutup api, masukkan dalam acuan.

cake truffles a.k.a cake balls

this cake truffles has been calling me
since i managed to crushed 7 out of 10
chocolate gingerbread cake
which is baked in mini bundt silicon pan
(i keep tight - in fridge & its still edible after a week)



how do i make my cake truffles?
its pretty simple..

all you need is..
cake - any cakes - homemade or store bought - the choice is in your hand :)
frosting - any kind of frosting - cream cheese? choc? heavy cream?
chocolate topping & its condiment - choc rice, choc colors, nuts, etc.

sebelum mekap
tatacara:
  1. hancurkan kek guna garfu atau masukkan kedalam food processor (saya guna garfu je..)
  2. masukkan frosting (saya guna heavy cream) kedalam kek yang dah hancur. gaul sebati. jumlah frosting agak2 cukup bagi kek boleh dikepal.
  3. kepalkan kek atau senduk dengan ice-cream scoop (saya guna sudu bulat saiz 1tsp) dan bulatkan kek yang dah dikepal tadi. letak atas dulang yang berlapikkan kertas tekap atau baking sheet ~ dah jadi cake ball ;)
  4. masukkan dalam peti sejuk sekurang-kurangnya 1jam.
  5. cairkan chocolate dengan cara double boil dan keluarkan sebahagian cake ball tadi.
  6. celupkan kek kedalam coklat dan tabur condiments masa coklat masih basah. buat hingga selesai.
  7. sejukkan cake ball dalam peti ais sebelum dihidangkan.

nota:
saya buat kecik2 ~ 1tsp sudu bulat - dapat 28biji dan guna 100g coklat masakan utk topping.
kek & frosting tak boleh nak agak.. silap tak timbang dulu :(
susah nak hilang tabiat buat kerja campak2 nih {sigh}

peanut butter chocolate chip bars

peanut butter dah beli..
tapi tak sempat buatkan the final request from sil
which is peanut butter cheesecake
it was a pleasure when i came across this recipe..
just waiting for the right time to execute
and that right moment came this morning when..
jiran depan rumah jemput kenduri birthday their daughter
since tak sempat beli present..
might as well bring something to eat
takdela rasa bersalah pegi dgn tangan kosong!

bahan2:
  • 2 biji telur
  • 1cwn gula castor <-- saya kurangkan ke 3/4cwn
  • 1/2cwn gula perang
  • 1/2cwn peanut butter
  • 1sdk vanilla
  • 2sdb butter <-- 30g, pada suhu bilik
  • 1 1/4cwn tepung
  • 1sdk baking powder
  • 1/2sdk garam
  • 1/2cwn choc chips
tatacara:
  1. panaskan oven 180C dan gris loyang 8x8, tabur tepung sekata pada keliling loyang.
  2. dalam mangkuk sedang, whisk telur dan masukkan gula. whisk hingga sebati.
  3. masukkan peanut butter dan gaul sebati.
  4. tambah vanilla dan butter. gaul sebati.
  5. ayak tepung, baking powder dan garam kedalam adunan telur. kaupbalikkan guna sudu kayu.
  6. tuang kedalam loyang dan ratakan permukaan menggunakan spatula. 
  7. tabur choc chips dan tekan sedikit supaya chips masuk kedalam adunan.
  8. bakar selama 35minit atau sehingga lidi keluar bersih apabila dicucuk.
  9. sejukkan pada suhu bilik selama 1jam baru keluarkan dari loyang dan potong 9/16/sukahati ;)

verdict:
jiranku suka!!
she said sedap & its different from the boring brownies..
(fuh! nasib baik tak bawak brownies :p)
anyhow, since am no fan of peanut butter,
i still prefer brownies/ blondies to this bars ;)

speedy chocolate muffins

akhir-akhiran tak kesampaian
akibat kesibukan yang nyaris-tak-cukup-nafas
dah bukan rezeki mereka..

anyway, this speedy turn slowy choc muffins
is so very sedap! so very lembut! so can eat a lot because not-so-manis
thank you anie!!!

bahan2:
  • 250g tepung
  • 2sdk double-acting baking powder
  • 1/2sdk garam
  • 25g serbuk koko
  • 125g gula castor (dah dikurangkan ikut sukatan anie)
  • 175ml susu
  • 100ml sunflower oil (anie guna melted butter, saya guna minyak jagung)
  • 2biji telur, dipukul sedikit
  • 1-2sdk vanilla
  • 75g choc chips
tatacara:
  1. panaskan oven 170C dan lapik loyang muffin dgn kertas cawan.
  2. ayak bahan2 kering: tepung, baking powder, garam dan serbuk koko.
  3. masukkan bahan2 basah: susu, minyak, telur, vanilla dan choc chips. gaul sebati perlahan2.
  4. sudukan kedalam kertas cawan dan bakar lebihkurang 20minit.
nota:
saya ikut anie.. tabur choc chips sebelum bakar.
rasanya sesuai kalau ditukar nama jadi choc chips muffins ;)

thank you mr.internet.. thank you ms.worldwideweb.. thank you google-sir..
without you.. i would never come across the ever luscious red velvet cake..
without you.. i would never know lumberjack does exist in a CAKE-form!

zaman dulukala.. tatkala me'logging' guna kapak..
(terus terbayang matsaleh pakai baju kotak2 dgn jeans bawak kapak panjang)

anyway, back to the cake..
(which i couldnt find the source of history)
i made this cake out of curiosity - of the taste of course
(its fully loaded with fruits & topped with coconut mixture)
and for the farewell party one of the lecturers..
who has worked as hard as the lumberjack!

