swiss apple pie

i made this as buah tangan balik kampung
thank you so much kak shidah..
for the recipe and for the apples!
i'll be forever indebted to you..

  • 2 cups Granny Smith apples (cubed)
  • 1 cup  flour
  • 1 cup brown sugar <-- ikut suggestion k.shidah, i reduce to 3/4cup
  • 1tsp baking powder
  • 2 large eggs
  • 1/2 cup walnuts
  • 1tsp vanilla extract
  • 1/8tsp salt
  1. Just mix the dry ingredients first ie flour, baking powder, salt with a whish. 
  2. Then, in a different bowl, whisk eggs, brown sugar and vanilla until combine, slowly add the dry ingredients.
  3. Last, fold in apples and walnut. 
  4. Pour the batter in a greased and floured pie dish.
  5. Bake for 30minutes or until a skewer inserted comes out clean.

nigella's baklava muffins

the school is celebrating teacher's day
insyirah wants to make muffins for her teachers
just because teacher zarina love the muffins that i made before :p
but this time i chose the recipe from nigella's book
the filling & topping ingredients are similar to baklava: nuts and honey
hopefully teacher zarina will like this one too :)

filling
  • 100g walnuts, chopped
  • 75g demerara sugar <-- i use brown sugar
  • 1 1/2 tsp cinnamon
  • 45g butter, melted
muffins
  • 210g plain flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 75g caster sugar
  • 1 large egg
  • 45g unsalted butter, melted
  • 250ml buttermilk
topping
  • 125ml runny honey
  1. Preheat oven to 200°C/180°C fan forced.
  2. Mix all the filling ingredients together in a small bowl, set aside.
  3. In a large bowl, mix together the flour, baking powder, baking soda and sugar.
  4. Mix the egg, melted butter and buttermilk.
  5. Make a well in the dry ingredients and add gently mix in the wet ingredients.
  6. Fill 12 muffin cups 1/3 full, add a tablespoonful of filling, cover with muffin mixture until 2/3 full. Sprinkle any remaining filling on top of the muffins.
  7. Bake for 15 minutes. Put the muffins onto a rack to cool and drizzle with warmed honey.

note:
i use ikea's muffins papercase.. which is quite big.. yields only 10pcs.
but the filling yields 20pcs. so i just doubled the muffins recipe & got 20pcs.

dates and walnuts snacking cake

which i think is too extreme.. and unsuitable
senang cakap.. bedo'oh!
itu yg sukasuki hati ja nk tukar nama :p

saya buat sebagai bekal makan atas bas nanti
tapi termasin! boleh gitu?
sprinkle garam macam sprinkle dalam kari
udahle guna salted butter.. hasilnya.. hamek kau!




tapi tekstur kek ni sgt lembut dan gebu!

bahan2:
  • 1 1/4cwn tepung
  • 1/2sdk baking powder
  • 1/2sdk baking soda
  • 1/4sdk garam <-- kalau guna salted butter pls omit this
  • 8oz butter, dilembutkan pada suhu bilik
  • 1cwn gula pereang <-- saya kurangkan 1sdb
  • 3biji telur
  • 1/2sdk vanilla
  • 1sdb molasses <-- saya guna black treacle
  • 1sdb madu
  • 1/2cwn walnuts, dicincang
  • 1/2cwn pecan, dicincang <-- saya guna 1cwn walnuts
  • 1cwn kurma, buang biji dan dicincang
tatacara:
  1. panaskan oven 170C dan gris loyang 9x13inci.
  2. sebatikan bahan2 kering: tepung, bp, soda dan garam. keluarkan 1/4cwn dan masukkan kurma kedalamnya.
  3. pukul butter dan gula hingga kembang. masukkan telur sebiji demi sebiji. masukkan vanilla.
  4. masukkan molasses dan madu. pukul hingga sebati.
  5. masukkan tepung, kurma yang bertepung dan walnuts. kaupbalikkan hingga sebati.
  6. tuang kedalam loyang. ratakan dan bakar selama 20-25minit.
  7. tunggu sejuk baru potong.
kata ping: Serve as is or wrap individually with colored cellophane (that's how it's traditionally presented) <-- i presume this tradition is in philippine.. since ping is a pinay ;)

