carrot pineapple cake haluss

since i decided to reduce the baking frequency..
segalanya jadi huru-hara.. segalanya serba tak menjadi..
buat kek yang simple pun rasa x best!
buat muffins pun tak cukup masak!
malam ni buat carrot cake lupa letak walnuts!
haisshhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhh......

anyway, back to the cake..
boleh agak tak kenapa ada perkataan haluss tu?


hehe.. it means botak lorrr :p
teringat kat anak sedara nun jauh di perlis..
kalau tengok orang botak je sure dia buat aksi halusss... :))
wan adam rayyan.. bilakah kita bisa ketemu lagi??? ammati rindu kamu!



kek ni di'botak'kan atas permintaan teman sepejabat..
katanya the lecturers tak suka frosted cake
(depa tak suka makan kek yang manis2 la tu...)
so, haluss it is ;)

bahan2:
  • 2cwn carrot, disagat
  • 1tin nenas, ditapis dan dipotong kecil
  • 2cwn tepung
  • 2sdk baking soda
  • 1sdk baking powder
  • 2sdk serbuk cinnamon
  • 1sdk garam
  • 1 3/4cwn gula <-- saya letak 1cwn gula perang + 1/2cwn molasses
  • 1cwn minyak
  • 3biji telur, dipukul sedikit
  • 1sdk vanilla
  • 1cwn kelapa parut <-- dessicated coconuts
  • 1cwn walnuts, dipotong kecil <-- cek lupa la!! :(
tatacara:
  1. sagat carrot dan potong kecil nenas.
  2. panaskan oven 175C dan gris loyang 9x13 atau 2loyang 8inci bulat atau 1 loyang 9inci (kalau guna 1 loyang 9inci kena tambah masa pembakaran ~ dalam 1jam ++)
  3. gaulkan bahan2 kering dalam mangkuk besar: tepung, soda, baking powder, cinnamon, garam dan gula. buatkan macam telaga/ lubang ditengah2 adunan.
  4. tuang adunan basah: minyak, telur dan vanilla. gaul sebati.
  5. masukkan carrot, nenas, kelapa kering dan walnuts. gaul sebati.
  6. tuang kedalam loyang dan bakar 45-50minit.
nota:
sebab ketara sangat kebotakkannya.. saya tabur gula aising atas kek..
tapi bila sampai masa nak hidang/ jamu..
abih semua aising bak salju itu tak kelihatan..
maka, kembali botaklah ia.. halussss... :p



verdict:
alhamdulillah.. this simple & easy cake is pleasing to everyone :)
its moist awrite! but lacks crunchiness sebab lupa itu walnuts! {sigh}

spiced roasted cauliflower and potatoes

semalam dear hubby beli ikan bakar minang for dinner
dia nak try test this one new minang resto in uptown
taktahulah apa namanya..
(but the kids kata ikan bakar tu tak sedap!
it end-up in this morning punya nasik goreng :p)
so, i just cooked kangkung goreng belacan & ikan goreng
(kids prefer ikan to meat)

and for myself..
i made this roasted cauliflower & potato
i halved the recipe since nak makan sorang2..
below is the original recipe c&p from the original blog

Ingredients

  • 6 Medium Sized Yellow Wax Potatoes
  • 1 Medium Sized Cauliflower (about 450 - 500 g)
Marinate

