cake truffles a.k.a cake balls

this cake truffles has been calling me
since i managed to crushed 7 out of 10
chocolate gingerbread cake
which is baked in mini bundt silicon pan
(i keep tight - in fridge & its still edible after a week)



how do i make my cake truffles?
its pretty simple..

all you need is..
cake - any cakes - homemade or store bought - the choice is in your hand :)
frosting - any kind of frosting - cream cheese? choc? heavy cream?
chocolate topping & its condiment - choc rice, choc colors, nuts, etc.

sebelum mekap
tatacara:
  1. hancurkan kek guna garfu atau masukkan kedalam food processor (saya guna garfu je..)
  2. masukkan frosting (saya guna heavy cream) kedalam kek yang dah hancur. gaul sebati. jumlah frosting agak2 cukup bagi kek boleh dikepal.
  3. kepalkan kek atau senduk dengan ice-cream scoop (saya guna sudu bulat saiz 1tsp) dan bulatkan kek yang dah dikepal tadi. letak atas dulang yang berlapikkan kertas tekap atau baking sheet ~ dah jadi cake ball ;)
  4. masukkan dalam peti sejuk sekurang-kurangnya 1jam.
  5. cairkan chocolate dengan cara double boil dan keluarkan sebahagian cake ball tadi.
  6. celupkan kek kedalam coklat dan tabur condiments masa coklat masih basah. buat hingga selesai.
  7. sejukkan cake ball dalam peti ais sebelum dihidangkan.

sesudah mekap

nota:
saya buat kecik2 ~ 1tsp sudu bulat - dapat 28biji dan guna 100g coklat masakan utk topping.
kek & frosting tak boleh nak agak.. silap tak timbang dulu :(
susah nak hilang tabiat buat kerja campak2 nih {sigh}

mandarin orange trifle

jumpa baki adunan creamcheese dalam peti ais..
(entah zaman bila punya.. mujur masih elok!)
jumpa kek (madeleine) yang belum habis dalam peti ais..
(madeleine harus dimakan terus.. bila simpan tak best!)
jumpa satu tin mandarin orange dalam kabinet
(rasanya beli awal tahun utk buat tart)

the layers: kek-kastad-oren-creamcheese
tabur kaler2 tu konon nampak lawa..
lapisan bawah:
kek (madeleine) atau apa2 jenis kek
  • kek dipotong sukahati dan dibasahkan dengan air dari mandarin orange dalam tin.

lapisan tengah:
kuah kastad
  • 4tbs tepung kastad
  • 1/2cwn air panas
  • 1cwn susu
  • 3sdb gula
  1. campurkan kastad dgn air panas dan kacau sebati. ketepikan dulu.
  2. masak susu dengan gula hingga agak didih.
  3. masukkan kastad kedalam susu dan kacau hingga likat dengan api kecil.
  4. tuang adunan kastad keatas lapisan kek dan sejukkan dalam peti ais sekejap.


lapisan atas:
mandarin orange
  • tapis keluar air dalam tin (air digunakan untuk basahkan kek tadi) 
  • susun sukahati atas kastad yang dah sejuk sikit (kalau kastad masih cair, oren akan tenggelam)

lapisan paling atas:
cream cheese
  • 250g cream cheese
  • 1cwn gula aising
  • 1/2cwn heavy cream <-- optional, saya tak letak tapi lagi sedap kalau letak
  1. pukul cream cheese dengan gula hingga lembut dan sebati.
  2. masukkan heavy cream dan pukul sebati.
  3. tuang ke atas lapisan buah oren.

optional 1: lapisan cream cheese boleh ganti dengan whipping cream atau heavy cream yang dipukul bersama gula hingga kembang.

optional2: kalau guna peach dalam tin ganti oren lagi sedap!!

optional3: tabur chocolate rice atau kekacang hancur atau bijik kecik kaler2 atas lapisan cream cheese.