bahan2:
cake
  • 2biji apple, kupas kulit dan potong dadu
  • 1cwn kurma, buang biji dan potong kecil <-- kurma saya cukup 1/2cwn saja
  • 1/2cwn apricot kering <-- optional. saya letak jugak
  • 1sdk baking soda
  • 3/4cwn air panas mendidih
  • 1cwn gula <-- saya guna 1/2cwn gula perang + 1/2cwn gula castor (reduce 1sdb each)
  • 1cwn minyak jagung
  • 2biji telur
  • 1sdk esen vanilla
  • 1 1/2cwn tepung
  • 1sdk baking powder
  • 1/2sdk garam
topping
  • 60g butter
  • 1/2cwn gula perang
  • 1/2cwn susu
  • 1sdk esen vanilla
  • 1/2cwn shredded coconut <-- saya guna 1cwn dessicated coconut
tatacara:
  1. panaskan oven 180C dan gris loyang springform 9inci.
  2. potong dadu/ kecil buah apple, kurma dan apricot. masukkan buah2 kedalam air panas dan masukkan soda. didihkan semula air.. tutup api setelah mendidih dan biar sejuk pada suhu bilik.
  3. pukul minyak, gula dan telur dalam mixer hingga kembang (dalam 3minit). masukkan esen vanilla.
  4. masukkan adunan buah tadi dan kaupbalikkan hingga sebati.
  5. ayak tepung, baking powder dan garam kedalam adunan dan kaupbalik hingga sebati.
  6. tuang kedalam loyang dan bakar 40-45minit.
  7. sementara kek masak, buat topping dulu: masukkan butter, gula, susu dan vanilla kedalam periuk kecil dan masak atas api kecil hingga butter cair dan gula sebati. masukkan coconut dan gaul sebati. tutup api.
  8. setelah kek masak, keluarkan kek dari oven dan ratakan topping keatas permukaan kek dan bakar lagi 20-30minit atau hingga keperangan.
  9. sisipkan pisau pada keliling kek dan buka springform pan perlahan2. 
  10. sejukkan kek pada suhu bilik sebelum dipotong.
update:
i got to taste just a bite..
wow! its moist & flavorful!
the tart-ness of the apples is covered by the sweetness of the dates
and the crunchiness of the topping makes it outstanding!
no wonder the lecturers literally licking their plate (ayat yg sgt over :p)

garlic potato wedges

konon2 nak jadikan wedding present
last2 alahai.. sayang la pulok!
kensel! ganti present lain lah!
buku2 tu present utk diri sendiri :p

suruh anak teruna gebu tu belek2
pilih menu mana dia nak ummi buatkan..
menu pertama pilihannya semestinya dari buku potatoes:

garlic potato wedges

bahan2:
  • 4biji kentang sedang, cuci bersih tapi tak perlu buang kulit
  • 2sdb butter
  • 4sdb minyak zaitun
  • 2ulas bawang putih, dicincang
  • 1sdb parsley kering*
  • 1sdb rosemary*
  • 1sdb thyme*
  • garam & black pepper secukupnya
*ganti dengan mixed herbs pun boleh..

tatacara:
  1. rebus kentang dalam 10minit (tak perlu sampai lembut sangat). tapis air panas dan siram air sejuk (air paip) dan tapis lagi. dah kering air baru belah memanjang - 4 atau 6 ikut saiz, jangan buang kulit.
  2. panaskan butter dan minyak zaitun dan tumis bawang putih hingga garing. tutup api.
  3. masukkan mixed herbs dan gaul.. sapu dengan brush keatas permukaan kentang yang dah dipotong tadi.
  4. bbq/bakar atas api atau grill dalam oven selama 10-15minit (saya guna suhu 190C)

baru keluar oven..

chocolate cheesecake - an order

my opismate asked me to bake choc cheesecake
i said yes.. and will bring it on monday
come sunday, we were out half day
nun sampai ke empire semata2 kerna macaron!
sampai rumah dah kepenatan..
lepas dinner terus flat!

so, i asked for one day delay..
now, here i am.. updating the blog
while awaiting for the cheesecake to be cooled ;)

bahan2:
  • 1 1/2cwn oreo <-- rasanya 2cwn lebih berpadanan
  • 75g butter, dicairkan
  • 12oz dark chocolate, potong kecil
  • 3 x 8oz cream cheese
  • 1cwn gula
  • 3biji telur
  • 1 1/2sdk esen vanilla
  • 1cwn sour cream <-- saya guna 1/2cwn sour cream+1/2cwn heavy cream (sour cream tak cukup stok!)
  • topping: 1/3cwn heavy cream + 4oz dark choc
tatacara:
  1. base: gris loyang springform 9inci dan panaskan oven 180C.
  2. sediakan base: gaul biskut hancur bersama butter cair dan tekan pada dasar loyang. simpan loyang dalam freezer sementara buat filling.
  3. filling: panaskan coklat secara double boil dan biar sejuk sekejap.
  4. pukul cream cheese hingga lembut. tambah gula dan pukul sebati.
  5. tuangkan coklat yg dah sejuk sikit kedalam adunan cream cheese dan pukul sebati.
  6. masukkan telur sebiji demi sebiji. masukkan esen vanilla.
  7. masukkan sour cream dan pukul perlahan2.
  8. bakar selama 50-55minit.
  9. topping: didihkan heavy cream dan tuang keatas coklat yang dah dipotong kecil2. tuang dan ratakan keatas kek yang telah disejukkan (saya sejukkan semalaman).
nota:
lepas 30minit nampak macam merekah.. so, saya turunkan sikit suhu = 170C
saya bakar extra time ~10min sebab resepi asal guna loyang 10inci.. loyang saya 9inci maka kek lebih tebal.. perlu lebih masa utk masak..

