blondies



blondies ni adik beradik brownies
cuma satu cerah, satu lagi gelap
tapi brownies lebih popular

dari sinilah pertama kali saya jumpa resepi blondies
mengikut logik akal.. sepatutnya rasa lebih kurang sama
sebab beza hanya pada kehadiran coklat/ serbuk koko
tapi brownies sendiri ada banyak versi
ada yang rasanya lebih berat kearah kek
ada yang rasanya lebih ooey-gooey-chewy (liat tapi sedap?)
blondies yang saya buat ni adik beradik versi yang kedua

peralatan: tin 4segisama 8x8 atau 4segitepat 9x13 (gandakan resepi dibawah), 2 mangkuk besar, sudu kayu, pemukul telur (whisker)
tahap: senang

bahan2:
  • 1cwn tepung
  • 1sdk baking powder
  • 1/4sdk garam <-- dlm 2cubit
  • 1/2cwn butter (115g)
  • 1cwn gula perang
  • 1biji telur
  • 1sdk esen vanilla
  • 3/4cwn walnut <-- dihancurkan
  • 1/2cwn white chocolate chip (optional)
tatacara:
  1. panaskan oven ke 175C. lapikkan bekas pembakar dengan aluminium foil (saya cuma sapu butter & tabur tepung sahaja)
  2. gaulkan tepung, baking powder dan garam dalam mangkuk kecil
  3. cairkan butter (saya guna microwave ~ 40s) dan masukkan gula. kacau hingga gula larut.
  4. tambah telur dan esen vanilla. kacau hingga sebati. (masa ni guna whisker)
  5. masukkan tepung tadi dan kacau dengan sudu kayu hingga sebati.
  6. masukkan walnut hancur & chocolate chip. kacau sekata.
  7. tuang kedalam bekas pembakar & bakar 25-30min.
saya telah mengganda-duakan resepi tersebut dan menambah masa membakar ke 35min. hasilnya agak kering. mungkin terlebih bakar? tapi rasanya.. boleh tahan. cuma saya lebih suka brownies sbb saya suka coklat! :p

apple clafoutis



1st time i came across clafoutis.. is in this book
i tried to search further & found in joyofbaking.com

clafoutis is a french pudding
originally, cherry is used but am using apple only
the only cheap imported fruits :p
might try to use canned peach later on..

equipment: blender & muffin pan (other baking pan can also be used)
level: super easy
time: 15mins prep, 25mins baking

materials:
  • 1cup milk
  • 1cup flour
  • 2eggs
  • 2tbs sugar <-- i use brown sugar
  • 1/2tsp vanilla
  • pinch of salt
  • 2 apples --> thinly sliced
method:
  1. preheat oven to 200C & grease baking dish with butter
  2. dump all materials except apples in blender & blend until smooth
  3. prepare apples and layer the apple slices in muffin tin
  4. pour the batter into the tin (apples will float)
  5. bake 25mins or until brown
  6. dust with icing sugar
serve warm with ice-cream or whipping cream..
i drizzled some with pancake syrup..

verdict:
nyumm2..
great for tea!

cake pan


i am longing for this bavaria bundt pan
drrrroooooooooooollllllliiiiiiiiiiinnnnnnnnnnnn.......

after moons of baking
it comes to my realization..
the most widely used
cake pan size is
8inch or 21cm
be it square or round shape

square is used for baking bars and brownies
round is used for making cakes (esp layer cakes)

but for cheesecake
most recipe normally calls for

now. what shall i do with my 10inch square pan?
hahaha.. why-lah i bought 10inch in the first place?
ada sedikit kebebalan disitu :p

hah.. its good to be able to laugh at yourself!

i pestered my husband to buy eggs..
just because i was itching to make

i read from the above link (aggieb.com)
that you have to leave it for 50mins in the oven
i left for more than 5hours!!
(it was way past 11pm.. my sleeping time..)
hence the shrinky-ness..
and another reason found from here
the oven door.. it is shut. close. tight.
i didnt hear my cake screaming for help!
my cake is suffocating..
pity you dear..

