marie-helene's apple cake

ahlan wa sahlan 2013!

i've been neglecting my blog! and i thought i can keep track of my bakes n such in my instagram.. but i forgot where the recipe comes from! and when i want to make it again.. am at lost! aduyaiiii...

anyhow, here is one of the recipe that i remember.. which i made about 2-3 weeks ago.. when my cousin from Kenya is here. we brought her family (her mother, herself, her 4 kids) to morib gold coast. them kids had a blast! my cousin said her kids will never forget this vacation. alhamdulillah..

onto the cake. i brought this cake together with soft buns to morib. it was finished in a second!

  • ¾ Cup All-Purpose Flour
  • ¾ tsp Baking Powder
  • Pinch of Sea Salt
  • 4 Large Apples
  • 2 Large Eggs
  • ¾ Cup Sugar
  • 3 Tbsp Dark Rum -- i replaced with ribena
  • ½ tsp Vanilla Extract
  • 8 Tbsp (1 stick) Unsalted Butter, melted and cooled 
  1. Center a rack in the oven and preheat the oven to 350 degrees F. Generously butter an 8-inch springform pan and put it on a baking sheet lined with a silicone baking mat or parchment paper and put the springform on it.
  2. Whisk the flour, baking powder, and salt together in small bowl. Peel the apples, cut them in half and remove the cores. Cut the apples into 1- to 2-inch chunks.
  3. In a medium bowl, beat the eggs with a whisk until they’re foamy. Pour in the sugar and whisk for a minute or so to blend. Whisk in the rum and vanilla. Whisk in half the flour and when it is incorporated, add half the melted butter, followed by the rest of the flour and the remaining butter, mixing gently after each addition so that you have a smooth, rather thick batter. Switch to a rubber spatula and fold in the apples, turning the fruit so that it's coated with batter. Scrape the mix into the pan and poke it around a little with the spatula so that it's evenish.
  4. Slide the pan into the oven and bake for 50 to 60 minutes, or until the top of the cake is golden brown and a knife inserted deep into the center comes out clean; the cake may pull away from the sides of the pan. Transfer to a cooling rack and let rest for 5 minutes.
  5. Carefully run a blunt knife around the edges of the cake and remove the sides of the springform pan. (Open the springform slowly, and before it’s fully opened, make sure there aren't any apples stuck to it.) Allow the cake to cool until it is just slightly warm or at room temperature. If you want to remove the cake from the bottom of the springform pan, wait until the cake is almost cooled, then run a long spatula between the cake and the pan, cover the top of the cake with a piece of parchment or wax paper, and invert it onto a rack. Carefully remove the bottom of the pan and turn the cake over onto a serving dish.

apple oat crisp

i made this apple crisp in hurry
and i even forgot the original source for this recipe!
miss kalut sungguh!

apple oat crisp

  • 6 apples (green or red or anything. your choice)
  • 2tsp cinnamon + 2tsp brown sugar
  • 1/2cup butter
  • 1cup flour
  • 1cup quick cooking oat -- i used quaker oat
  • 3/4cup white sugar
  1. preheat oven to 180C.
  2. peel and slice the apples and place them in the 9x13 baking dish.
  3. sprinkle cinnamon and brown sugar over the apple slices.
  4. mix other ingredient until crumbly and pour on top of the apples.
  5. bake 40-50mins.
note: i halved the recipe above and bake in 9inch pie plate.

apple kuchen

apple kuchen ni dibuat utk adik2 yg bersusahpayah demi sebuah pertandingan
mereka adalah contoh manusia yg sanggup bekerja tanpa imbuhan..
demi kepuasan. demi keyakinan. demi pertandingan.
semoga Allah membalas kebaikan kalian.
kudoakan kejayaan milik kalian..

dapat 2 loyang 8inci. satu loyang utk adik2. satu lagi utk kawan2 opis.

