lapis marie cheese

buat ni utk bawak ke rumah mak nanti
tapi 1/4dah makan sendiri.. buruk siku sungguh!

sumber: kakyani the kitchenguardian
bahan2:
  • 1 peket biskut marie
  • 1 peket biskut marie coklat
  • 300ml whipping cream
  • 250g cream cheese
  • 250ml susu pekat
  • shredded cheddar cheese
tatacara:
  1. sediakan loyang springform (or any loose bottom cake pan).
  2. pukul cream cheese hingga creamy. tambah whipping crea dan susu pekat.
  3. tuang secawan adunan cream cheese kedalam loyang.
  4. susun biskut marie atas adunan tadi. patah-patahkan biskut seingga menutupi cream cheese tadi.
  5. tuang lagi selapis adunan cream cheese keatas biskut.
  6. susun biskut marie coklat pula. patah-patahkan biskut sehingga menutupi cream cheese.
  7. ulang sehingga adunan cream cheese habis. lapisan atas mesti berakhir dengan cream cheese.
  8. tabur shredded cheddar cheese pada permukaan atas dan sejukkan dalam peti sejuk semalaman.

baru berjaya tepek gambaq ;)


nota:
saya tak jumpa marie coklat kat pkm.. maka saya tabur serbuk koko pada lapisan tengah..
shredded cheddar cheese pun lupa nak beli! maka.. serbuk koko juga yg jadi pengganti..

verdict:
trust me, you wont stop at one slice!

swiss bircher muesli ~ a healthy breakfast :)

saya jumpa resepi ni tatkala men'gugel' healthy baking
kenapa saya yang kategori kecik ni mencari healthy baking??

sebab pertama yang saya dah mention banyak kali..
kenaikan lemak tepu disekeliling pinggang & pinggul

sebab kedua yang saya tak pernah sebut..
tahap kolestrol saya yang agak tinggi.. ya.. melebihi paras normal!

sebab ketiga hanyalah berdasarkan niat dan azam
untuk terus sihat supaya boleh beribadat dengan mudah
dan boleh menguruskan anak2 dan kehidupan seharian
selagi hayat dikandung badan.. insyaallah..

panjang pulak intro hari ini ;)
oh! resepi ni takde kaitan dengan baking
saja nak share healthy breakfast..



adaptasi dari kitchenparade
bahan2 (utk sorang makan):

  • 1/4cwn rolled oats (bukan quaker oat tau!)
  • 1/2cwn susu lowfat
  • 1/4 apple, potong wedges
  • a splash of honey 
  • 1sdb yogurt <-- lupa pulak nak letak!
  • kekacang - almonds/ walnuts/ sesame seeds/ sunflower seeds <-- saya letak biji kuaci
  • buah2 kering - cranberry/ apricot/ kismis <-- saya letak kismis
  • spices - cinnamon/ nutmeg/ cardamom <-- tak letak pun
tatacara:
  1. rendam 1/4cwn rolled oats bersama2 1/4cwn susu dan biar semalam dalam peti sejuk.
  2. keesokan hari, tambah baki 1/4cwn susu dan masukkan semua bahan2 lain dan gaul.
  3. enjoice!
verdict:
senang sangat2 nak makan healthy food nih..
cumanya saya rasa tekak ni tak boleh telan menu ni hari2..
walaupun isi2 dan inti2 tu dipelbagaikan.. 
seminggu 2x mungkin boleh.. insyaallah..
hmm.. cemana nak ajar budak2 makan healthy ni ek?

cake truffles a.k.a cake balls

this cake truffles has been calling me
since i managed to crushed 7 out of 10
chocolate gingerbread cake
which is baked in mini bundt silicon pan
(i keep tight - in fridge & its still edible after a week)



how do i make my cake truffles?
its pretty simple..

all you need is..
cake - any cakes - homemade or store bought - the choice is in your hand :)
frosting - any kind of frosting - cream cheese? choc? heavy cream?
chocolate topping & its condiment - choc rice, choc colors, nuts, etc.

sebelum mekap
tatacara:
  1. hancurkan kek guna garfu atau masukkan kedalam food processor (saya guna garfu je..)
  2. masukkan frosting (saya guna heavy cream) kedalam kek yang dah hancur. gaul sebati. jumlah frosting agak2 cukup bagi kek boleh dikepal.
  3. kepalkan kek atau senduk dengan ice-cream scoop (saya guna sudu bulat saiz 1tsp) dan bulatkan kek yang dah dikepal tadi. letak atas dulang yang berlapikkan kertas tekap atau baking sheet ~ dah jadi cake ball ;)
  4. masukkan dalam peti sejuk sekurang-kurangnya 1jam.
  5. cairkan chocolate dengan cara double boil dan keluarkan sebahagian cake ball tadi.
  6. celupkan kek kedalam coklat dan tabur condiments masa coklat masih basah. buat hingga selesai.
  7. sejukkan cake ball dalam peti ais sebelum dihidangkan.

