broccoli and sausage egg muffins

assalamu'alaikum wrt wbt.

this is my friday breakfast :)
alhamdulillah.. telan 2 bijik dah kenyang!

adapted from: snackinginthekitchen

  • 1 pound sausage (Ayamas)
  • 1 cup broccoli florets
  • 8 large eggs
  • 1/4 cup milk 
  • 1/2 tbsp vegetable oil
  • 1/2 tsp baking powder
  • salt & pepper to taste
  • grated Cheese as needed

  1. Preheat oven to 375 F.
  2. Boil salted water and dump sausages for few minutes. Take out sausages and blanched the broccoli florets.
  3. Whisk together eggs, milk, oil and baking powder.  Season with salt and pepper.
  4. Lightly spray a 12-cupcake pan with oil. Spoon out the sausage and broccoli mixture evenly into each cupcake.
  5. Ladle the egg mixture over sausage and broccoli. 
  6. Sprinkle with Parmesan cheese.
  7. Bake for 15-20 minutes.

healthy banana bread with dark chocolate chips

assalamu'alaikum wrt wbt

am into healthy breakfast (yes breakfast only :p) nowadays
so.. i made this healthy bread & muffins last weekend
(i got 4 teeny-weeny mini loaf and 10 or more muffins)
and just had the last slice for this morning breakfast!
its healthy. it keeps well in the fridge. and its yummy!

banana wholemeal muffins
i ate 4 of them while driving on sunday morning. bedal sakan!

  • 4 very ripe bananas, well mashed
  • 2 eggs plus 1 egg white, lightly beaten
  • 1 teaspoon vanilla
  • 2 cups whole wheat flour
  • 3/4 cups Sucanat (evaporated cane juice/ sugar) 
  • 1 tablespoon ground flax seeds
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 oz dark chocolate, chopped or choc chips (about 1/2 cup)
  1. Preheat oven to 350° and grease either a large loaf pan, three mini-loaf pans, or a large muffin pan.
  2. Mix mashed bananas with eggs and vanilla, and then stir in flour, Sucanat, flax seeds, salt and baking soda until just combined.  Gently stir in chocolate and pour batter in prepared pans.
  3. Bake a large loaf pan for 60 minutes, mini-loaf pans for 35 minutes, and muffins for 20 minutes (until cake tester or wooden skewer comes out mostly clean).  Set on cooling racks for 5 – 10 minutes, then remove from pans to finish cooling.
tips:
  1. Ripe bananas, please.  Yellow ones just won’t do- they need to be more black than brown.  I wouldn’t bother making the bread if the bananas aren’t ready.  Better to make a banana split or a banana/almond butter/almond milk/cinnamon shake if you feel the urgent need to use up your bananas.
  2. Substitutes?  But of course.  Use regular flour if you don’t have the whole wheat, and regular or brown sugar if you don’t have Sucanat.  Skip the flax seeds if you want.  (Just know that you won’t be able to call these Impossibly Healthy if you take out the healthy ingredients.)  If you don’t have dark chocolate, you can chop up other kinds of chocolate (or use chocolate chips)- but again, you lose the right to use the Healthy claim… just so you know.  Dark chocolate wins in the antioxidant department and is less sweetened than its semi-sweet and bittersweet counterparts.
  3. Nuts… yes, nuts are lovely in banana bread, especially walnuts.  Toast some and add them in if you’d like.  They’ll bring a healthy fat to the party, which is good but something to consider if you’re looking to take some of the fat out of your life.
  4. “Healthy”: Be sure to explain to people that this is a Healthy bread- yes, with a capital H- and while it’s super-good, it’s definitely not a decadently sweet and rich classic banana bread like this recipe.  When you build whole wheat and flax and raw sugar and you strip out butter and oil and a yolk, you’re not getting an indulgent treat.  But you do have my word that this is pretty damned good.
  5. Storage: keep this bread wrapped in plastic wrap (or in an airtight container) to stay moist, and eat within a few days.  Enjoy!
note:
my batter is quite thick, i assume due to the not-so-ripe bananas. so, i added few tablespoons of low fat milk and canola oil. alhamdulillah.. it turn out great!

buttermilk crumb muffins

lepas tengok cerita the lorax sama2.. anak2 sedara datang rumah
katanya nak bawak something utk potluck (or isit farewell?) ke opis esok
dia nak buat yang simpel2 ja.. say.. a muffins?
saya pun belek2 buku nigella.. buku jamie.. tp xdak yg menarik hati
bila terjumpa buttermilk crumb muffins dlm buku baking with julia
terus tergoda! sebab ada buttermilk! pasti lembut gebus ;)