  • 2 1/2 c. flour (I used 2 c white, 1/2 c wholemeal)
  • 1 package active dry yeast (2 1/4 tsp)
  • 1/2 c. milk
  • 1/3 c. sugar
  • 1/3 c. unsalted butter
  • 1/2 tsp. salt
  • 2 eggs
  • 2 large Granny Smiths*, peeled, cored, and sliced
  • 2 tsp. lemon juice
  • Crumb Topping (to follow)
  • Lemon Icing (to follow) <-- i omit this.
  1. In a large mixing bowl add 1 c. flour and the yeast.  
  2. In a sauce pan heat the milk, butter, salt, and sugar just until warm.  (The butter will not be completely melted.)  Add to the flour/yeast mixture and beat, with eggs, for about 3 minutes.  Stir in the remaining flour by hand. 
  3. Divide dough between two greased cake pans.  The dough will be sticky, but spread it out the best you can. 
  4. Toss sliced apples with 2 tsp. lemon juice and arrange over the top of the batter. 
Crumb Topping: 
  • 3/4 c. packed brown sugar
  • 1/3 c. flour
  • 3T. unsalted butter
  • 1 tsp. ground cinnamon. 
  1. In a small bowl combine all crumb ingredients. Mix together till crumbly.
  2. Place crumb topping over the apples.
  3. Cover and allow to rise in a warm place till nearly double (about 45 to 50 minutes.)
  4. Bake at 375 degrees for about 30 minutes.  Cool for 10 minutes.
  5. Invert onto plates and drizzle with lemon icing.

finnish apple tart

saya tertanya2.. kenapa set2 eropah punya tart dos not look like tart?
its more like a cake! takdak pastry base pun!
swedish apple tart macam tu.. finnish mcm tu..
tapi ahkak suka ja.. sebab cepat siap! hehe..

pagi tadi kalut (as usual :p) buat utk teman2 di kantor
niat asal nak kongsi sama dgn teman2 usrah juga..
tapi skali hadap licin ngko! hehe..

lama menyusun spiral sampai tak sempat buat kuah!

  • 2 large, free-range eggs
  • 100g raw caster sugar <-- reduce to 80g
  • 120g whole spelt flour <-- i use 60g plain flour + 60g wholemeal flour
  • 1 teaspoon baking powder
  • 75ml milk
  • 50ml olive oil
  • 2 apples, cut in half and thinly sliced
  • 1-2 teaspoons ground cinnamon
  • 1-2 teaspoons rapadura sugar <-- i use brown sugar
  1. Preheat the oven to 200C and grease a round 26 cm pie dish (i use 24cm).
  2. Beat the eggs and the sugar until light and fluffy.
  3. Combine the flour and the baking powder in a bowl. Sift the flour into the egg mixture and fold to combine.
  4. Fold in the milk and the oil and pour the dough into the pie dish.
  5. Arrange the apple slices on top of the dough and sprinkle with ground cinnamon and rapadura sugar. 
  6. Bake for 20-25 minutes or until a skewer inserted in the middle comes out clean. Leave to cool on a wire rack.
nota:
resepi asal ada vanilla sauce tapi tak sempat nak buat. kalut siapkan tomyam pulak utk anak2 lunch nanti. selalu sangat masak dalam keadaan kelamkabut.. itu yg serba tak lengkap.. huhuhu..

verdict:
the base/ cake langsung tak manis.. tak taklah tawar heber.. bak kata omputih, just nice. manis gula yg tabur kat atas tu ja.. lovely for breakfast :)
alhamdulillahi 'ala kulli haal..

apple and strawberry oat crumble

assalamu'alaikum wrm wbt

i feel a sudden urge to eat fruit crumble
ok. i lied. i have both fruits: apple & strawberry in fridge
both are crying for help to save them from ageing
but oh my butter.. where have they gone???
there are less than 3/4cups of butter (abt 180gm)
and i found loads of oats that is pass due date
ting! thats when the oat crumble idea came.

scrummy + healthy = happy :)