  • 2 Tbsp Curry Powder
  • 1 tsp Garam Masala
  • 2 tsp Paprika or Cayenne Pepper
  • 2 tsp Garlic Paste
  • 1 Tbsp Ginger Paste
  • 1 tsp Sea Salt
  • ¼ Big Lime, juiced
  • 3 to 4 Tbsp Canola Oil
  • 2 Sprigs Fresh Curry Leaves (optional)
Method:
  1. Boil the potatoes and allow them to cool completely. Peel the potatoes and cut them into ¾ inch (2 cm) dice.
  2. Break up the cauliflower into chunky florets, about 1-½ inches (4 cm). Blanch the cauliflower for about 15 seconds, drain into a bowl of ice water for 10 minutes. Drain well and pat dry with paper towel.
  3. Combine all the marinate ingredients and mix well. Rub the cauliflower and potatoes with the marinate mixture.
  4. Preheat the oven to 425˚F/220˚C.
  5. Place the vegetables on a large baking tray in a single layer. Bake the vegetables for about 10 minutes.
  6. Heat the broiler. Place the vegetables under the broiler, about 6 minutes on each side. Serve the vegetables warm with some steamed rice.
verdict:
even though this simple dish is delish..
the non-mamak in me prefer the non-spicy ones..
the much more simpler version - roast with olive oil, garlic, salt & pepper ;)

healthy apple oatmeal muffins

walaupun dah kata taknak membakar..
i still need to take breakfast
healthy muffins is a good option ;)
demi menghilangkan gian nak membakar :p

bahan2:
  • 2cwn apple, buang kulit dan sagat <-- lebih kurang 3-4biji
  • 1 1/2cwn tepung <-- lagi healthy kalau substitute separuh tepung dengan wholemeal flour
  • 1cwn quick cooking oat <-- quaker oat plastik merah
  • 2/3cwn gula perang <-- saya letak 1/2cwn saja
  • 1 1/2sdk baking powder
  • 1/2sdk baking soda
  • 1/2sdk serbuk cinnamon <-- saya letak 1sdk
  • 1/4cwn fat-free milk <-- saya guna susu low-fat
  • 2tbs minyak jagung
  • 1sdk vanilla
  • 1/2cwn plain fat-free yogurt <-- guna 1cwn low fat yogurt
  • 1/2cwn fat-free sour cream <-- tak letak
  • 2biji telur putih <-- saya guna sebiji telur kecil
tatacara:
  1. panaskan oven 200C dan sediakan muffin cup.
  2. sebatikan bahan2 kering dalam mangkuk besar: tepung, oat, gula, bp, bs dan serbuk cinnamon.
  3. gaul bahan2 basah dalam mangkuk berasingan: susu, minyak, vanilla, telur dan yogurt.
  4. kaupbalikkan bahan basah kedalam mangkuk bahan kering.
  5. masukkan apple yang dah disagat (tapis lebihan air) dan kaupbalik hingga adunan sebati.
  6. masukkan kedalam muffin cup. 
  7. sediakan streusel topping. tabur atas adunan muffins dan bakar 20-25minit.


sterusel topping:
  • 45g butter sejuk, dipotong kecil
  • 1/2cwn tepung
  • 1/4cwn gula perang
  • chopped nuts (optional)
  1. gaul sebati gula dan tepung (dan kacang; kalau ada).
  2. ramas butter sejuk kedalam adunan hingga terbentuk seperti breadcrumbs.
nota:
saya buat dalam muffins case yg besar gedabak.. 
20min tak cukup! kena tambah jadik 30min rasanya..
dapat dalam 8bijik je..
kalau muffin cup yg stended tu.. insyaallah bleh dpt 14 bijik.

verdict:
saya makan seketul je.. memang kenyang!
tapi sedihla.. sebab tak masak betul..
silap sendiri.. tak cucuk lidi sblm tapau ke opis
rasa mcm nak beli oven letak kat opis je!
kalau ada yg underbake.. boleh continue bakar
takpun.. siapkan batter kat rumah.. bakar kat office..
nak buat quiche pun boleh..
walla.. takyah susah2 ke cafe, brunch is ready!
haish.. berangan tak sudah!
kena halau keluar opis baru tau :p