  • 2 1/2cups all-purpose flour
  • 2cups light brown sugar <-- next time i'll reduce to 1 1/4C
  • 2/3cups solid vege shortening <-- i use butter (150g)
  • 2tsp baking powder 
  • 1/2tsp baking soda
  • 1/2tsp cinnamon
  • 1/2tsp ground nutmeg
  • 1/2tsp salt
  • 1cup buttermilk
  • 2 large eggs, beaten
  1. Preheat the oven to 350° (170C) . Line with muffin-liners, a 12-cup muffin tin. Set aside.
  2. In a large bowl, combine the flour and brown sugar. Cut the butter into small pieces and add to the bowl. Rub the butter into the dry ingredients. When the mixture looks like coarse breadcrumbs, measure out 1/2cup and set it aside to use as the crumb topping.
  3. Add the baking powder, baking soda, cinnamon, nutmeg, and salt to the remaining flour mixture and stir with forks. Add the buttermilk and eggs. Using a rubber spatula, mix until the ingredients are well blended, until batter is thick and shiny.
  4. Divide the batter among the 12 muffin cups about 2/3cups full. Sprinkle the top of each muffin with the reserved crumb mixture and pat it gently onto the batter. if you have any empty muffins mould, fill halfway with water. this will help muffins bake evenly.
  5. Bake for 25 to 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Serve warm. Makes 12 muffins.

lembut! i simply love buttermilk :)

Variations:
  • Add ½ cup chocolate chips along with the spices.
  • Add ½ cup chopped nuts to the reserved topping mixture.
  • The batter and crumb topping may be spread in a greased and floured 9x9-inch baking pan to make a coffee cake.

to be frank.. i totally forgot abt the leavening agent: baking soda & baking powder! huhuhu.. it does raise a bit.. but not as nice and as soft as a muffins-should-be. its quite good tho.. love the buttermilk effect ~ soft. harap2 teman sepejabat anak sedara sudi makan.. anyhow, next time (insyallah.. will do it again) i will just put 2tsp baking powder and omit the baking soda. and add chopped nuts to the crumb.. insyaallah.. insyaallah..

chocolate banana muffins

assalamu'alaikum wrm wbt

budak2 ni kan.. bila nampak pisang menjerit2 ummiii!! nak pisang!!!
macam tak pernah jumpa pisang setahun je gaya sorang2..
bila dah beli bawak balik.. makannya sorang seketul dua saja.
dah jemu buat cok-kodok.. ummi buat muffins la pulak
tapi muaz & nuha ja yg dapat makan..
sebab buat lepas abang & kakak pegi skolah.

hajatnya nk buat muffins macam sonia buat..
tapi lupa nk salin resepi.. ipad pun dah takdek..
laptop pulak dok kat atas.. malas nak naik turun..
so, bukak buku makcik nigella je lahh...

  • 3biji pisang (kalau sukat dlm 1 1/2cwn)
  • 2biji telur
  • 125ml minyak
  • 100g gula perang
  • 225g tepung gandum
  • 1sdk baking soda
  • 3Tbs serbuk koko, diayak
  • chocolate chips <-- optional
  • 1tbs susu <-- saja tambah
  1. panaskan oven 190C. line bekas muffin dgn kertas muffin.
  2. lecek pisang sampai hancur. masukkan minyak, telur dan gula dan gaul sehingga sebati.
  3. satukan tepung, soda dan serbuk koko. masukkan kedalam adunan pisang. gaul sebati ala kadar (pelan2 je.. takyah kacau beriya sangat). masukkan chocolate chips & susu. gaul sebati.
  4. sendukkan adunan kedalam kertas muffin. tabur chocolate chips (terpulang) dan bakar selama 15-20minit.
tar-pau utk breakfast in office. konyang den! alhamdulillah..

saya buat separuh adunan, dapat 8 ketul muffins.
lepas ni kalau ada pisang lagi nak buat muffins sonia pulak ;)

eggless orange buttermilk poppyseed muffins

assalamu'alaikum wrm wbt,

anak teruna gebu was asking for cakes/ muffins since last week
he wanted to bring to school for his friends & lovely teacher zarina
(he was so happy to get teacher zarina as his class teacher & kakak was so jealous of him!)
but ummi was busy entertaining her officemate (ye lah tu :p)
so.. last nite i embarked on making this eggless muffins for him
i had to look for eggless recipe since we have only 1 egg left in the fridge!