For Topping
  • 2 cups rolled oats
  • 1½ cups all-purpose flour
  • 1⅓ cups light brown sugar, packed
  • ½ teaspoon salt
  • ¾ cup (1½ sticks) unsalted butter, melted
For Fruit Filling
  • 8 large baking apples, peeled, cored and sliced ¼-inch thick
  • 2 cups (8 ounces) cranberries, fresh or frozen <- i used fresh strawberries
  • 1⅓ cups granulated sugar <-- i reduced sugar to 1/3C for half recipe
  • 2 tablespoons cornstarch
  • 2 teaspoons ground cinnamon

1. Preheat oven to 375 degrees. Butter a 3-quart baking dish.
2. To make the topping, mix the oats, flour, brown sugar and salt together in a bowl. Stir in the melted butter, then press the topping together with your hands to form small clumps. Put the topping in the freezer while you assemble the filling.
3. To make the fruit filling, toss the apples, cranberries, sugar, cornstarch and cinnamon together in a large bowl. Transfer the filling to the prepared pan and spread it out, pressing the fruit down into the corners.
4. Press the oat crumble evenly over the fruit, then bake for 60-70 minutes, or until the crumble is lightly golden and the filling is bubbling up in the corners. Cool for about 20 minutes to temper the heat before serving, then top with vanilla ice cream or sweetened whipped cream.
Storage: This crumble is best served the day it is made, but any leftovers can be wrapped in plastic wrap and kept at room temperature for 2 to 3 days. Reheat in a 300 degree oven for 10-15 minutes, until warm.

apple yeast sugar tart

apple yeast sugar tart ni sebijik macam roti yg taruk apple kat atas
ada sahabat usrah kata macam potato bread
does not fit the tart name except for using tart pan..
alahai.. siapalah saya nak mempertikaikan resepi yg dicedok??
yg pasti ramai yg kenyang dengan apple tart yg lembut ni. alhamdulillah...

  • 1 ¾ cups (245g) all purpose flour, sifted
  • pinch of salt
  • 1 tablespoon caster sugar
  • 1 teaspoon instant yeast
  • 1 egg
  • ½ cup (120ml) warm whole milk
  • 2 tablespoons (28g) softened unsalted butter
  • 2-3 eating apples – I used Gala apples
  • 1/3 cup (67g) demerara sugar <-- i used brown sugar
  • ½ cup (120ml) thick cream*


  1. Place flour, salt, sugar and yeast into a bowl. Whisk egg with milk and mix into flour mixture. Work in butter and knead to a smooth, thick batter – I used my Kitchen Aid with the hook attachment. Place in a buttered bowl and turn to coat. Cover with plastic wrap and leave to rise in a draught-free place for 30 minutes. 
  2. Knock back dough, then press it into a 22cm buttered pie plate or loose-bottomed flan pan, cover with plastic and allow to recover for 30 minutes (it will have puffed slightly).
  3. Preheat oven to 225°C/437°F. 
  4. Peel apples, cored them and cut into eighths. Press apple slices into the dough, and sprinkle with the demerara sugar. Place pie plate/flan pan on a baking sheet. 
  5. Bake for 10 minutes, then reduce heat to 200°C/395°F. 
  6. Spoon cream over apples and bake for 20 minutes. The top should be slightly caramelized and the tart light and spongy. Eat warm.
* I used heavy cream and whipped it to soft peaks before pouring

german apple bundt cake

german apple bundt cake
  • 2 eggs
  • 1⁄2 cup canola oil / olive oil
  • 1 cup brown sugar
  • 1⁄2 cup white sugar
  • 1 teaspoon vanilla essence
  • 1 teaspoon ground cinnamon
  • 1⁄2 teaspoon salt
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 4 cups apple – peeled, cored and diced
  1. Preheat oven to 180°C / 350°F. Grease and flour one 9×13 inch pan, or a 10-inch bundt pan.
  2. In a mixing bowl, beat oil and eggs together until creamy. Add the sugar and vanilla and beat well.
  3. In a separate bowl, combine the flour, salt, baking soda, and ground cinnamon. Add this mixture to the egg mixture, and mix until combined. The batter will be very thick.
  4. Fold in the apples. Spread batter into the prepared pan.
  5. Bake for about 45 mins (55 mins, if you’re using a bundt pan), or until cake tests done.
  6. Leave cake to cool before dusting with powdered sugar, or pouring a glaze.