southwest cornbread

i dream of making this cornbread last nite
niat asal nk buat malamnya but am dead tired.. i need my rest.
so, this morning after sending kids off at the door i hit the kitchen
and the rest is history :)

bahan2:
  • 15strips bacon (optional) <-- i skipped it. tak pernah beli pun!
  • 1 1/4cwn all purpose atau bread flour (156g) <-- saya guna half half
  • 1sdk baking powder
  • 1/4cwn gula
  • 1/4sdk garam
  • 3/4cwn cornmeal
  • 2biji telur
  • 1/4cwn minyak sayur
  • 1/2cwn susu 
  • 3sdb maple syrup atau madu <-- saya guna madu
  • 1/2cwn jagung frozen
  • 1cwn grated cheddar cheese
tatacara:
  1. panaskan oven 180C. gris dan tepungkan loyang bulat 9inci atau muffins pan (saya guna loyang muffin & lapik papercup).
  2. ayak tepung bersama baking powder, gula, garam dan cornmeal. ketepikan dulu.
  3. dalam mangkuk besar, pukul bersama telur, minyak, susu dan madu.
  4. masukkan bahan kering kedalam adunan telur dan gaul hingga betul2 sebati.
  5. kaupbalikkan jagung frozen dan cheese (dan bacon yg dah di masak - kalau guna).
  6. tuang adunan kedalam loyang dan hias dengan cheese atau jagung atau roasted bell-peppers.
  7. bakar selama 20-25minit atau sehingga kepereangan di bahagian atas.
tis is my sunshine. hehe..

verdict:
am falling in love with this cornbread!!
its not sweet but not the savory type also..(sebab tak letak bacon) 
sedang-sedang enak rasanya.. me likey! makan 3ketul skali hadap.
next time nk try buat dlm 9inch pan. if only i have skillet yg boleh masuk oven.. cool!
some is sprinkled with mozarella, some with parmesan.. and some with bell peppers.

puding belang yang hilang belang

i made this.. for my mak Smile
cuma sedihnya.. belang tak wujud pun!
hilang ditelan cuaca-panaskah?

Bahan-bahan ( 1 acuan sederhana )
  • 10gm serbuk agar2
  • 200gm gula
  • 2 1/2 cawan air
  • 1 tin susu cair
  • 3 sudu besar butter
  • 3 sudu besar tepung jagung
  • 2 biji telur
  • 1 sudu besar serbuk koko dibancuh dgn sedikit air panas (jun guna coklat emulco)
  • sedikit pewarna kuning
Cara-cara
  1. Masak agar2 dengan air dan gula hingga hancur.
  2. Telur dipukul, masukkan tepung jagung dan susu cair. pukul sebati. tuangkan kedalam agar2 tadi.
  3. Masukkan butter. mendidih, tutup api. bahagi kepada dua.
  4. Satu bghn dicampur pewarna kuning dan satu lagi dicampur koko.
  5. Tuang sesenduk warna kuning, sejukkan sekejap, tuang pula warna coklat dibahagian tengah sedikit..ulang hingga habis.
  6. Sejukkan dan hidangkan.

verdict:
alhamdulillah.. walaupun huduh bangat rupanya tapi mak sangat suka! mak teringat dia pernah buat dulu2.. masa anak2 kecik2.. but that was the 1st and the last time she made it.. sebabnya.. resepi hilang entah kemana! hehe.. takpa.. i'll write down this recipe for you :*

clove-scented chocolate and apricot loaf cake

i plan to bring this loaf cake for my officemates
i made it yesterday (saturday).. and by now dah tinggal separuh!
mula2 rasa mcm tak best pun.. a bit dry and not too chocolatey
tapi bila makan the next day.. it tasted better! in fact, tak cukup sepotong!
mak suruh buat kek ni utk bawak balik kampung nanti..