  • 2cups All purpose flour
  • 1/2cup Sugar
  • 1/4cup Butter
  • 1/4cup Sunflower oil
  • 1/2cup Buttermilk
  • 1/2cup Orange juice <-- 1 orange
  • 1tsp Orange zest <-- i just use 1 whole orange zest
  • 1tsp Baking powder
  • 1/2tsp Baking soda
  • 1tsp Vanilla extract
  • 2tsp Poppy seeds <-- i just sprinkle a little bit ~ less than 1tsp i think
  1. Preheat the oven to 350F..Sieve the flour with baking soda and baking powder,add the poppy seeds and keep aside.
  2. Beat the sugar,butter and oil until the sugar gets well dissolved, immediately add the buttermilk,orange juice,orange zest and vanilla extract, whisk everything well.
  3. Gradually add the dry ingredients to the wet ingredients, mix it well with a spatula,batter will be quite thick but don't overmix the batter,else ur muffins will turn hard.
  4. Drop enough batter to the silicon muffin tray and bake for 20-25minutes until a skewer inserted comes out clean..

    linzer muffins

    dah lama tak buat muffins utk anak2 bawak kesekolah..
    sblm subuh tadi dah turun godek2 dapur
    utk buat linzer muffins yg dah berhari2 dikelebek resepinya
    kat technicolorkitchen nampak sgt sedap!
    tapi saya belum sempat rasa..
    rupa muffins yg saya buat sangat pucat lesi - langsung tak berseri :|
    kak insyirah yg tengah demam tak selera nak bawak kesekolah
    abang gebu dah makan 2 ketul tapi akhirnya taknak bawak jugak
    sayu rasa hati ummi..
    takpalah.. bukan rezeki classmate kakak & abang..
    insyaallah kawan2 di ofis ummi boleh tlg makan :)
    lagipula pagi ni ada acara angkut mengangkut..
    boleh jamu muffins yg entah apa rasa ni..

    • 1 ½ cups (210g) all-purpose flour
    • 1 ½ cups (150g) almond meal (finely ground almonds)
    • ¾ cup (150g) superfine sugar
    • ½ teaspoon finely grated lemon zest
    • 2 teaspoons baking powder
    • ½ teaspoon salt
    • ¼ teaspoon ground cinnamon
    • 1 cup (240ml) whole milk, room temperature
    • 6 tablespoons (¾ stick/84g) unsalted butter, melted and cooled
    • 1 large egg
    • 1 teaspoon vanilla extract
    • about 1/3 cup raspberry jam
    • confectioners’ sugar for dusting
    1. Preheat the oven to 200°C/400°F. Butter a muffin pan with twelve ½ cup capacity muffin cups.
    2. Whisk together flour, almond meal, sugar, lemon zest, baking powder, salt, and cinnamon in a large bowl. 
    3. Whisk together milk, butter, egg and vanilla extract in a small bowl, then stir into dry ingredients just until combined – do not overmix; batter should be lumpy.
    4. Put a scant ¼ cup batter into each muffin cup. Top each with 1 rounded teaspoon jam. Divide remaining batter among cups. 
    5. Bake until golden and muffins pull away from edges of cups, about 20 minutes. Cool in pan on a rack 5 to 10 minutes, then turn out onto a rack. 
    6. Dust with confectioners’ sugar before serving. <-- tak buat ni.

    chocolate chip banana muffins

    kebetulan mmg niat nak buat utk teacher & geng kelas 4yaqut
    lepas carrot cake masuk oven terus godek2 buat muffins ni pulak

    • 1 3/4 cawan tepung serbaguna
    • 3/4 cawan gula <-- saya guna 1/2cwn membukit gula perang
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1/2 teaspoon garam
    • 1 biji telur
    • 1/2 cawan minyak
    • 1/2 cawan plain yogurt
    • 1 teaspoon vanilla extract
    • 1 cawan pisang lecek
    • 3/4 cawan semisweet chocolate chips
    Caranya: (Cara izah)
    1. Dalam mangkuk yang besar ayakkan tepung bersama baking powder, soda dan garam. Kemudian masukkan gula dan chocolate chip. Gaul rata
    2. Dalam bekas yang lain, satukan minyak, telur, yogurt, pisang dan essence Vanilla. Gaul rata.
    3. Kemudian masukkan adunan pisang ke dalam mangkuk tepung tadi. Gaul sekadar bersatu sahaja.
    4. Sendukkan ke dalam paper muffin dan bakar pada suhu 180 C selama 25 minit.
    muaz kata sedapnya bau.. esok muaz nak makan satu!

    lemon yogurt muffins

    semalam dah beli lemon
    tapi lupa beli yogurt :(
    hari ni letak dlm notes - to buy
    first in the list is yogurt ;)

    tadi execute the baking of this muffins
    untuk kak insyirah punya kawan2 & her lovely class teacher - t.zarina