    homemade apple chips

    bismillahirrahmaanirraheem..
    assalamu'alaikum wrm wbt,

    this apple chips is the most healthiest snacks i've ever eaten
    and the most easiest snacks to be done!
    you just need an apple a day keeps the doctor away
    a mandolin or a slicer
    and brown sugar + cinnamon powder
    the only critical thing is time: you need to wait 2 hours to enjoy it!
    but its worth the waiting time.. insyaallah..

    homemade apple chips

    • 1 green apple
    • 2tbs brown sugar
    • 1tbs cinnamon
    1. preheat the oven to 107-110C.
    2. slice the apples as thin as you can <-- i think i need to invest on mandolin. my plastic-pasar-malam mandolin is killing me with frustation!
    3. mix the sugar + cinnamon. dip the apple slice lightly in the mixture.
    4. Lay the slices on the baking sheets, about 12 slices per sheet.  
    5. Bake for 1 hour.  Remove one pan at a time and flip the apple slices over with tongs.  When you return pans to oven, also rotate them - put the one that was on the top rack on the bottom.  Bake for one more hour.  Remove pans from oven. Apple slices will start to harden up pretty quickly. Remove with tongs.  
    the result of thick coating = huduh bangat!
    but still very crispy :)

    swiss apple pie

    i made this as buah tangan balik kampung

    for the recipe and for the apples!
    i'll be forever indebted to you..

    • 2 cups Granny Smith apples (cubed)
    • 1 cup  flour
    • 1 cup brown sugar <-- ikut suggestion k.shidah, i reduce to 3/4cup
    • 1tsp baking powder
    • 2 large eggs
    • 1/2 cup walnuts
    • 1tsp vanilla extract
    • 1/8tsp salt
    1. Just mix the dry ingredients first ie flour, baking powder, salt with a whish. 
    2. Then, in a different bowl, whisk eggs, brown sugar and vanilla until combine, slowly add the dry ingredients.
    3. Last, fold in apples and walnut. 
    4. Pour the batter in a greased and floured pie dish.
    5. Bake for 30minutes or until a skewer inserted comes out clean.

    bolognese polenta and apple cake jamie oliver

    dalam mencari resepi yg menggunakan polenta
    terjumpa resepi pakcik jamie ni..
    teruja nak buat bila ditulis "its a bit like clafoutis"
    kalau dalam resepi melayu, lebih kurang bengkang la tu :p
    boleh bawak kerumah mak nanti.. :)

    hmm.. kenapa dinamakan bolognese ya?
    resepi ni berasal dari bologna kot?

    bahan2:
    • 100g polenta
    • 200g tepung, diayak
    • 100g breadcrumbs
    • 100g gula caster <-- saya letak 80g shj
    • 500mk susu fullfat <-- ada stok fresh milk shj
    • 3biji telur, dipukul sedikit
    • 100g madu
    • 55ml olive oil
    • 100g buah tin kering
    • 100g kismis
    • 500g buah apple, dibuang kulit dan dipotong kecil
    • 1/2sdk serbuk cinnamon
    • parutan kulit oren dan lemon <-- nehi! lupa yg ini!!!
    • 1sdk garam
    bukan lapar dah ni.. macam org kebuluran ja gayanya!