bahan2:
  • 1cwn apricot kering, dipotong halus
  • 1cwn + 1sdb tepung
  • 1/2cwn serbuk koko
  • 1 1/2sdk baking powder
  • 1/4sdk garam
  • 1/2sdk serbuk cinnamon
  • 1/8sdk serbuk cengkih <-- saya letak 1/4sdk
  • 1/2cwn unsalted butter, dilembutkan suhu bilik
  • 1 1/2cwn gula <-- reduce 2sdb
  • 3biji telur
  • 1sdk vanilla
  • 1/2cwn susu
tatacara:
  1. panaskan oven 160C dan gris & tepungkan loaf pan.
  2. satukan hirisan apricot dgn 1tbs tepung. sebatikan baki tepung (1cwn) bersama bahan2 kering yang lain - serbuk koko, garam, bp, cinnamon dan cengkih. ketepikan dulu.
  3. pukul butter dan gula hingga kembang dan gebu, dalam 3minit. masukkan telur satu demi satu. masukkan vanilla.
  4. masukkan tepung dan susu secara selang seli: tepung - susu - tepung - susu - tepung. akhir sekali, kaupbalikkan apricot kedalam adunan.
  5. tuang adunan kedalam loaf pan dan bakar selama 1jam 10minit. biarkan kek sejuk dalam loyang selama 5minit baru dipotong dan dihidangkan.
  6. kek boleh tahan pada suhu bilik sehingga 3hari.
verdict:
cengkih tu tak rasa langsung walaupun dah letak lebih.. cinnamon pun tak rasa tp rasa mmg rasa lain drpd makan chocolate cake biasa.. but overall.. i cannot stop muncing especially one day after i left at room temperature. makin muncet la weiii!!!!!!!

glazed lemon coconut bread

dulu2 dah pernah buat lemon bread..
1st time buat guna resepi joyofbaking
then try resepi lain yg ada dessicated coconut
i love them both!
the one from joyofbaking is buttery
the other one is lemak2 berkrim berperisa lemon

this time round i tweaked a recipe from simplyrecipes
tapinya pergi masukkan dlm oven then sambung tidur
esok pagi bangun bau satu rumah. waaa.. harumnya!!
tengok2 kek gelap gelemat! huwaaaa.........
fadan muke!
kulit luar keras tapi isi kek ok jek


si legam berkerak masam!

Ingredients

  • 4 ounces (1 stick, 8 Tbsp) butter, softened*
  • 1 cup minus 1 Tbsp granulated sugar <-- i minus 2Tbs
  • 1 Tbsp honey
  • 2 eggs (room temp)
  • 1 Tbsp lemon zest
  • 1/2 cup whole milk <-- i use 1/4C coconut milk + 1/4C lowfat milk
  • 1/2 teaspoon salt
  • 1 1/2 cups flour
  • 1/2 teaspoon ground cardamom <-- i replace with ground cloves
  • 1 teaspoon baking powder
Glaze
  • 1/4 cup lemon juice
  • 1/3 cup sugar <-- i use icing sugar
  • 1 Tbsp honey <-- nil

Method

  1. Preheat oven to 350°F. Butter a 4x8-inch loaf pan.
  2. Beat the butter until fluffy, about 2 minutes. Add the sugar and honey, continue to beat until creamy, a few minutes more. Add eggs, one at a time, beating after each addition to incorporate. On low speed, slowly beat the milk in. Do not worry if the mixture looks a little curdled. Mix in lemon zest.
  3. Sift together the flour, salt, cardamom, baking powder. Add to the wet ingredients, beating until smooth.
  4. Place batter in prepared pan and bake for 1 hour at 350°F.
  5. While the lemon bread is baking, prepare the glaze. Heat the glaze ingredients - lemon juice, sugar, honey - in a small saucepan until the sugar is completely dissolved. <-- i just stir & dissolved icing sugar with lemon juice.
  6. Once you have removed the bread from the oven, poke holes all over the top with a thin skewer (this will help the glaze penetrate). Spoon the glaze over it while the bread is still in the pan and is still hot. Let cool for 10 minutes before removing from pan and slicing to serve.