sesudah mekap

nota:
saya buat kecik2 ~ 1tsp sudu bulat - dapat 28biji dan guna 100g coklat masakan utk topping.
kek & frosting tak boleh nak agak.. silap tak timbang dulu :(
susah nak hilang tabiat buat kerja campak2 nih {sigh}

no-bake oreo cheesecake


dulu dah pernah buat no-bake cheesecake/ cheesetart
tapi tak guna gelatine
keluar dari peti ais 5minit.. dah lembek!

cuba guna gelatine halagel yg dah lama beli
entah kenapa.. saya saspen sgt dgn gelatine ni
dari mggu lepas (ke.. 2mggu lepas?) cari resepi
macam2 ada! yg letak toblerone.. yg letak white choc.. yg guna coolwhip
akhirnya hati tertambat pada resepi bakingmum.blogspot.com

bahan2:
  • 1cwn oreo hancur (1 peket oreo, dibuang krim.. krim campur dalam filling)
  • 50gm butter, dicairkan
  • 500gm cream cheese, dilembutkan
  • 3/4cwn gula caster
  • 3sdk gelatine - dilarutkan dalam 1/4cwn air panas
  • 2tbs jus lemon
  • 1cwn heavy whipping cream, dipukul sedikit
  • 1 peket oreo (5keping dihancurkan utk topping, baki dipatah2kan masuk dalam filling)

tatacara:

  1. utk dasar, gaul-sebati oreo hancur bersama butter cair dan tekan pada dasar loyang 20cm. sejukkan dahulu dasar dalam peti beku.
  2. larutkan gelatine dalam air panas.
  3. pukul whipping cream sedikit.. tak perlu hingga kental. agak2 saja.
  4. dalam mixer, pukul creamcheese bersama gula hingga sebati dan lembut. masukkan sekali cream oreo yg dikeluarkan tadi utk buat dasar.
  5. kaupbalikkan whipping cream, jus lemon dan gelatine.
  6. masukkan oreo yg telah dipatah-patahkan dan gaul sebati.
  7. tuang adunan keatas dasar. dan sejukkan 30minit.
  8. topping (optional) - tabur baki oreo yg telah dihancurkan keatas adunan dan sejukkan 4jam atau semalam sblm dinikmati.

verdict:

huduh bonar topping itu! takpe.. yg penting.. x meleleh walaupun lebih 30minit pada suhu bilik (sah2 la sebab ada gelatine :p) hmm.. mungkin next time topping tu kena eject cream dulu.. baru tak berketul2..

puding trifle



sebelum saya lupa dan membuang masa mencari resepi lagi..
lebih baik saya jot down cepat2!

dah pernah buat untuk mak bawa ke opisnya..
tapi kertas yang print hari tu entah kemana

lepas tu ada kawan mintak resepi
cari punya cari.. jumpa dan terus bagi link & resepi

kali ni terasa nak buat..
seharian mencari resepi!
apa punya keroje daaa...
akhirnya terpaksa mintak balik dgn kawan! :p

macam2 cara ada nak buat trifle ni
suka hati kita nak layer apa dan macam mana..
tapi saya suka yang original.. dan tradisional
maka.. saya ikut dalam blog teratak impian

saya guna bekas pyrex 9x13

lapisan bawah sekali..
susun swissroll (perasa apa pun boleh!) dan tuang air fruit cocktail ke atas swissroll

lapisan 2nd last (atas swissroll)
1tin susu cair + 1tin air + 7sdb gula pasir - masak sampai mendidih sambil tu..
1/2tin air + 4sdb tepung kastad - masukkan kedalam susu bila dah mendidih
kacau sampai likat

lapisan ke-3 (selepas kastad)
tabur fruit cocktail (buah saja, air tak perlu.. lagipun airnya dah kering dituang keatas swissroll)

lapisan ke-4
1kotak kristal jelly - masak ikut arahan pada kotak
saya guna tajuk nona: 400ml air didih dan masukkan kristal jelly dan kacau. dah didih semula, tutup api dan kacau hingga sedikit sejuk baru tuang atas buah2 tadi

lapisan ke-5 (optional)
kalau zaman dulu, layer sampai jelly saja..
sekarang zaman dah berubah (iklan apa ya ni?)
ada yang letak whipping cream.. menarik & enak juga tu!
saya belum buat lagi ;)