french yogurt cake with orange syrup

ASSALAMUALAIKUM 2011!
alhamdulillah.. segala puji bagi ALLAH...
masih dapat menghirup udara segar di tahun baru..
bila sebut tahun baru.. orang akan relate dengan azam.. resolution..
satu azam yang tak pernah saya terlintas sebelum ni:
turunkan berat badan! (specifically, reduce diameter pinggang)
sebab saya seorang yg kurus! under-weight to be precise.
nak derma darah pun tak layak!
tapi sejak dok membakar.. dah menggebu..
sampai ketat semua kain & jeans..
and yes! dah terlebih layak derma darah :p

kata cik abe..
tak payah dahla buat kek..
dah kurang berat.. dah muat kain2.. baru buat balik..
ok dear. i follow you. taknak jadik isteri durhaka :-s
but i will still bake for department meetings
so, twice a month only lorr..
and maybe for special occasion? ;)

last weekend we went back to penang
i brought lumberjack cake & french yogurt cake

sebelum ni dah pernah buat french yogurt cake
tapi bila jumpa resepi dorie greenspan..
tergoda nak cuba!
even though not much diffferent from the previous recipe..
the addition of almond meal make it taste a bit crunchy
tambah pulak saya add-on poppy seed..
lagi lah terasa krup-krup bila makan

bahan2: 
  • 1cwn tepung
  • 1/2cwn grounds almond 
  • 2sdk baking powder
  • secubit garam
  • 1cwn gula <-- saya letak 3/4cwn
  • parutan kulit lemon <-- saya parut kulit oren
  • 1/2cwn yogurt 
  • 3biji telur
  • 1/4sdk esen vanilla <-- saya letak 1/2sdk
  • 1/2cwn minyak jagung
  • 2sdk poppy seed <-- optional. saya tambah sendiri ;)
tatacara:
  1. panaskan oven 180C dan gris loyang (boleh guna loaf pan 8x4 atau loyang bulat 8inci. saya guna bundt pan).
  2. masukkan bahan2 kering kedalam mangkuk sedang - tepung, ground almond, baking powder dan garam. gaul sebati. ketepikan dulu.
  3. ramas parutan kulit lemon kedalam gula dengan hujung jari. masukkan yogurt, telur dan esen vanilla dan pukul hingga sebati.
  4. masukkan bahan2 kering dan gaul sebati.
  5. kaupbalikkan minyak kedalam adunan hingga betul2 sebati.
  6. tuang kedalam loyang. bakar selama 50-55minit. 
orange syrup:
  • 150ml orange juice (perahan oren + air/ orange juice)
  • 3tbs gula 
  • 1/4sdk cinnamon
  • 1/4sdk nutmeg
  1. masak 100ml jus bersama-sama gula hingga sebati.
  2. masukkan cinnamon & nutmeg.
  3. tambah baki, 50ml jus dan masak dengan api kecil hingga pekat.
  4. tuang keatas kek setelah kek masak.



verdict:
original recipe calls for a marmalade.. tuang keatas kek.
the orange syrup replacement is a great option ;)
since the cake itself is not sweet at all!
geng penang sapu licin the syrup :p

sultana oat squares

the munching stock in office dah pupus
since i had gain weight considerably over 3months..
no more brownies and high calories munchies
(iyolah tu!)

so, welcome healthy baking! ;)

am not sure whether this recipe can be considered as healthy or not
(the amount of butter is quite huge! if only i have applesauce..)
but when the word OAT is in the recipe
that is so very healthy already. at least for me :)