verdict:
rasa masam2 buah oren memang sesuai jadi pencuci mulut lepas makan kari mamak :p

mango cheesecake trifle

amacam bunyi tajuk?

ada gegarkah?
:p


hari jumaat malam yang lalu..
saya buat japanese soft cotton cheesecake

semasa proses mengasingkan telur..
saya dah rasa macam jiwa kacau..
sebab ada seto-ek (sikit sgt) telur kuning
tercampur dalam adunan telur putih..


nak ganti lain.. telur dah habis!!
tiada pilihan.. saya terpaksa teruskan jua..
hasilnya.. putih telur tu pukul sejam pun tak kembang2!!
letih menunggu.. saya teruskan juga..
maka hasilnya.. kek bantat!
nangissssss!!!!!!!!





ciskek pendek, padat dan tak gebu! huhuhu..

namun, saya tidak kuciwa..
puas saya fikir..
cara2 utk upcycle kek bantat itu!
idea datang bila belek resepi trifle dlm joyofbaking


maka hasilnya..

layer bawah sekali: ciskek bantat yg dihiris nipis2
layer tengah: buah mempelam yang didadu kecil (ada jugak yg sy letak jem stoberi)
layer atas: whipping cream (akibat kesuntukan masa.. sy guna ready made whipping cream)




yg ini.. layer tengah adalah jem stoberi kurang manis
kena pulak dgn jus oren.. memang masam melompat!!!
tapi sebab ada whipping cream yg creamy..
kembali nyaman bila memakannya..
:p





nota:
slps susun ciskek tu curahkan sesudu jus oren utk membasahkan kek dan sebagai menambah perisa

bread pudding



i used to make it differently
with custard sauce

but the recipe from joyofbaking is really beckoning

materials:
(i made half of the recipe below)
  • 10cups of cubed breads <-- i use french loaf that was sitting idle for 2weeks!
  • 4 eggs
  • 1cup sugar
  • 1.5 tsp vanilla
  • 1/2tsp ground cinnamon
  • 4tbs butter melted and cooled
  • 4cups full cream milk
method:
  1. preheat oven to 150Celcius. grease baking dish with butter
  2. beat sugar and eggs till creamy & falls like ribbon-like texture when the batter is raised
  3. beat in vanilla & ground cinnamon
  4. pour butter and milk (butter & milk must be in same temperature)
  5. pour the cubed bread into baking dish
  6. pour the batter over the bread
  7. bake for 1hour with water bath method
  8. enjoy it with vanilla ice-cream

verdict:
creamy. dreamy. yummy!
will do again with some mod:
less sugar
add chocolate chip
add raisins

muffin-failure-trifle

i failed..
i failed again..
and again.


yes.
THREE times!


the easiest thing to make
the easiest recipe to bake


1. chocolate muffin
2. banana choc chip muffin
3. kiwi yogurt muffin

all of you guys turn out hard. and crusty.

i know. blame the temperature setting.

but three times??


now please pity me.
pity me please..
please........


no.
i didn't throw them away
even tho they wont crumble when they hit the wall

i love leftovers
i love to upcycle leftovers

yes.
they are categorized as leftovers
since nobody want to eat them
since nobody can eat them

i upcycled them into a dessert:


can you see the cut-out of the muffins down there?


ingredients:
  • failed & hard-to-break muffins
  • 4tbs custard powder
  • 1/2cup warm water
  • 4tbs sugar (the sweetness is up to your tastebud)
  • 1cup fresh milk
  • 1/2cup chocolate kisses

method:

  1. heat milk and sugar in saucepan
  2. dissolve custard in 1/2cup water
  3. once the milk come to boil, pour custard into the milk mixture
  4. add in chocolate kisses
  5. stir to boil again
  6. if you like thicker consistency, add more custard powder
  7. pour the mixture into layers of hard-knock muffins
  8. cool it off in fridge
  9. pour whipping cream before you dig into them

verdict:

tasty!
delisioso!
i will purposely make a failed muffin again
so that i can make more muffin-failure-trifle