homemade muesli bar

khamis lepas amirah buat muesli bar
tapi tak sempat rasa.. sebab puasa
dah mintak resepi siap2..
lepas tu entah letak kat mana
sabo je la!

hmm.. lebih kurang je..
jalan je lah!
tak sabar nak korbankan honey stars..
yang dah berbulan2 tersadai!

potong kecik2 senang nak ngap ;)

Ingredients:
  • ½ cup (125mL) honey <-- i add 2tbs of peanut butter
  • ¼ cup caster sugar <-- replace with 1/8cup brown sugar 
  • 125g butter
  • 3 cups rolled oats (see note for GF) <-- use 2cups only
  • 1 cup rice bubbles <-- use 2cups of honey stars
  • 1 cup sultanas <-- my son kept adding more and more!!
  • ½ cup chopped apricots or dates or choc chips <-- i opt for choc chips 
  • ½ cup desiccated coconut <-- i use 2tbs only (dont really like it :p)
  • ¼ cup pepitas (pumpkin seed kernels), sunflower or sesame seeds <-- use sunflower seeds
Method:
  1. Preheat oven to 180°C. Grease and line a slice tray with baking paper <-- i use swiss-roll tray
  2. Combine honey, sugar and butter in a saucepan over medium heat.
  3. Cook, stirring, for 2-3 minutes until butter melts and sugar dissolves.
  4. Bring to the boil and cook for 2 minutes or until syrup thickens slightly.
  5. Remove from heat.
  6. Combine remaining ingredients in a large bowl.
  7. Pour over the hot syrup and stir to combine.
  8. Spoon into prepared pan and press firmly to make sure the mixture will stick together.
  9. I wet my fingers with a bit of cold water and press the top to get a smooth finish.
  10. Bake in oven for 15-20 minutes or until golden.
  11. Cool and then refrigerate until well chilled and cut into 24 slices (about 2cm x 6cm). <--definitely must be chilled first otherwise you'll get a crumbly muesli instead of a bar..
Notes:
  1. To make these muesli bars gluten free, use 2 cups of crushed cornflakes and 2 cups of rice bubbles.
  2. The mixture has a total of 1½ cups of dried fruit – use whatever combination you or your kids prefer.
  3. You could use half honey, half smooth peanut butter in the ‘syrup’ or add nuts to the mixture

seluar & kain pun banyak dah ketat!!

oleh kerna dah lama teringin nak rasa gingerbread cake
kena buat jugakla.. and this will be the last time
making cake just out of curiosity...
but.. knowing how fickle-minded i am..
its no promise.. :p

initially, am no cake-lover
i never really like the cakes on the shelf
no matter how beautiful it is
i think the taste is dull & boring (mengada2 sungguh!)
except for the expensive ones (RM11.90 per slice is way too pricey!)
until.. i tried to bake myself..
i just cant stop!
when i read the recipes.. i feel like i had to try it.. i wanna taste it..
so, the journey began..
until i put on weight steadily..
until my kain & trousers almost cannot be zipped..
until today.. my last effort of baking cakes for myself

INGREDIENTS:
  • 2 cups all purpose flour (10 oz)
  • 2 teaspoons baking soda
  • 1/2 teaspoon coarse kosher salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves <-- not in stock :(
  • 2 teaspoons ground ginger
  • 1-1/4 cup sugar
  • 1/2 cup dark molasses
  • 1/2 cup vegetable oil
  • 1/2 cup butter, softened
  • 3 large eggs
  • 1 cup hot coffee
  • 1/2 cup unsweetened cocoa powder
  • *powdered sugar for dusting
DIRECTIONS:
  1. Preheat oven to 350 degrees.
  2. In a small bowl, stir coffee and cocoa powder until smooth – set aside.
  3. Cream butter, oil, and sugar until it is nice, white, and fluffy (it should look like whipped cream) for 3 minutes using a mixer.
  4. Add ginger, cloves, salt, cinnamon, and baking soda.
  5. Add eggs and molasses – mixing for a minute.
  6. Finally add flour and coffee/chocolate mixture and beat for a few minutes.
  7. Stop the machine, scrape batter from all sides including the bottom and mix again for another minute.
  8. Pour batter into a bundt pan which has been coated generously with non-stick spray.
  9. Bake for 60 minutes. Allow cake to cool for 8 minutes before shaking the sides loose and inverting it onto a cake plate.
  10. Dust cake with powdered sugar. Enjoy!



note:
i made half of the recipe in a mini bundt pan and bake for 25mins - yields 10mini bundt cakes

verdict:
am very satisfied with the outcome esp. the taste.
the ginger-taste is not that strong with addition of cocoa..
the cake itself is soft & fluffy..
and i managed to get only 3decent pcs out of 10
huhuhu.. time for trifle again?
adehhh.... bila nak selim balik camni???


baked macaroni ala lasagne

semalam anak dara tak sehat..
demam & selsema & lemah je badan dia..
(kes sakan sangat berendam kat cherating)
bila tanya nak makan apa..
dia kata nak macaroni bakar
aih.. heran jugak.. pasta is not really her fav.
anyway, dia kata nak tidur rumah tok..
haa.. bleh la buat xtra utk bawak ke rumah tok

so, resepi kak shidah jadik pilihan :)