i am still wondering..
the reason for my cake's invisible layer
you cannot see the layer
but you can taste it!
the upper part is soft, light & sweet
the lower part is heavy & cheesy!
is it because i took so much time to prepare the waterbath?
yep. the cake is already in the oven..
and i use my 2C measuring cup + 2big mugs
and i made 3 trips!
haha..
orang budus yg rajin :p

i will definitely try it again..
with these few notes in mind:
  1. oh! oh! i found another mistake! i did feel something is not right when i double-boiled everything: milk, cream cheese, butter & egg yolks! hah! the egg yolks were almost cooked! kuikuikui.. oh! maybe that is the reason for the invisible layer??
  2. preheat the oven earlier.. i preheated only 5mins before the cake goes in.
  3. leave the oven door ajar after it is baked/ brown atop ~ abt 30mis is enough i suppose? our current room temperature is so very high and the cake wont get its shock of lifetime :p
  4. remove the cake from the pan once it is outta oven (after 30mins of relax)
  5. hmm.. what else? owh! i will prepare my hot water in bigger volume so that i'll be done with 1 trip only :D
  6. mental note: need to buy grease paper & aluminum foil. meanwhile.. i might use normal cake pan. i can get rid of the foil. grease the pan with butter & dust with flour.. sep duit!
verdict:
if i sliced off the lower part..
it will taste just like store-bought!
hehe.. hantam sajala labuuuuuu.....

chocolate oil cake


i ran out of eggs
but i gotta bake a cake
i dunno why
i just have to
then only i can sleep peacefully..

i searched for eggless recipe
and settled for this chocolate oil cake
i made half of the recipe
and use 8inch baking pan
and lessen the baking time to 25mins

its so very fast & easy!
the big girl helped to read the ingredients
the boys helped to stir & whisk
within less than 20mins..
the cake is already in the oven

verdict:
the cake is moist & chocolate-y
big girl loves it & so does mommy

minced chicken marsala turnovers




i borrowed a recipe book from the library
my eyes just cant keep off the cheese&herb turnovers

but i made my own version..
for the filling



pastry:
  • 200gm flour
  • 1/2tsp salt
  • 150g cold butter
  • 6tbs cold water or more
  1. mix flour & salt
  2. rub butter into flour until it became breadcrumbs-like (i use 2 forks)
  3. add cold water to bind the dough
  4. shape the dough into round and wrap in plastic
  5. chill in fridge for at least 30mins.
  6. after its chilled, roll on floured surface to 1cm thick and cut to round shape <-- i use 2inch and got 16pcs
  7. put the filling in the center and snap it close (how shall i say this??)
  8. use fork to hasten the closure (this sounds weird also!)
  9. bake in preheated oven (you can start to heat once you begin to take it out from fridge) 220C for 30mins.
  10. glaze with egg wash for beautiful & crunchier effect

filling:

  • 1pc potato - boil (add salt) till softened & dice small
  • 1cup minced chicken
  • 1 onion - diced
  • 2tbs olive oil
  • 1 stalk of celery - dice small
  • salt & pepper to taste
  • 1tbs marsala powder
  • 2tbs water
  1. fry diced onion with olive oil till fragrant. add marsala powder
  2. throw in minced chicken, celery and water
  3. let it cook
  4. add diced potato. cook till the water is almost dry.
verdict:
my turnovers are over-baked!
since i made a small size, i reduce the time to 20mins..
after 20mins, it still not brown-ish in color
i turn the knob to add 5 more mins
and it stays unmoved for more than 15mins!

black forest cake

i just gotta write it down..
the reason.. why my goal is not achieved
goal: to learn how to frost a cake from nusra

nusra is engaged
and she stays far away from her fiancee
hence, when they have the chance to meet
i can only dream of my goal

and here is the result of my artistic hand

my mother in law calls it..

i have no interest to use sponge cake
sponge cake is too err..
normal?
familiar?
boring?
yes! too boring for me (eksen betui!)

recipe from allrecipes.com sounds interesting!
i just love buttermilk's magic!

frosting: 1cup of heavy cream --> whip till soft peak formed
filling: 1can of sweet cherry in dark syrup --> heat with 2tbs of corn flour to thicken the syrup

verdict:
dont judge the book by its cover!
apart from the runny & disastrous frosting..
its marvelous!!