    Ingredients:
    • 1 3/4 cups all-purpose flour
    • 3/4 cup castor sugar (saya guna 1/2 cup sahaja)
    • 1 tablespoon grated lemon peel
    • 1 teaspoon baking powder
    • 3/4 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 egg
    • 1 cup lemon or plain yogurt (saya guna yogurt)
    • 6 tablespoons butter or margarine, melted (saya guna unsalted butter)
    • 1 tablespoon lemon juice
    TOPPING:
    • 1/3 cup lemon juice
    • 1/4 cup sugar
    • 1 teaspoon grated lemon peel
    Directions:
    1. In a large bowl, combine the first six ingredients.
    2. In another bowl, beat the egg, yogurt, butter and lemon juice.
    3. Stir into dry ingredients just until moistened.
    4. Fill greased muffin cups two-thirds full.
    5. Bake at 200 degrees C for 20-25 minutes or until a toothpick comes out clean.
    6. Cool for 5 minutes; leave muffins in pan.
    7. Using a toothpick, poke 6-8 holes in each muffin.
    8. In a saucepan, combine the topping ingredients. Cook and stir over low heat until sugar is dissolved. Spoon over warm muffins.

    seghiau jugak bila insyirah kata masam - nanti kawan kakak tak suka :/
    oh well.. she licked the topping! manala tak masam kan?
    the muffins itself tak masam langsung. sedap bangat! lembut & gebush :)

    krissy's best ever corn muffins

    cornmeal yg beli sebulan (ke.. 2bulan?) yang lalu masih berbaki
    maka mula operasi mencari resepi cornbread atau corn muffins..
    jumpa dalam allrecipes.. tengok comments banyak positive..
    boleh cuba buat.. bagi utk luqman & kawan2 makan masa wrap-up, insyaallah!

    • 1/2 cup butter, softened
    • 2/3 cup white sugar
    • 1/4 cup honey
    • 2 eggs
    • 1/2 teaspoon salt
    • 1 1/2 cups all-purpose flour
    • 3/4 cup yellow cornmeal
    • 1/2 teaspoon baking powder
    • 1/2 cup milk
    • 3/4 cup frozen corn kernels, thawed
    1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 12 cup muffin pan.
    2. In a large bowl, cream together the butter and sugar. Beat in the honey, eggs and salt. Mix in flour, cornmeal and baking powder. Stir in milk until batter is smooth. Fold in corn. Spoon into prepared muffin cups.
    3. Bake in preheated oven for 20 to 25 minutes, or until tops of muffins are lightly browned.

    the sweetness is just rite with the cornish taste..
    oh! so yummm!!!

    pear and banana muffins

    everytime i call or meet teacher zarina
    she will say, we miss your muffins
    malu rasanya..
    bila nak buat, asik tak cukup bahan
    bila dah cukup bahan, badan pulak kepenatan
    malam ni usahakan jugak2..

    tapi.. setelah selesai godek & mix everything
    baru sedar. eh! muffins ni takdak butter atau minyak!
    makcik kata muffins yang sehat la tu buk..
    hehe. i wish!
    but i "cleverly" added a few tbs of milk
    walhasil.. its too moist err.. wet!

    the recipe below makes 24muffins or less.
    • Olive Oil or Canola spray
    • 2 cups Wholemeal self raising flour
    • 2 cups white Self Raising Flour
    • 1 cup brown sugar
    • 2 Eggs
    • 150 ml Low Fat Natural Yoghurt
    • ½ cup orange juice
    • 1 large Banana peeled and chopped
    • 1 Pear cored and diced
    • ½ cup Buttermilk or low fat milk
      1. Preheat oven to 170˚C.
      2. Lightly spray muffin trays with oil.
      3. Sift flours, returning husk from wholemeal flour to the bowl, add brown sugar.
      4. In a separate bowl mix eggs, yoghurt and juice. Combine with the flour mix and fold through fruit and milk (you may need less milk depending on moisture in fruit).
      5. Do not over-mix. Spoon mixture into trays.
      6. Bake near the top of the oven for 18-20 minutes.
      7. Turn onto a wire rack to cool.

      variations:
      Any unsweetened fruit juice maybe used.
      Use apples, blueberries or other firm fruit to vary the flavour.
      Make 12 muffins and 1 loaf, by spooning half the mixture into a greased loaf tin.
      Bake the loaf in the middle of the oven for 35 minutes, or until firm and golden brown.
      Bake near the top of the oven for 18-20 minutes.

      verdict:
      its not sweet at all and a bit err.. wet! huhu..
      so very padat & so very full bila makan seketul!
      hmm.. i have a feeling the kiddos wont like it..
      now am contemplating.. nak bagi ke tak to the kids & t.zarina?
      it will ruin my image of supplying muffins sedap! haha. senget! :p

      nigella's baklava muffins

      the school is celebrating teacher's day
      insyirah wants to make muffins for her teachers
      just because teacher zarina love the muffins that i made before :p
      but this time i chose the recipe from nigella's book
      the filling & topping ingredients are similar to baklava: nuts and honey
      hopefully teacher zarina will like this one too :)