    tatacara:
    1. panaskan oven 180C dan gris loyang springform 11inci (saya guna 9inci + 6cavity muffin pan).
    2. satukan bahan2 kering: polenta, tepung, breadcrumbs dan gula. 
    3. dalam mangkuk berasingan, satukan bahan2 basah: susu, telur, madu dan olive oil. masukkan bahan basah kedalam bahan kering dan gaul hingga betul2 sebati.
    4. masukkan buah2: buah tin, kismis dan apple serta serbuk cinnamon, parutan oren dan lemon dan garam. gaul sebati.
    5. tuang kedalam loyang dan bakar selama 50minit. mungkin perlu ditutup dengan aluminium foil ketika hampir masak.
    verdict:
    memang macam clafoutis! tak rasa sangat the grains of polenta & breadcrumbs.
    plus.. agak tawar.. kalau makan dgn cream fraiche mcm jamie kata sure lagi menarik!
    bila makan gitu ja rasa macam bengkang buah epal yang kurang lemak :p


    "the polenta" yg dibeli di cold storage. rm9.90 rasanya..

      apple, apricot and walnut quickbread

      i shall call this cake a 2am cake!
      brg2 dah keluarkan sebelum 10pm
      tapi pembuatannya dilaksanakan pada jam 2pagi!
      ok ok.. no big deal.. others who take orders also bake at wee hours
      but am not taking orders.. just doing it out of excitement to feed my officemates

      am really happy to see them munching the cake.. to their heart content
      haha.. ayat yg sgt over! :p
      but i think my boss really like it..
      he kept coming to the pantry looking for it.
      how do you feel when ppl like what you've prepared?
      happy-ness.. hilang rasa mengantuk dek tak cukup tidur :)

      bahan2:
      • 225g tepung wholemeal
      • 1sdk baking powder
      • secubit garam
      • 175g gula perang <-- saya kurangkan ke 150g
      • 115g marjerin sunflower, lembut, pada suhu bilik
      • 2biji telur, dipukul sedikit
      • sebiji oren, diparut kulitnya dan diambil jusnya ~ 50ml
      • 1biji apple, dipotong dadu kecil
      • 50g apricot kering, dipotong kecil
      • 50g walnut, dipotong kecil
      tatacara:
      1. panaskan oven 180C dan lapik loyang gris paper atau grease & tabur tepung pada loaf pan 9X5inci.
      2. ayak tepung wholemeal, baking powder dan garam. tuang sisa2 wholemeal kedalam mangkuk tepung tadi. masukkan gula, marjerin, telur serta jus dan kulit oren. pukul menggunakan mixer. (saya pukul guna senduk je. hand mixer dah sedekah kat adik).
      3. masukkan apricot, apple dan walnut dan gaul sebati.
      4. tuangkan kedalam loyang dan bakar selama 1jam.



      hmm.. do you think this cake is healthy?
      100% wholemeal flour + fruits = healthy?

        nigella's apple and date cake

        siang tadi kak shidah bagi rasa kek ni..
        sangat sedaps! delisioso!
        balik rumah tgk cik abe ada beli apple
        kurma medjoul yg beli masa cut down price di cold storage ada sikit lagi
        bila dibuang biji dan dipotong kecil, 9biji dapat 1cawan!
        apalagi.. terus jalankan operasi memproses kek ni..
        dgn niat utk adik ipar yg sedang menunggu hari nun di kb..

        masa tengah rendam kurma & apple.. terasa macam deja vu..
        apsal rasa mcm pernah buat benda ni sblm ni? atau pernah mimpikah??
        sampai dah nak lelap mata.. aih.. tak boleh jadi nih.. sgt mengganggu emosi!
        terus bukak laptop.. belek blog sendiri..
        maka terjawablah punca kegawatan perasaan sendiri
        memang pernah buat sebelum ni cuma namanya lain!
        dan kali ni pulak buat tanpa topping.. sah2 rupanya lain..