Ingredients

500gm macaroni - boiled til al-dante, toskan, set aside

Bechamel Sauce
  • 3 tbs butter
  • 3 tbs flour
  • 2 cups milk
  • 1/2 cup water
  • 125gm grated cheddar cheese (I used sliced cheddar cheese)
  • salt, pepper
cara2
  1. Melt the butter, add flour, goreng sampai kuning, tutup api, add milk and water, kacau sampai tak berketul.
  2. If the sauce berketul, just masuk dalam blender, blend kejap, then tuang balik ke dalam periuk.
  3. Panaskan the sauce, sampai sauce pekat, add salt, black pepper and cheese.
Meat Sauce
  • 1/2kg minced meat
  • 1 tin tomato paste
  • 1/2 tin air
  • 2 biji tomato - diced
  • 1 biji bawang besar - diced
  • 5 garlic - minced
  • salt, sugar, black pepper
  • few tbs olive oil 
cara2

  1. Panaskan olive oil, masukkan garlic and bawang besar. Goreng sampai kuning.
  2. Then masukkan minced meat. Cook the minced meat sampai garing ie air from the meat kering.
  3. add diced tomato, goreng for few minutes then add tomato paste and water.
  4. Let it simmer for a while, then add salt, sugar and pepper. Set aside.
Lepas dah rebus the macaroni, boleh start melapis. Lapisan bawah sekali, should be macaroni, then meat sauce, then macaroni again, bechamel sauce, selang seli sampai semua sauce habis. Lapisan atas should be meat sauce, topped with grated cheddar cheese or sliced cheddar cheese. Baked for 45 mins, 170 degree celcius.

memang sedap! lain drp baked macaroni yg biasa buat.. sebab ada rasa lemak2 berkrim bechamel sauce tu.. tengkiu kak shidah!! :)

congo bars

resepi ni dah lama tumbuh macam cendawan disana sini
tapi panggilan pulau itu belum sampai kat saya
sehinggalah semalam..
bila cik abe kata ummi-tok nak balik esok
dalam kepala i was thinking.. apala nak bekalkan diorang ek?
mula2 terlintas brownies...
nope.. too chocolatey for ummi-tok
bila browse the "followed-blog"
nampak congo bars dalam decochoco
yes! this is the one!
sesuai sangat utk bekalan.. kan?

hmm.. macam tak cukup bitamin K je..

  • 2 3/4 cup all purpose flour - (315g)
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup butter, softened - (150g)
  • 1 lb. light brown sugar(453g) <-- saya guna 325g
  • 3 eggs
  • 1 teaspoon vanilla
  • 11.5 ounce package milk chocolate chips (326g) <-- campur mini cc & hershey's 
  • 1 cup chopped pecans (optional) <-- letak jugek ;)
By mixer:
  1. Sift flour, baking powder and salt in a large bowl. Set aside.
  2. Combine butter and sugar using a mixer until blended.
  3. Add eggs, one at a time to sugar mixture, mixing on low in between each addition.
  4. Add vanilla and mix.
  5. Add flour and mix until combined.
  6. Stir in chips and then pecans. 
or..
By hand:
  1. Sift flour, baking powder and salt into a large bowl. Set aside.
  2. Stir brown sugar into softened (not melted) butter in another large bowl until butter disappears. You can use the back of your spoon to help incorporate the two together.
  3. Add eggs one at a time to butter mixture and stir well after each egg.
  4. Add vanilla, chocolate chips and nuts. Mix well.
  5. Add dry flour mixture and stir until well combined.
  6. Coat a 13 X 9pan with non-stick spray and spread batter evenly into dish 
  7. Bake at 170 degree for 30 minutes or until top is golden brown. Make sure you don’t over bake.

cepat betul cair frosting tu!

so, jadiklah blueberry cake. aci kan?

  • 1 cup milk
  • 1 tablespoon vinegar
  • 1 3/4 cups all-purpose flour
  • 2 cups white sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup strong brewed coffee, cold
  • 1 teaspoon vanilla extract
  • 250g blueberry filling
  • 500ml non-dairy whip topping
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 inch cake pans. Make sour milk by combining milk and vinegar. Set aside
  2. Sift together the flour, sugar, cocoa powder, baking soda, baking powder and salt. Set aside. In a large bowl, whisk together the eggs, oil, coffee and vanilla. Stir in the sour milk. Gradually beat in the flour mixture, mixing just until incorporated.
  3. Pour batter into prepared pans. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow cake layers to cool completely before filling.
  4. To make the center filling: Combine 4tbs of blueberry filling with 4tbs of whipped topping. 
  5. Spread th center filling on top of one cake and sandwich with another cake. frost the cake with non-dairy whip topping <-- whipped till stiff first.

                        anak teruna gebu suka makan pasta
                        especially the cheesy ones
                        his favorite are lasagna and cheese, onion & potato pie
                        so.. i made this casseroles for his dinner tonite
                        habis 2 bekas dia makan!
                        ;)

                        
                        jatuh chenta dgn casserole RM5 from daiso itu ;)

                        bahan2:
                        • 1tbs butter
                        • 1biji bawang besar
                        • 4fillet chicken breast atau isi ayam, potong kecil
                        • 1tin campbell mushroom soup
                        • 2/3cwn susu segar
                        • 3/4cwn shredded cheddar cheese
                        • 1/4tsp black pepper
                        • 3cwn nasi
                        tatacara:
                        1. panaskan oven 180C dan gris bekas 13x9 inci (saya guna 5 casseroles kecil2)
                        2. dalam skillet, cairkan butter dan masak bawang hingga layu. masukkan isi ayam dan masak hingga masak (duh! ayat apa ni?).
                        3. masukkan sup, susu, 1/2cwn cheese dan black pepper. masak hingga agak likat dan cheese cair.
                        4. masukkan nasi dan gaul sebati.
                        5. masukkan kedalam bekas bakar dan tabur baki cheese 1/4cwn keatas adunan.
                        6. bakar 30-35minit
                        7. makan panas2..
                        nota:
                        resepi asal actually broccoli-rice bake
                        saya pepandai ganti dengan ayam ;)

                        stone fruit tea cake

                        i promised to my colleague..
                        to make something out of the over-ripe banana
                        for our monthly staff meeting
                        but disaster strikes
                        melayu kata: malang tidak berbau

                        so, i made this stone fruit tea cake
                        as a replacement
                        glad they liked it!