      filling
      • 100g walnuts, chopped
      • 75g demerara sugar <-- i use brown sugar
      • 1 1/2 tsp cinnamon
      • 45g butter, melted
      muffins
      • 210g plain flour
      • 2 tsp baking powder
      • 1/2 tsp baking soda
      • 75g caster sugar
      • 1 large egg
      • 45g unsalted butter, melted
      • 250ml buttermilk
      topping
      • 125ml runny honey
      1. Preheat oven to 200°C/180°C fan forced.
      2. Mix all the filling ingredients together in a small bowl, set aside.
      3. In a large bowl, mix together the flour, baking powder, baking soda and sugar.
      4. Mix the egg, melted butter and buttermilk.
      5. Make a well in the dry ingredients and add gently mix in the wet ingredients.
      6. Fill 12 muffin cups 1/3 full, add a tablespoonful of filling, cover with muffin mixture until 2/3 full. Sprinkle any remaining filling on top of the muffins.
      7. Bake for 15 minutes. Put the muffins onto a rack to cool and drizzle with warmed honey.

      note:
      i use ikea's muffins papercase.. which is quite big.. yields only 10pcs.
      but the filling yields 20pcs. so i just doubled the muffins recipe & got 20pcs.

      kenny roger's corn muffins

      saya jumpa resepi ni dalam 1001resepi
      dah lama peram sebab tak sempat nk pergi beli jagung frozen
      last weekend cik abe dah tlg belikan.. :)
      pagi ni buat sebagai bekalan anak dara kesekolah..
      tapi anak dara tu tak makan pun!
      seronok nak bagi kawan2 ja..
      sebelum ni dia sibuk nak jual2
      tapi cikgu dah tak bagi jual.. sedih dia..
      takpa.. ummi buatkan dan kakak sedekah aja..
      moga lebih afdhal begitu.. insyaallah..


      lembut tapi crunchy thanks to the cornmeal ;)

      bahan-bahannya:
      • 1/2 cawan butter*
      •  2/3 cawan gula halus*
      • 1/4 cawan honey*
      •  2 biji telur*
      • 1/2 sudu kecil garam*
      • 1 1/2 cawan all purpose flour, ayak
      • 1/2 sudu teh baking powder, ayak
      •  3/4 cawan yellow cornmeal
      • 1/2 cawan susu
      1. pukul bahan diatas bertanda * hingga creamy
      2. kemudian masukkan: all purpose flour & baking powder dan yellow cornmeal (gaul rata)
      3. masukkan berselang seli dengan 1/2 cawan susu....gaul sebati.
      4. akhir sekali masukkan 3/4 cawan frozen corn...
      5. gaul rata dan sudukan kedalam muffin cups dan bakar pada suhu 180C selama 25 ke 30 minit atau hingga keperangan...hidang panas...hmmm...sedappp...
      nota: 
      saya bakar 25minit ja. tak cukup perang tp mmg dah cukup masak. 
      sgt kalut pagi tadi!!! keluar oven terus masuk tupperware.

      banana honey walnut muffins

      (bawak pun 5ketul je :p)
      anak dara mintak ummi buatkan kek lagi
      dia kata nak muffins special. apa yg special pun taktau :(
      ummi dia teringin nak terai muffins lain
      lain dalam ertikata tak pernah rasa..
      dan tak pernah cuba buat sebelum ni
      bila tanya banana & walnut ok tak?
      mula2 katanya taknak walnut.. kemudian dia kata ok jelah..




      banana honey walnut muffins

      •       ¾ cup chopped walnuts
      •       ⅓ cup plus 1 tablespoon honey
      •        ½ teaspoon cinnamon
      •             1½ cups all-purpose flour
      •           1½ teaspoons baking powder
      •            ½ teaspoon salt
      •            1 stick unsalted butter, at room temperature
      •             ⅔ cup granulated sugar
      •            2 large eggs
      •            ½ cup mashed bananas (you'll need 1 large very ripe banana)
      •            1 teaspoon pure vanilla extract
      •            ⅓ cup whole or low fat milk 

      1. Preheat the oven to 350°. Spray a 12-cup muffin tin with non-stick cooking spray, then line with paper liners (it is necessary to do both so that muffin tops don't stick to pan).
      2. In a small bowl, toss the nuts with the 1 tablespoon of honey and cinnamon until nuts are evenly coated (obviously, it will be very sticky).
      3. In a medium bowl, combine the flour with the baking powder and salt. Use a whisk to blend well. Set aside.
      4. In a large bowl, using an electric mixer, beat the butter with the sugar and the remaining 1/3 cup of honey until fluffy, 2-3 minutes. Scrape down sides of bowl with rubber spatula if necessary. At medium speed, add the eggs one at a time and beat until fully incorporated between additions. Beat in the banana and vanilla until blended. (It will look grainy.) At low speed, beat in the dry ingredients in 2 batches, alternating with the milk.
      5. Spoon the batter into the prepared muffin tin (I like to use an ice cream scooper) and sprinkle with the nut topping. Bake the muffins until the tops are golden and a toothpick inserted in the center comes out clean, about 30 minutes. Let the muffins cool in the pan for 10 minutes, then turn them out onto a rack and let cool for at least 15 minutes before serving.
           verdict: 
           sangat lembut & ringan. its the lightest banana cake/ muffins i ever taste!
           and the sweetness is just nice :) 
           harapnya laku la jugak jualan kat sekolah tu ;)
           tapi yang bestnya.. hasil jualan masuk tabung sekolah 
           ini macam bangkraplah tokey! :p