        takpalah.. tempek jugak resepi disini.. sebab ada jugak kelainannya..
        resepi kali ni takdak baking powder & garam dan telur cuma 1biji
        lagi satu.. yg ni guna butter instead of vege.oil

        bahan2:
        • 2biji apple hijau - buang kulit dan potong dadu
        • 1cwn kurma - buang biji dan potong dadu
        • 1sdk baking soda
        • 1cwn air panas mendidih 
        • 125g butter (kalau guna unsalted butter sila tambah secubit dua garam)
        • 1cwn gula <-- saya ikut nasihat k.shidah, kurangkan ke 3/4cwn
        • 1biji telur
        • 1sdk esen vanilla
        • 1 1/2cwn tepung, diayak
        tatacara:
        1. panaskan oven 180C dan gris loyang springform 9inci (saya guna loaf pan kecil + silicon mould)
        2. masukkan apple, kurma dan baking soda kedalam mangkuk. tuang air panas mendidih dan biar sejuk pada suhu bilik.
        3. pukul butter dan gula hingga gebu. masukkan telur dan esen vanilla.
        4. ayak tepung dan masukkan tepung secara selang seli dengan adunan buah2 tadi kedalam mixer (butter+gula).
        5. tuang kedalam loyang dan bakar selama 40-45minit.

        apple bread pudding

        puding ni buat makan petang semalam..
        makan berdua dengan abah..

        • 4 slices low-sodium bread
        • 1/4 cup low-sodium corn oil margarine
        • 2 apples, peeled, cored, and chopped
        • Egg substitute equivalent to 2 eggs <-- i just use 2eggs
        • 1/4 cup sugar <-- i use molasses sugar
        • 1 cup evaporated skim milk, undiluted
        • 1 cup boiling water
        • 1 teaspoon vanilla extract
        • 1/4 cup sugar <-- i use brown sugar
        • 1 teaspoon ground cinnamon
        • few pcs of raisins <-- optional
        1. Spread bread with margarine and toast in oven.
        2. Cut into cubes and place in an 8 x 8-inch baking pan greased with margarine.
        3. Add apples.
        4. Mix egg substitute, 1/4 cup sugar, milk, and water in a separate bowl.
        5. Pour mixture over apples and let set 10 minutes.
        6. Stir in vanilla.
        7. Combine sugar and cinnamon, and sprinkle over the top. sprinkle raisins on top as well.
        8. Bake in a preheated 350°F (160C) oven 40 minutes or until knife inserted in center comes out clean.
        verdict:
        tak manis langsung. 1st time masuk mulut.. rasa mcm tawaq hebiaq sgt
        tapi abah kata dah ok. so, to satisfy my sweet-tooth.. i add-on butterscotch sauce.
        pagi tadi makan as brunch.. dah rasa cukup manis la pulak :p
        mm.. mmg lebih sedap dimakan bila sejuk & dah keras skett..

        bahan2:
        • 2cwn apple, buang kulit dan sagat <-- lebih kurang 3-4biji
        • 1 1/2cwn tepung <-- lagi healthy kalau substitute separuh tepung dengan wholemeal flour
        • 1cwn quick cooking oat <-- quaker oat plastik merah
        • 2/3cwn gula perang <-- saya letak 1/2cwn saja
        • 1 1/2sdk baking powder
        • 1/2sdk baking soda
        • 1/2sdk serbuk cinnamon <-- saya letak 1sdk
        • 1/4cwn fat-free milk <-- saya guna susu low-fat
        • 2tbs minyak jagung
        • 1sdk vanilla
        • 1/2cwn plain fat-free yogurt <-- guna 1cwn low fat yogurt
        • 1/2cwn fat-free sour cream <-- tak letak
        • 2biji telur putih <-- saya guna sebiji telur kecil
        tatacara:
        1. panaskan oven 200C dan sediakan muffin cup.
        2. sebatikan bahan2 kering dalam mangkuk besar: tepung, oat, gula, bp, bs dan serbuk cinnamon.
        3. gaul bahan2 basah dalam mangkuk berasingan: susu, minyak, vanilla, telur dan yogurt.
        4. kaupbalikkan bahan basah kedalam mangkuk bahan kering.
        5. masukkan apple yang dah disagat (tapis lebihan air) dan kaupbalik hingga adunan sebati.
        6. masukkan kedalam muffin cup. 
        7. sediakan streusel topping. tabur atas adunan muffins dan bakar 20-25minit.