                        in the oven

                        • 1 Tbsp butter (for greasing pan)
                        • 150gm all purpose flour
                        • ½ tsp baking powder
                        • ½ tsp salt
                        • 100gm sugar (can be reduced to 80gm, I used dried apricots as filling and I found it the whole cake a bit sweeter than I’d prefer it)
                        • 80gm butter
                        • 1 + ½ egg
                        • 1 Tbsp orange zest
                        • 1 Tbsp brown sugar <-- i forgot!!
                        • 75gm dried apricots (about 12) soaked overnight in 75ml orange juice
                        • 1 black plum, diced <-- NIL :(
                        • 70gm blueberries <-- i use 100gm
                        1. Whisk the flour, baking powder, and salt together in a bowl. With a mixer, cream the sugar and butter together on medium-high speed for 3 to 5 minutes, until light and fluffy. Add the eggs one at a time, scraping down the sides of the bowl after each addition, then stir in the orange zest..
                        2. Add the flour in 2 or three shifts, mixing just until a smooth dough forms. It will be pretty soft still. Dollop it out onto two pieces of plastic wrap, making one mound of dough slightly larger than the other. Wrap the dough blobs in the plastic and form them into flat discs. Place on a baking sheet and stick them in the freezer for 30 minutes. While waiting, prepare and cut your fruits.
                        3. Preheat the oven to 160/180C. Butter a shallow, 8-inch baking dish or tart pan Take the slightly bigger parcel of dough and press it down onto the bottom of the pan. Scatter the fruit over the dough. Break the second disc of dough into tsp size balls and scatter them over the fruit. It will look charming no matter how even the blobs are, so don't worry too much about getting them perfect.
                        4. Bake for 30 to 40 minutes (I baked for 35), or until lightly golden and firm. Cool for 30 minutes before serving.

                        this time i was so kalut..
                        i measured 100g of butter instead of 80g
                        i realized only after the flour has been incorporated into the batter
                        so, i tried to counter by adding up little more flour
                        and rolling the top-batter into flour before layering it on top of the fruits
                        end up.. a funny patchy-looking teacake!

                        but the image of her chocolate chocolate chip banana bread
                        has always been in my mind..
                        alluring me to taste it..
                        tempting me to bake it..

                        the time is just right
                        when there's too ripe bananas left in the pantry
                        and someone almost throw it into the dustbin
                        NOOOO...!!!!!
                        gimme.. gimme.. gimme..
                        i'll make you something out of it!

                        late in the evening.. am still in the office
                        dear hubby called.. and asked: when r u coming home?
                        just a minute! am on my way already..
                        am actually writing down this recipe!
                        and i missed the most important ingredient!
                        the FLOUR!!!!
                        sheeeeshhhhhhhhhhhhh!
                        and i taught it might be a flour-less banana bread
                        how wrong! totally unacceptable!
                        that is the price i have to pay
                        for not telling the truth to my husband
                        and this is not the first time either!
                        sigh.. when will i learn?? :(

                        anyway, i proceeded to add on the flour
                        after 1 hour of baking
                        and re-bake for another 40mins
                        my oh my..
                        it still taste great despite of its yucky appearance!
                        am happy to share the recipe here :)

                        lo & behold..
                        the greatest moistest chocolate chip banana bread recipe

                        ingredients:
                        • 1 stick of salted butter, softened to room temp.
                        • 1/2 cup sugar
                        • 1 egg
                        • 2 large ripened bananas mashed ( or 2.5 small bananas)
                        • 1 tsp vanilla
                        • 1 cup flour
                        • 1 tsp baking soda
                        • 2 Tbs cocoa powder
                        • 1/2 cup of sour cream
                        • 1 cup of mini chocolate chips (regular chocolate chips work too)
                        • *optional 1/2 cup of chopped walnuts <-- i did add 


                        method:
                        1. Preheat over to 350 degrees. Lightly grease a 9×5 loaf pan, or 2 mini pans with non-stick spray. 
                        2. In a large bowl, cream butter and sugar together. 
                        3. Stir in egg, mashed bananas, sour cream, and vanilla until well blended. 
                        4. Add baking soda, cocoa, and flour. Mix everything until well incorporated (about 3 minutes in a Kitchenaid mixer). 
                        5. Add chocolate chips and nuts (if applicable).
                        6. Pour batter into loaf pan(s) and bake for 50 minutes – 1 hr. Insert a tooth pick into the center of the loaf and check to see if it comes out clean when you pull it out.
                        7. Remove from heat and allow bread to rest in the loaf pan for 10 minutes. Invert the loaf pans onto a cooling rack. Enjoy warm or cold.

                        i will definitely make this again!

                        2nd attempt of madeleines

                        the 1st attempt seems not right
                        too dense. too hard-to-bite!
                        sampai kena korbankan jadik trifle!

                        this 2nd attempt..
                        i kept in fridge approximately 30mins only..
                        and it turned out soft & fluffy!