(berry)cream cheese tart



i wanted to conquer my fear of making tarts & pies
i thought i should start with the easiest one
the recipe from joyofbaking.com seems the right choice

i opted out the cran-raspberry sauce
both berries are unavailable
never bought them before
never set my eyes on them

recipe below is a twisted version
according to available materials

materials:
crust
  • 150gm crushed digestive biscuit
  • 2tbs sugar
  • 80gm butter - melted

filling

  • 8oz cream cheese
  • 1/4cup sugar
  • 1tsp vanilla extract
  • 1cup heavy whipping cream

method:

  1. crust: mix all crust ingredients and pressed onto the bottom and sides of a greased removable-bottom tart pan (8 or 9inch).
  2. cover with plastic and keep in freezer while you prepare for filling.
  3. filling: beat cream cheese with hand mixer until smooth.
  4. add sugar and beat until light and fluffy. add vanilla.
  5. in another bowl, beat whipping cream until soft peaks form.
  6. combine whipping cream into cream cheese mixture.
  7. pour the filling over the chilled crust.
  8. cover and refrigerate overnight <-- i just cover with larger cake pan.
  9. dollop a spoon of berry sauce (in my case-i use blueberry filling) before serving
  10. serve it chill-immediately out from the fridge!

verdict:

my fear is not conquered yet. baking the tart shell is my actual fear :p

mission diverted! but am glad this yummy-creamy-dreamy tart is a HIT!

halal classic tiramisu

its listed under my to-bake list
i should've taken out from that list
since no baking required!



i made my 1st tiramisu last nite
i am determined..
to make the best tiramisu i ever taste
i've set my mind..
this "pick-me-up" dessert
shall make me wanna have it again & again
as the name suggest!

there are quite a few version.. & recipes..
i summarize it into 2:
1. classic tiramisu
2. simple tiramisu

since the ingredients are expensive
  1. savoiardi - about rm28 per pack (44 fingers) isit really rm28??
  2. mascarpone cheese - rm26.90 per tub of 250gm <-- i use 2tubs
  3. whipping cream - rm7.90 for 200ml (not even 1cup!)
i said to miself..
why not make the grandeurs one??
i adapted the recipe from CFE

and i couldnt remember where i got the info
to replace the marsala wine with
1tsp of vanilla + 1tsp of almond extract



verdict:
how i wish i couldve turn back time
how i wish i didnt come across the replacement of wine..
how i wish i couldve just opt out the wine altogether

why?
because the almond extract makes it taste weird!
my classic tiramisu taste & smells like a medicine!
huwaaaa!!!!!!!!!!!!!!!!!!!!!!!!!!
and it has a new name: TIRAMUSUK!

apart from the weird taste
i suppose this dessert is quite tasty
ayat pujuk diri seniri nih?? :p

muffin-failure-trifle

i failed..
i failed again..
and again.


yes.
THREE times!


the easiest thing to make
the easiest recipe to bake


1. chocolate muffin
2. banana choc chip muffin
3. kiwi yogurt muffin

all of you guys turn out hard. and crusty.

i know. blame the temperature setting.

but three times??


now please pity me.
pity me please..
please........


no.
i didn't throw them away
even tho they wont crumble when they hit the wall

i love leftovers
i love to upcycle leftovers

yes.
they are categorized as leftovers
since nobody want to eat them
since nobody can eat them

i upcycled them into a dessert:


can you see the cut-out of the muffins down there?


ingredients:
  • failed & hard-to-break muffins
  • 4tbs custard powder
  • 1/2cup warm water
  • 4tbs sugar (the sweetness is up to your tastebud)
  • 1cup fresh milk
  • 1/2cup chocolate kisses

method:

  1. heat milk and sugar in saucepan
  2. dissolve custard in 1/2cup water
  3. once the milk come to boil, pour custard into the milk mixture
  4. add in chocolate kisses
  5. stir to boil again
  6. if you like thicker consistency, add more custard powder
  7. pour the mixture into layers of hard-knock muffins
  8. cool it off in fridge
  9. pour whipping cream before you dig into them

verdict:

tasty!
delisioso!
i will purposely make a failed muffin again
so that i can make more muffin-failure-trifle