plum tray bake with cheesecake ripple

i purchased strawberries last week
and i kept it in the freezer
when i want to use it yesterday
the berries are beautiful but soft!
it taste weird too.. :(
how do one keep their strawberries?
or is this fruit is not meant to be frozen??

i was lucky the plums are still available
so, plum traybake it is!
its for today's meeting with the staff ;)

Cream cheese mixture
  • 125gm cream cheese
  • 2 Tbsp sugar
  • 1 tsp vanilla extract
Cake batter
  • 120gm butter
  • 120gm soft brown sugar
  • 2 eggs
  • ½ tsp vanilla extract
  • 140gm all purpose flour
  • 1/ 2 tsp baking powder
  • 200gm raspberries and strawberries <-- 2plums - stoned and roughly chopped


  1. Rinse fruits and set aside to air dry.
  2. Fully line a 8 inch shallow square pan with overlapping baking paper.
  3. Preheat oven to 160(fan)/180C.
  4. Sift flour with baking powder, set aside.
  5. Beat cream cheese, vanilla and sugar until creamy, put into a plastic bag.
  6. Cut the strawberries and tear raspberries into halves.
  7. Cream butter and brown sugar until light and fluffy.
  8. Add in eggs one by one, beating well after each addition. Beat in vanilla extract.
  9. Put in half of sifted flour and beat until combined and beat in the balance of flour.
  10. Put 40% of the batter into the lined pan, spread it around.
  11. Snip a corner (abt 8mm) off the plastic bag with cream cheese in it. Squirt ½ the cream cheese all over the spread out batter.
  12. Arrange half the fruits over the batter. Gently press them in.
  13. Dollop remaining batter over fruits, press and spread the batter over the fruit.
  14. Squirt the balance of cream cheese over cake and arrange the balance of fruits. Gently press the fruits in.
  15. Bake for 35 minutes or until skewer comes out clean.
update:
this is one of my favorite recipe by far!
its full of flavor! one can never get enough with just a square.
i'll make it again. definitely. insyaallah..

    chocolate bread pudding

    i was torn between martha's recipe or this one
    this morning i had no time to think further
    i had  to rush! its over 7am!!!
    so, i chose the easier ones
    well.. thats just me.. always look for easiest way :p

    mmm... am lovin' it! ;)

    • 5 to 6 cups chocolate or white bread, cut in 1-inch cubes <-- 8pcs of gardenia & toast it
    • 1/2 cup semi-sweet chocolate chips 
    • 2 large eggs, lightly beaten
    • 2 cups whole milk <-- 1/2cup heavy cream + 1 1/2cup milk
    • 1/4 cup granulated sugar <-- 2tbs of brown sugar
    • 1/4 teaspoon salt <-- 1tbs of salted butter, melted  
    • 1 teaspoon vanilla extract
    • 2-1/2 tablespoons unsweetened cocoa powder
    • 1 teaspoon cinnamon
    • Optional: whipped cream for garnish <-- neii.. nil.

    1. Preheat 350 degrees F. Place bread in a buttered 9 x 9-inch baking pan. Sprinkle with chocolate chips. Set aside.
    2. Place eggs, milk, sugar, salt, vanilla, cocoa and cinnamon in a medium bowl. Whisk to combine. 
    3. Pour over bread and mix gently. Let sit for 15 minutes.<-- i prefer it to be a bit crunchy.. so it went off into the oven immediately. plus am pressed for time ;)
    4. Bake for 40 minutes until firm but not dry. <-- i bake for 25mins only. just nice for me ;)
    5. Serve warm or at room temperature. Garnish with whipped cream if desired. Yield: 8 servings.