                        ingredients:
                        • 1/2 cup unsalted butter, melted and cooled
                        • 1 cup all-purpose flour
                        • 1/2 teaspoon baking powder
                        • 1/8 teaspoon salt
                        • 3 large eggs, at room temperature
                        • 2/3 cup granulated white sugar
                        • 1 teaspoon pure vanilla extract
                        method:
                        1. First, melt the butter and allow it to cool while you make the batter.
                        2. In a small bowl place the flour, baking powder and salt and whisk until well blended.
                        3. In the bowl of your electric mixer, beat the eggs and sugar at medium-high speed until the mixture has tripled in volume and forms a thick ribbon when the beaters are lifted (about 5 minutes).  Add the vanilla extract and beat to combine.
                        4. Sift a small amount of flour over the egg mixture and, using a large rubber spatula, fold the flour mixture into the beaten eggs to lighten it.  Sift the rest of the flour over the egg mixture and fold in being sure not to overmix or the batter will deflate. 
                        5. Whisk a small amount of the egg mixture into the melted butter to lighten it. Then fold in the cooled melted butter in three additions. 
                        6. Cover and refrigerate for at least 30 minutes, or several hours, until slightly firm.
                        7. Position a rack in the center of the oven and preheat to 375 degrees F (190 degrees C). 
                        8. Generously butter two 12-mold madeleine pans.  Dust the molds with flour and tap out the excess. 
                        9. Drop a generous tablespoonful of the batter into the center of each prepared mold, leaving the batter mounded in the center.  (This will result in the classic "humped" appearance of the madeleines.)
                        10. Bake the madeleines for 11 to 13 minutes, until the edges are golden brown and the centers spring back when lightly touched.  Do not overbake these cookies or they will be dry.

                        masih ramai tamu dirumah.. so..
                        cik abe belikan nasik lemak (restoran) taqwa for breakfast
                        and i made the side dish = apple muffins!
                        macam tak ngamm je kan?

                        teringat nak buat muffins ni sebab ada baki apple,
                        yang dah di'sauteed' dengan cinnamon & brown sugar
                        belen buat apple puff pastry last weekend..

                        bahan2:

                        • 1cwn tepung whole wheat 
                        • 1cwn tepung gandum
                        • 1sdk baking powder
                        • 1sdk baking soda
                        • 1/4sdk garam <-- saya letak secubit je
                        • 1tbs serbuk cinnamon
                        • 1/2cwn atau 4oz gula castor
                        • 1/2cwn gula perang, bahagi 2
                        • 1 biji telur
                        • 1cwn buttermilk atau plain yogurt
                        • 2biji apple, dipotong dadu
                        • dried kiw, potong kecil2 <-- saja tambah ;)
                        tatacara:
                        1. panaskan oven 210C dan gris loyang muffins/ lapik kertas cawan.
                        2. sebatikan bahan2 kering, ketepikan dulu.
                        3. pukul butter, gula castor dan 1/4cwn gula perang hingga gebu (dalam 3-5minit). 
                        4. masukkan telur. pukul sebati. masukkan yogurt. pukul perlahan2.
                        5. kaupbalikkan adunan kering kedalam adunan butter.
                        6. masukkan apple. gaul sebati.
                        7. cedok adunan kedalam loyang. tabur baki gula perang keatas muffins.
                        8. bakar 10minit dan kemudian turunkan ke suhu 200C dan sambung bakar lagi 5-10minit.
                        verdict:
                        whole wheat flour + apple + yogurt = i feel healthy!

                        easiest chocolate snack cake

                        i made this chocolate snack cake purposely.. only..
                        for making the black forest trifle
                        as per requested by antinor..

                        i found that this is the easiest and simplest
                        chocolate cake i ever made!
                        and the taste is not being compromised either!

                        bahan2:
                        • 1 1/2cwn tepung
                        • 1cwn gula
                        • 1/4cwn serbuk koko
                        • 1sdk baking soda
                        • 1/2sdk garam
                        • 1/3cwn minyak jagung
                        • 1sdk cuka putih
                        • 1sdk esen vanilla
                        • 1cwn air sejuk
                        tatacara:
                        1. panaskan oven 180C dan gris loyang 4segi bersaiz 8inci.
                        2. gaulkan bahan2 kering guna whisker: tepung, serbuk koko, soda dan garam.
                        3. dalam mangkuk kecil, sebatikan minyak, cuka dan esen vanilla.
                        4. dengan kadar segera.. tuang dan gaulkan minyak dan air sejuk kedalam mangkuk bahan2 kering.
                        5. tuang kedalam loyang dan bakar selama 20-25minit.
                        verdict:
                        mak mertua siap kata.. eh! dah siap?
                        ngee...
                        tekstur kek memang lembut!
                        and look ummi! no egg!!

                        apple puff pastry

                        ramai tetamu kat rumah tadi..
                        rasa seronok nak baking anything!
                        lagi seronok bila tengok semua pun licin!