      feta & tomato muffins

      malam ini saya agak kecewa..
      kecewa kerana tidak memeluk anak teruna gebu sebelum tidur
      hanya kerana dia tidak menghafal surah al-falaq!
      sudah dipesan malam sebelumnya..
      namun tidak diendahkan!
      tunggu dia tidur baru boleh peluk ;)




      tapi kekecewaan itu agak terubat
      pabila cubaan pertama savory muffins menjadi :)
      (buat muffins pun kecoh! :p)
      alhamdulillah...
      cubaan pertama juga dari buku popina book of baking
      kiriman teman yg pulang dari uk
      bila dikirim. apa yg dikirim. semuanya dah lupa!
      astaghfirullah..



      bahan2:
      • 2biji telur
      • 300g tepung (~2cwn)
      • 2sdk baking powder
      • 100ml olive oil
      • 200ml whole milk <-- cuma ada susu lowfat
      • 1/3sdk vegetable buillon powder <-- ganti dgn serbuk ikan bilis
      • 1sdk garam
      • 1/3sdk crushed black pepper
      • 1small handful of fresh parsley, chopped <-- ganti dgn 1sdk dried parsley
      • 100g feta cheese, crumbled
      • 260g cherry tomatoes, halved
      tatacara:
      1. panaskan oven 170C. lapik bekas muffins dgn kertas cawan.
      2. gaulkan telur, tepung bp, olive oil, susu, buillon powder, garam, black pepper, parsley hingga sebati.
      3. kaupbalikkan feta.
      4. tuang kedalam bekas muffins, separuh kertas cawan.
      5. tabur 2 cherry tomato (yang dibelah) keatas adunan.
      6. tuang lagi sebahagian adunan keatas tomato hingga memenuhi kertas cawan.
      7. bakar selama 25minit.
      8. makan masa panas2 baru sedap!

        breakfast muffins

        saya beli buku donna hay semata-mata kerana namanya
        saya berkenalan, eh, kenal namanya drp blog technicolorkitchen
        banyak resepi2 yg diadaptasi dari donna hay
        jadi, bila jumpa bukunya di bookxcess, terus rembat ;)

        resepi pertama yg menggoda: breakfast muffins 
        a combination of oats, banana, strawberry and apple
        dah lama nak buat tapi takdak stoberi
        bila dah beli stoberi, masa pulak tak mengizinkan..
        dan rasa macam rugi pulak.. beli buah mahal2, buat muffins saja??
        makanya saya bahagi-duakan stoberi tu.. separuh lg utk agenda lain

        semalam saya paksa diri walaupun dah hampir masa tidur budak2
        (budak2 tidur mak budak pun kena tidur jugak :p)
        1/3batch bake semalam.. kak insyirah tapau ke sekolah utk jamu kawan2
        1/3batch bake pagi ni.. ummi tapau ke opis. laku jugak lelong pagi ni :p
        1/3batch still in oven masa nk keluar rumah tadi. utk sedekah kat jiran2
        from 3cwn tepung.. thats how much i get: 3x12pcs.
        dalam buku kata yield 12pcs.
        besar bom gamaknya!

        bahan2:
        • 3/4cwn minyak jagung
        • 1 1/2cwn gula castor <-- saya kurangkan 1tbs tp masih manis!
        • 1/2cwn susu
        • 3biji telur
        • 3cwn tepung
        • 2sdk baking powder
        • 1 1/2sdk serbuk cinnamon
        • 1/2cwn rolled oats
        • 3/4cwn pisang, dilecek lenyek
        • 1 1/2cwn strawberries, dipotong kecil
        • 1biji apple, disagat
        • 1sdb raw sugar <-- saya guna gula perang
        tatacara:
        1. panaskan oven 180C. gris loyang muffins atau susun muffins liner.
        2. dalam mangkuk kecil, sebatikan minyak, gula, susu dan telur = bahan basah.
        3. dalam mangkuk sedang, ayak tepung, baking powder dan serbuk cinnamon. masukkan 1/3cwn rolled oats kedalam adunan tepung.
        4. masukkan buah2 kedalam adunan tepung. masukkan bahan basah. gaul sebati tapi jgn terlebih gaul -nanti muffins jadi keras. tuang kedalam acuan.  
        5. sebatikan baki rolled oats dan gula perang. tabur keatas adunan dalam acuan. bakar 25min.