    verdict:
    for someone who like bread pudding.. and chocolate..
    its very satisfying and heavenly!
    but my sweet tooth beckones for more sweetness!!
    mm.. tak boleh layan manis2 sgt since harga gula dah naik :(

    kenny roger's corn muffins

    saya jumpa resepi ni dalam 1001resepi
    dah lama peram sebab tak sempat nk pergi beli jagung frozen
    last weekend cik abe dah tlg belikan.. :)
    pagi ni buat sebagai bekalan anak dara kesekolah..
    tapi anak dara tu tak makan pun!
    seronok nak bagi kawan2 ja..
    sebelum ni dia sibuk nak jual2
    tapi cikgu dah tak bagi jual.. sedih dia..
    takpa.. ummi buatkan dan kakak sedekah aja..
    moga lebih afdhal begitu.. insyaallah..


    lembut tapi crunchy thanks to the cornmeal ;)

    bahan-bahannya:
    • 1/2 cawan butter*
    •  2/3 cawan gula halus*
    • 1/4 cawan honey*
    •  2 biji telur*
    • 1/2 sudu kecil garam*
    • 1 1/2 cawan all purpose flour, ayak
    • 1/2 sudu teh baking powder, ayak
    •  3/4 cawan yellow cornmeal
    • 1/2 cawan susu
    1. pukul bahan diatas bertanda * hingga creamy
    2. kemudian masukkan: all purpose flour & baking powder dan yellow cornmeal (gaul rata)
    3. masukkan berselang seli dengan 1/2 cawan susu....gaul sebati.
    4. akhir sekali masukkan 3/4 cawan frozen corn...
    5. gaul rata dan sudukan kedalam muffin cups dan bakar pada suhu 180C selama 25 ke 30 minit atau hingga keperangan...hidang panas...hmmm...sedappp...
    nota: 
    saya bakar 25minit ja. tak cukup perang tp mmg dah cukup masak. 
    sgt kalut pagi tadi!!! keluar oven terus masuk tupperware.

    crustless pizza

    i 1st seen this crustless pizza in ovenhaven
    i never searched further.. just copy out the recipe.. waiting for the time to execute
    and the right time came today.. while waiting for dear hubster to come back from work (aiya..sunday pun kerja!)
    perut sudah lapar berkeriok2.. macam2 lagu dah dia nyanyi.. tp malasnya nak masak :(
    so, dalam kemalasan, i went down to prepare this crustless pizza
    while in the process making it, my dearie came back and yelled.. jom! jom!
    haiyah! soheh burnt pizza tu nanti!
    and boy oh boy.. i was so right! haha..

    anyway, lepas taruk topping bagai.. the hideous burnt is covered
    except for the sides.. which turn out very crusty! sedap! i like!
    plan nak buat lunch.. it turn out to be for tea instead ;)
    but i think u can have it anytime of the day!
    breakfast, brunch, tea, supper..  it is so simple yet so very versatile!


    i vividly remembered it was nigella's recipe..
    when i search today.. yup! found it here
    seksa sungguh macik tuh! :p

    • 1 egg
    • 100g plain flour <-- 2/3Cup
    • a pinch of salt
    • 250ml milk <-- 1Cup
    • butter, for greasing
    • 100g grated Cheddar cheese <-- 1Cup
    • toppings of your choice (eg. pepperoni slices, cherry tomatoes) <-- only have sausages :/
    1. Preheat oven to 200C.
    2. Whisk the egg, flour, salt and milk to make a smooth batter. Stir in half of the grated cheese.
    3. Grease an 8-inch round baking pan/pie dish, and pour the batter into the dish.
    4. Bake for 30mins, then remove the pan from the oven. Add your toppings, and sprinkle with the remaining cheese.
    5. Return to the oven, and bake for another 2-3mins, until the cheese has melted.



    notes:
    i added mozarella cheese and a few spoondrops of pizza sauce.

    my chubby boy really loves it! he had half the pizza all for himself for dinner. ummi dah masak lauk pauk bagai dia tak layan pun!