                        apple puff pastry ni sangat simple
                        guna pastry segera tajuk kawan
                        inti dari internet tapi lupa sumbernya :(

                        bahan2:
                        • puff pastry tajuk kawan
                        • 4biji apple hijau
                        • 1/4cwn butter <-- elok kalau dikurangkan ni..
                        • 1/2cwn gula perang
                        • 2sdk cinnamon powder
                        • dash of allspices
                        • 1sdk tepung jagung
                        • 1biji telur - egg wash

                        tatacara:
                        1. defrost pastry. panaskan oven 190C (fan-force) dan lapik dulang bakar dengan kertas.
                        2. kupas kulit dan potong dadu apple hijau.
                        3. panaskan butter dalam skillet/ pan dan masukkan gula perang, cinnamon dan allspices.
                        4. masukkan apples dan gaul sebati hingga apple lembut.
                        5. masukkan tepung jagung dan gaul hingga agak likat.
                        6. sudukan adunan apple keatas pastry dan lipat & tekan keliling dengan garfu.
                        7. sapukan egg-wash keatas pastry.
                        8. bakar selama 20-25minit.
                        nota:
                        adunan filling tu cukup (dan mungkin lebih) utk 20 keping pastry "kawan".



                        mini oreo cheesecake

                        oreo cheesecake

                        i made a mini version..
                        using different recipe from previous attempt


                        ingredients:
                        • 1 package Oreo Cookies
                        • 2 (8 oz.) packages cream cheese, softened
                        • 1/2 cup granulated sugar
                        • 1 tsp. vanilla extract
                        • 2 large eggs
                        method:
                        1. Preheat oven to 160C.
                        2. Place foil or paper muffin cups in a muffin pan.
                        3. Split cookies in half. Put the side of the cookie that has more icing in the foil or paper muffin cups, icing sides up. Reserve the remaining cookie halves and set aside.
                        4. Beat together the cream cheese, sugar, vanilla, and eggs. Spoon mixture into the muffin cups about 3/4 of the way up.
                        5. Crush the remaining cookie halves and sprinkle over tops. <-- i crushed the remaining cookies and fold into the batter.
                        6. Bake in preheated oven for 20-25 minutes. Let cool, then refrigerate for 1 hour or overnight.
                        note:
                        Makes approximately 15 mini cheesecakes. <-- i got myself 16mini oreo cheesecake.

                        Tip from Diana's Desserts:
                        Serve these little goodies topped with drizzled chocolate and a dollop of thawed non-dairy whipped topping.

                        crispy chocolate chip cookies

                        adik kecik buat kenuri cukul jambul anak sulong dia..
                        dia mintak kakak dia buatkan choc chips.
                        lerr.. itu je?
                        hehe.. itu je la pun yg kakak dia gheti..
                        kang disuruhnya buat nasik tomato ke.. nasi briyani ke..
                        nehiii!!! lariiiiiii!
                        rasanya kalu nasik2 dan lauk pauk semua masak cara bakar
                        mebe buleh diusahakan jugak kot? poyos :p

                        definitely crunchy cc!

                        anyway,
                        resepi choc chip sama sebijik macam pernah buat sblm ni..
                        c&p balik je ni cuma ada xtra info sket ;)

                        bahan2:
                        • 2 1/4cwn tepung
                        • 1sdk baking soda
                        •  1sdk garam
                        • 1cwn ~ 225g butter - suhu bilik
                        • 3/4cwn gula perang <-- saya letak 1/2cwn
                        • 3/4cwn gula castor <-- yg ni kasi lebih = 1cwn
                        • 1tsp esen vanilla
                        • 2 telur gred A
                        • 2cwn chocolate chip
                        • 1cwn kacang yang dihancurkan <-- saya letak almond nibs

                         tatacara:

                        1. saya ikut tatacara bagi mendapatkan cookies yg nipis & crispy dari joepastry.com
                        2. gaulkan tepung, soda dan garam dalam mangkuk kecil dengan whisker. 
                        3. dalam mangkuk besar, gaul sebati butter, gula perang dan gula castor menggunakan sudu kayu.
                        4. tambah telur satu per satu. tambah esen vanilla.
                        5. masukkan adunan tepung kedalam adunan butter dan kacau sebati.
                        6. tambah chocolate chip dan kacang. kacau sebati.
                        7. sejukkan adunan dalam peti sejuk dalam 1jam.
                        8. panaskan oven ke 175C
                        9. guna 2 sudu kecil.. sudukan ke atas dulang pembakar yang telah dilapik.
                        10. bakar selama 15-18minit.
                        11. keluarkan dari oven dan biar dalam 5minit (dia tengah masak lagi masa ni ~ agak lembut lagi) kemudian, baru transfer ke atas wire-rack.
                        nota:
                        sukatan gula perang yg lebih akan membuatkan biskut jadi chewy. saya kurangkan utk mendapatkan tekstur yg lebih crunchy.
                        nota tambahan: saya tak sukat exactly 1cwn & 1/2cwn gula.. saya kurangkan at least 1sdk.. and still manis leting jugok (to me lah)! but thats its character rite?

                        verdict:
                        adik2 ipar sgt suka ;)

                        dried apricot muffins

                        ok. i lied.
                        the real name was: dried cherry buns
                        but i use dried apricot
                        and i does not look like a bun at all!
                        so, tell me now.. sapa tipu sapa?

                        boleh agak tak lokasi background tu?
                        sumber resepi: buku BAKING
                        bahan2:
                        • 3oz dried apricot, potong kecil2
                        • 4oz yogurt
                        • 2oz butter
                        • 3oz gula <-- saya guna molasses 2.5oz
                        • 1 biji telur
                        • 1/2sdk vanilla
                        • 3.5oz tepung
                        • 1sdk baking powder
                        • 1/2sdk baking soda
                        • 1/8sdk garam <-- tak perlu letak jika guna butter bergaram
                        tatacara:
                        1. panaskan oven ke 190C dan gris loyang muffins atau lapik dengan kertas cawan.
                        2. gaulkan dried apricot dalam yogurt. ketepikan dulu.
                        3. pukul butter dan gula hingga kembang dan pucat. masukkan telur dan vanilla. pukul sebati.
                        4. ayak tepung, bp, bs dan garam. gaul adunan apricot kedalam tepung.
                        5. kaupbalikkan adunan tepung+ apricot kedalam adunan butter.
                        6. tuang kedalam loyang muffins dan bakar 20minit.
                        