        verdict:
        walaupun agak manis tapi saya sangat suka! :D

        french breakfast puff

        pagi ni opis buat kenduri tahlil
        cadangnya nk bawak kek seketul dua
        tapi diusulkan utk bawak muffins
        french breakfast puff jadi pilihan sbb namanya breakfast!
        hahaha.. mcm sengal pulak bg reason tu :p

        Ingredients:

        • 1/3 cup shortening or softened butter = 75g
        • 1/2 cup sugar
        • 1 egg
        • 1 1/2 cups flour
        • 1 1/2 teaspoons baking powder
        • 1/2 teaspoon salt
        • 1/4 teaspoon nutmeg
        • 1/2 cup milk

        Topping:

        • 6 tablespoon butter, melted
        • 1/2 cup sugar
        • 1 teaspoon cinnamon

        Instructions:

        1. Cream shortening and sugar. Add egg, mixing well. Stir in milk.
        2. In a separate bowl, combine flour, baking powder, salt, and nutmeg. Add to wet mixture, stirring until moistened.
        3. Fill greased or paper-lined muffin cups with batter. Bake at 350 degrees for 20 minutes or until muffins test done.
        4. Remove muffins from pan and allow to cool for a few minutes. Combine sugar and cinnamon in a small bowl. Dip the top of each muffin in the melted butter and then in the cinnamon sugar.





        verdict:
        makan gitu aja tanpa topping pun sedap! lembut ja muffins ni..
        rasanya sipi2 macam kenny rogers vanilla muffins ;)
        ramai yg suka this sort-of-finger-food..
        my big boss nak order tapi saya pass je resepi ni..
        saya usulkan pada dia: apa kata boss suruh anak bini boss buatkan :p

        chocolate muffins for kiddos

        i made this muffins for muaz birthday on friday, 11/03/11.
        untuk dia bawak ke educare, bagi kat kawan2 & teachers ;)

        ummi mintak maaf sayang.. ini saja yang ummi mampu..
        kesian anak itu.. dia asyik tanya.. ummi nak buat kek apa?
        ummi tanya balik.. boleh tak kalau ummi buat muffins saja?
        rasanya dia tak kenal muffins & cuppycake
        sebab dia tanya.. nak letak gambar apa atas tu?
        huhuhu.. kesian sungguh anak ummi :(
        ummi kerastangan nak oiii.. udahle kalut dgn nak packing
        malam ni ummi pulun buat muffins chocolate dulu ya..
        packing ummi buat esok2 aja..

        bahan2:
        •  2 2/3cwn tepung
        • 1 1/2cwn gula <-- saya letak 1 1/4cwn
        • 1/2cwn serbuk koko
        • 1 1/2sdk baking soda
        • 1/2sdk garam
        • 3biji telur
        • 1cwn sour cream/ applesauce
        • 1/2cwn air
        • 1/2cwn susu <-- saya guna 1cwn susu, air tak letak
        • 1/2cwn minyak sayuran
        • 1sdk vanilla extract
        • 1/2cwn semisweet chocolate chips
        tatacara:
        1. panaskan oven 160C. sediakan 24 muffin cups.
        2. gaul sebati bahan2 kering: tepung, gula, serbuk koko, baking soda dan garam.
        3. dalam mangkuk berasingan, gaul sebati bahan2 basah: telur, sour cream, susu, minyak dan vanilla.
        4. masukkan bahan basah kedalam bahan kering dan gaul sebati.
        5. masukkan chocolate chips (saya masukkan separuh dan separuh lagi tabur atas adunan dalam muffin cups).
        6. tuang adunan kedalam muffins cups lebih kurang 2/3penuh.
        7. bakar selama 20-25minit.

        oho! bangun pagi ni with clear minds (walaupun tak cukup tidoq), i decided to try making another batch and send it to school together with the packed ones.. nanti minta tolong teacher gantikan siapa2 yg dapat yang tak jadik tu. hopefully they can help!

        jam-filled cornmeal muffins

        plan asal nak buat 2 jenis muffins utk muaz bawak ke educare..
        sementelah cornmeal masih berbaki, saya gugel resepi cornmeal muffins.
        satu chocolate muffins, satu jenis lagi cornmeal muffins..

        tapi bila dah siap cornmeal muffins ni..
        rasa macam tak adil pulak.. nanti ada yg dapat cornmeal, nak chocolate..
        rasanya.. budak2 lagi suka chocolate muffins, kan?
        maka, cornmeal muffins ni jadi habuan teman2 di ofis ;)