For the Crumble:
  • 5 1/4 ounces rolled oats (1 1/2 cups)
  • 7 1/2 ounces soft light brown sugar (1 cup, packed))
  • 6 1/2 ounces of plain flour (1 1/2 cups)
  • 1 tsp bicarbonate of soda
  • 1/4 tsp salt
  • 6 ounces butter, melted (3/4 cup)
Filling:
  • 3 3/4 ounces soft light brown sugar (1/2 cup packed)
  • 2 TBS cornflour (cornstarch)
  • 6 fluid ounces water (3/4 cup)
  • 6 ounces sultana raisins (1 cup)
  • the juice and finely grated zest of one unwaxed lemon
  1. Preheat the oven to 180C. Lightly butter an 8 inch square baking pan. Line with baking parchment, leaving an overhang to help lift the baked squares out.
  2. Place all the ingredients for the filling in a saucepan, with the exception of the lemon and lemon zest. Cook and stir until the mixture boils and thickens. Remove from the heat and stir in the lemon zest and juice. Set aside.
  3. Whisk the oats, brown sugar, flour, soda and salt together in a bowl. Pour the melted butter over top and mix well together until nice and crumbly. 
  4. Press half of the crumbs into the prepared pan. Spoon the sultana filling evenly over top. Sprinkle the remainder of the crumbs over top and press down lightly.
  5. Bake for 35 - 40 minutes until golden brown and firm to the touch. Allow to cool completely before cutting into squares to serve. (i put in fridge then only i cut to pcs..)

verdict:
i enjoy munching this scummy healthy bar :)

puding laici oren

lupa pulak nak post puding ni..
walaupun simple tapi..
mak sangat suka!!

puding laici-oren in pink ;)

bahan2:
  • 25gm agar2 strips <-- saya guna agar2 serbuk
  • 1 tin laici - blend together with juice laici
  • 1.5 litre air
  • 1/2 cup gula
  • 1 tin susu cair <-- saya guna separuh tin
  • 4 tbs sunquick orange <-- saya guna 3biji oren kecik2 (takdak stok sunquik)
tatacara:
  1. Didihkan air, add agar2 strips.
  2. Bila agar2 dah hancur, tapis air kemudian, masukkan semula ke dalam periuk.
  3. Masukkan gula, kacau sehingga gula larut. (sebab guna agar2 serbuk, saya masak semua sekali hingga mendidih: agar2, air dan gula)
  4. Masukkan laici yang telah di blend halus (saya blend oren kecik2 sekali dengan laici)
  5. Bila campuran agar2 dah mendidih, masukkan susu cair dan sunquick oren (tak letak). Tutup api, masukkan dalam acuan.

cake truffles a.k.a cake balls

this cake truffles has been calling me
since i managed to crushed 7 out of 10
chocolate gingerbread cake
which is baked in mini bundt silicon pan
(i keep tight - in fridge & its still edible after a week)



how do i make my cake truffles?
its pretty simple..

all you need is..
cake - any cakes - homemade or store bought - the choice is in your hand :)
frosting - any kind of frosting - cream cheese? choc? heavy cream?
chocolate topping & its condiment - choc rice, choc colors, nuts, etc.

sebelum mekap
tatacara:
  1. hancurkan kek guna garfu atau masukkan kedalam food processor (saya guna garfu je..)
  2. masukkan frosting (saya guna heavy cream) kedalam kek yang dah hancur. gaul sebati. jumlah frosting agak2 cukup bagi kek boleh dikepal.
  3. kepalkan kek atau senduk dengan ice-cream scoop (saya guna sudu bulat saiz 1tsp) dan bulatkan kek yang dah dikepal tadi. letak atas dulang yang berlapikkan kertas tekap atau baking sheet ~ dah jadi cake ball ;)
  4. masukkan dalam peti sejuk sekurang-kurangnya 1jam.
  5. cairkan chocolate dengan cara double boil dan keluarkan sebahagian cake ball tadi.
  6. celupkan kek kedalam coklat dan tabur condiments masa coklat masih basah. buat hingga selesai.
  7. sejukkan cake ball dalam peti ais sebelum dihidangkan.

sesudah mekap

nota:
saya buat kecik2 ~ 1tsp sudu bulat - dapat 28biji dan guna 100g coklat masakan utk topping.
kek & frosting tak boleh nak agak.. silap tak timbang dulu :(
susah nak hilang tabiat buat kerja campak2 nih {sigh}