                        bekalan breakfast :)
                        

                        verdict:
                        sarapan yang menyihatkan! yeke? :p
                        anyhow, the texture is so soft! 
                        tq to the yogurt existence :)

                        tapi yang musykilnya.. molasses matsaleh ni..

                        chocolate orange brownies

                        apa rasanya ya.. gandingan orange & coklat?
                        memang pernah makan wafer orange cadbury
                        tapi sangat2 jarang.. dah 10tahun kot tak makan?
                        resepi ni simpel sangat2..
                        cuma guna serbuk koko.. & mix all in 1bowl!
                        ready in less than an hour :)

                        this brownies has a cake-like texture

                        ingredients:
                        • 3/4 cup white sugar <-- i should've reduce this lah!
                        • Juice and zest of 1 orange <-- since the orange is already sweet :(
                        • 1 egg
                        • 6 tablespoons oil <-- i use canola oil
                        • 1 cup all-purpose flour
                        • 6 tablespoons cocoa powder
                        • 1/4 teaspoon salt
                        • 1/4 + 1/8 teaspoon baking soda
                        • 6 tablespoons chocolate chips
                        method:
                        1. Preheat an oven to 350 degrees (180C).
                        2. In a bowl, mix together the sugar, juice, and zest from one orange. Try to get out as much juice as you can squeezing it between your hands.
                        3. Next, mix in the oil and the egg and whisk until combined.
                        4. Sift in the cocoa powder, flour, salt, and baking powder (i assume this as baking soda), and fold until it all just comes together.
                        5. Finally, add in the chocolate chips and fold to incorporate.
                        6. Pour the dough into an 8×8 baking pan and bake for 30 minutes or until the center is set.
                        jemput makan :)

                        verdict:
                        satu kelainan! kurang kemuakan.
                        & it excite the tastebud!


                        chocolate pudding

                        i made this chocolate pudding..
                        since i have 3egg yolks sitting idle in the fridge


                        this is my breakfast today ;)

                        bahan2:
                        • 2cwn susu
                        • 1/2cwn gula
                        • 1/3cwn serbuk koko
                        • 3biji kuning telur
                        • 6tsp tepung jagung
                        • 2tsp esen vanilla
                        • 1/4tsp garam
                        tatacara:
                        1. panaskan 1 1/2cwn susu, gula dan serbuk koko dalam periuk hingga mendidih. kacau dengan whisker hingga sebati. tutup api, biarkan sekejap.
                        2. dalam mangkuk lain, whisk kuning telur, 1/2cwn susu, tepung jagung, esen vanilla dan garam. tuang adunan susu+koko tadi kedalam adunan telur. kacau sebati.
                        3. tuang kembali keseluruhan adunan kedalam periuk dan kacau hingga mendidih. dah didih, kecilkan api dan terus kacau hingga likat (dalam 2-3minit).
                        4. tuang kedalam cawan kecil dan cover mulut cawan dengan plastic clingwrap.
                        5. sejukkan sekurang-kurangnya 3jam sebelum menjamu selera.
                        nota:
                        saya dapat 5gelas kecil..

                        verdict:
                        adikkecik makan panas2 habis 1gelas!
                        hantu coklat macam mak dia jugak :p
                        puding ni lembik je.. memang kena cedok terus dari bekas
                        makan dengan aiskrim vanilla memang best!

                        japanese cottonsoft cheesecake

                        when hubby says we'll be going to semenyih
                        i was excited! i want to bake something for the girls!
                        this recipe was just right since i have loads of eggs
                        and just 250g of cream cheese

                        its my 2nd attempt of making this cake
                        after the volcano look-alike
                        and still..
                        i did not get it right!
                        duh!

                        thy shall not be dense! :(

                        • 140g fine granulated sugar
                        • 6 egg whites
                        • 6 egg yolks
                        • 1/4 tsp cream of tartar
                        • 50g butter
                        • 250g cream cheese
                        • 100 ml fresh milk
                        • 1 tbs lemon juice
                        • 60g cake flour /superfine flour
                        • 20g cornflour (cornstarch)
                        1. Melt cream cheese, butter and milk over a double boiler. Cool the mixture. Fold in the flour, the cornflour, egg yolks, lemon juice and mix well.
                        2. Whisk egg whites with cream of tartar until foamy. Add in the sugar and whisk until soft peaks form.
                        3. Add the cheese mixture to the egg white mixture and mix well. Pour into a 8-inch round cake pan (Lightly grease and line the bottom and sides of the pan with greaseproof baking paper or parchment paper).
                        4. Bake cheesecake in a water bath for 1 hours 10 minutes or until set and golden brown at 160 degrees C (325 degrees F).
                        notes:
                        i did take note from my previous failed attempt:
                        1. leave the oven door ajar for 30mins after baking time.
                        2. putting the 9inch baking tin in 10inch baking tin and fill the hotwater halfway up & put tehm in the oven at one go.

                        verdict:
                        it has some improvement but still..
                        doesnt come out the way it should have been!!
                        kenapa dia masih kecut di keliling kek itu?
                        kenapa dia jadi padat & not cottonsoft??
                        takmo kawan la camni!

                        update:
                        dah sampai semenyih.. dah potong slice nipis2..
                        i found out.. the texture is cottonsoft after-all ;)
                        suke le tu!