        • 1/2 cup granulated sugar
        • zest of 1 lemon <-- i use orange zest
        • 1 cup cornmeal
        • 1 cup flour
        • 2 teaspoons baking powder
        • 1/2 teaspoon salt
        • 1 beaten egg
        • 1/4 cup oil
        • 1 cup milk
        • 1/2 cup jam (I used raspberry, but it's really up to you)
        1. In a large mixing bowl, combine the sugar and lemon zest with your fingers until the sugar is a yellowish color. Add in the cornmeal, flour, baking powder, and salt. Add in the beaten egg, oil and milk, stirring until just combined.
        2. Fill muffin cups half full. Place 1/2-1 tbsp of jam onto batter. Scoop in another spoonful of batter, until the muffin cup is 3/4 full.
        3. Bake at 400 degrees F for 20-25 minutes or until set and slightly golden. (i bake at 180C)
        4. Allow the muffins to cool before removing from the muffin tin. Makes about 15 muffins.

        green tea muffins with red bean paste

        entah kenapa.. rindu pulak nak makan green tea muffins nih..
        dari isnin lepas terlintas nak buat..
        baru pagi ni terlaksana..

        bahan2:
        • 2cwn tepung
        • 1sdb baking powder
        • 1/2sdk garam
        • 2tbs gula
        • 2sdk serbuk green tea <-- saya letak 3sdk
        • 1biji telur, dipukul sedikit
        • 1cwn susu
        • red bean paste secukupnya
        • gula aising <-- optional
        tatacara:
        1. panaskan oven 190C dan lapik loyang dengan kertas cawan.
        2. gaulkan bahan2 kering: tepung, bp, garam, gula dan green tea hingga sebati. 
        3. tuang bahan2 basah: telur dan susu kedalam adunan bahan kering. gaul sebati ala kadar.
        4. senduk adunan kedalam kertas cawan hingga 1/2bekas. masukkan red bean paste yang digentel bulat keatas 1/2 adunan tadi. tambahkan adunan hingga menutupi red bean paste atau sehingga memenuhi 2/3kertas cawan.
        5. bakar selama 20-25minit. tabur gula aising (optional)



        verdict:
        apasal la asik tak menjadit je ni?
        rasa dia tak best macam mula2 buat hari tu :(

        healthy apple oatmeal muffins

        walaupun dah kata taknak membakar..
        i still need to take breakfast
        healthy muffins is a good option ;)
        demi menghilangkan gian nak membakar :p

        bahan2:
        • 2cwn apple, buang kulit dan sagat <-- lebih kurang 3-4biji
        • 1 1/2cwn tepung <-- lagi healthy kalau substitute separuh tepung dengan wholemeal flour
        • 1cwn quick cooking oat <-- quaker oat plastik merah
        • 2/3cwn gula perang <-- saya letak 1/2cwn saja
        • 1 1/2sdk baking powder
        • 1/2sdk baking soda
        • 1/2sdk serbuk cinnamon <-- saya letak 1sdk
        • 1/4cwn fat-free milk <-- saya guna susu low-fat
        • 2tbs minyak jagung
        • 1sdk vanilla
        • 1/2cwn plain fat-free yogurt <-- guna 1cwn low fat yogurt
        • 1/2cwn fat-free sour cream <-- tak letak
        • 2biji telur putih <-- saya guna sebiji telur kecil
        tatacara:
        1. panaskan oven 200C dan sediakan muffin cup.
        2. sebatikan bahan2 kering dalam mangkuk besar: tepung, oat, gula, bp, bs dan serbuk cinnamon.
        3. gaul bahan2 basah dalam mangkuk berasingan: susu, minyak, vanilla, telur dan yogurt.
        4. kaupbalikkan bahan basah kedalam mangkuk bahan kering.
        5. masukkan apple yang dah disagat (tapis lebihan air) dan kaupbalik hingga adunan sebati.
        6. masukkan kedalam muffin cup. 
        7. sediakan streusel topping. tabur atas adunan muffins dan bakar 20-25minit.


        sterusel topping:
        • 45g butter sejuk, dipotong kecil
        • 1/2cwn tepung
        • 1/4cwn gula perang
        • chopped nuts (optional)
        1. gaul sebati gula dan tepung (dan kacang; kalau ada).
        2. ramas butter sejuk kedalam adunan hingga terbentuk seperti breadcrumbs.
        nota:
        saya buat dalam muffins case yg besar gedabak.. 
        20min tak cukup! kena tambah jadik 30min rasanya..
        dapat dalam 8bijik je..
        kalau muffin cup yg stended tu.. insyaallah bleh dpt 14 bijik.

        verdict:
        saya makan seketul je.. memang kenyang!
        tapi sedihla.. sebab tak masak betul..
        silap sendiri.. tak cucuk lidi sblm tapau ke opis
        rasa mcm nak beli oven letak kat opis je!
        kalau ada yg underbake.. boleh continue bakar
        takpun.. siapkan batter kat rumah.. bakar kat office..
        nak buat quiche pun boleh..
        walla.. takyah susah2 ke cafe, brunch is ready!
        haish.. berangan tak sudah!
        kena halau keluar opis baru tau :p