    swedish visiting cake

    i baked a chocolate malted cake and it was a near disaster
    the cake taste is too cocoa-ey --- but still edible though..
    i baked a whole orange cake and it was a total disaster!!
    empulurnya tak dibuang.. rasa pahit sampai tak boleh nak telan!
    sungguh sadis lagi menyedihkan..
    off to the tong sampah.. :'(

    this swedish visiting cake i know it won't dissappoint me
    since the recipe is from dorie greenspan ;)
    and baking this cake is simply blissful!
    i love the smell of sugar & lemon zest rubbed together.. very aromatic!
    i love how a simple & easy cake can turn out very satisfying..
    alhamdulillah.. am filled with happiness :)
    hope the meeting members love it!

    • 1 cup sugar, plus extra for sprinkling <-- i use 3/4cup only
    • Grated zest of 1 lemon
    • 2 large eggs
    • 1/4 teaspoon salt
    • 1 teaspoon pure vanilla extract
    • 1/2 teaspoon pure almond extract <-- i reduce to 1/8tsp
    • 1 cup all-purpose flour
    • 1 stick (8 tablespoons) unsalted butter, melted and cooled
    • About 1/4 cup sliced almonds (blanched or not)

    i 'grilled' it another 5mins to get a a crunchier crust. gelap la pulok!

    1. Center a rack in the oven and preheat the oven to 350 degrees F. Butter a seasoned 9-inch cast-iron skillet or other heavy ovenproof skillet, a 9-inch cake pan or even a pie pan.
    2. Pour the sugar into a medium bowl. Add the zest and blend the zest and sugar together with your fingertips until the sugar is moist and aromatic. Whisk in the eggs one at a time until well blended. Whisk in the salt and the extracts. Switch to a rubber spatula and stir in the flour. Finally, fold in the melted butter.
    3. Scrape the batter into the pan and smooth the top with a rubber spatula. Scatter the sliced almonds over the top and sprinkle with a little sugar. If you're using a cake or pie pan, place the pan on a baking sheet.
    4. Bake the cake for 25 to 30 minutes, or until it is golden and a little crisp on the outside; the inside will remain moist. Remove the pan from the oven and let the cake cool for 5 minutes, then run a thin knife around the sides and bottom of the cake to loosen it. You can serve the cake warm or cooled, directly from the skillet or turned out onto a serving plate.

    basic sweet bun dough

    setelah lama memeram semangat meroti..
    dapat juga dimaterialisasikan pada ahad yg lalu..
    pagi2 sebelum ke kelas dah siap roti & kek koko-milo
    petangnya.. ditapau makan dlm kereta..
    tapi budak2 tu tetap nak makan roti gardenia sapu kaya. sedey ummi tau!

    resepi cedok dari blog zarin. mohon c&p kat sini yek zarin. tqvm! :)
    inspirasi asal dari kakshidah of dairimama ;)



    basic sweet bun dough:
    • 200g bread flour 
    • 100g plain flour 
    • 6g instant yeast 
    • 55g sugar 
    • 140g milk 
    • 1 egg 
    • 1/2tsp salt 
    • 45g butter 
    • 100g raisins } soak for 5mins 
    • 1tsp water } then squeeze out liquid  (i didn’t add the raisins)
    Steps: 

    1. Combine all ingredients in a mixer, except butter and rasins. 
    2. Beat at medium speed until it form a dough and add in the butter. 
    3. Continue to beat until it form a smooth and elastic dough. 
    4. Cover the dough and let it prove for 45-60mins. 
    5. Flatten the dough on a lightly floured surface and knead in the raisins. 
    6. Divide dough into about 55g each portion and rest for another 10mins. 
    7. Shape into round ball and arrange it on a greased tray. 
    8. Cover and leave to prove for 45mins until it doubled in size. 
    9. Preheat oven to 190C. 
    10. Brush surface with milk and bake in a preheated oven for 10mins until buns is brown. 
    11. Remove buns from tin, brush surface with butter and cool on a wire rack.