        sterusel topping:
        • 45g butter sejuk, dipotong kecil
        • 1/2cwn tepung
        • 1/4cwn gula perang
        • chopped nuts (optional)
        1. gaul sebati gula dan tepung (dan kacang; kalau ada).
        2. ramas butter sejuk kedalam adunan hingga terbentuk seperti breadcrumbs.
        nota:
        saya buat dalam muffins case yg besar gedabak.. 
        20min tak cukup! kena tambah jadik 30min rasanya..
        dapat dalam 8bijik je..
        kalau muffin cup yg stended tu.. insyaallah bleh dpt 14 bijik.

        verdict:
        saya makan seketul je.. memang kenyang!
        tapi sedihla.. sebab tak masak betul..
        silap sendiri.. tak cucuk lidi sblm tapau ke opis
        rasa mcm nak beli oven letak kat opis je!
        kalau ada yg underbake.. boleh continue bakar
        takpun.. siapkan batter kat rumah.. bakar kat office..
        nak buat quiche pun boleh..
        walla.. takyah susah2 ke cafe, brunch is ready!
        haish.. berangan tak sudah!
        kena halau keluar opis baru tau :p

        lumberjack cake

        thank you mr.internet.. thank you ms.worldwideweb.. thank you google-sir..
        without you.. i would never come across the ever luscious red velvet cake..
        without you.. i would never know lumberjack does exist in a CAKE-form!

        apa yang saya tahu selama ni..
        lumberjack ni.. term utk orang yg kerja 'logging'
        zaman dulukala.. tatkala me'logging' guna kapak..
        (terus terbayang matsaleh pakai baju kotak2 dgn jeans bawak kapak panjang)

        anyway, back to the cake..
        (which i couldnt find the source of history)
        i made this cake out of curiosity - of the taste of course
        (its fully loaded with fruits & topped with coconut mixture)
        and for the farewell party one of the lecturers..
        who has worked as hard as the lumberjack!

        bahan2:
        cake
        • 2biji apple, kupas kulit dan potong dadu
        • 1cwn kurma, buang biji dan potong kecil <-- kurma saya cukup 1/2cwn saja
        • 1/2cwn apricot kering <-- optional. saya letak jugak
        • 1sdk baking soda
        • 3/4cwn air panas mendidih
        • 1cwn gula <-- saya guna 1/2cwn gula perang + 1/2cwn gula castor (reduce 1sdb each)
        • 1cwn minyak jagung
        • 2biji telur
        • 1sdk esen vanilla
        • 1 1/2cwn tepung
        • 1sdk baking powder
        • 1/2sdk garam
        topping
        • 60g butter
        • 1/2cwn gula perang
        • 1/2cwn susu
        • 1sdk esen vanilla
        • 1/2cwn shredded coconut <-- saya guna 1cwn dessicated coconut
        tatacara:
        1. panaskan oven 180C dan gris loyang springform 9inci.
        2. potong dadu/ kecil buah apple, kurma dan apricot. masukkan buah2 kedalam air panas dan masukkan soda. didihkan semula air.. tutup api setelah mendidih dan biar sejuk pada suhu bilik.
        3. pukul minyak, gula dan telur dalam mixer hingga kembang (dalam 3minit). masukkan esen vanilla.
        4. masukkan adunan buah tadi dan kaupbalikkan hingga sebati.
        5. ayak tepung, baking powder dan garam kedalam adunan dan kaupbalik hingga sebati.
        6. tuang kedalam loyang dan bakar 40-45minit.
        7. sementara kek masak, buat topping dulu: masukkan butter, gula, susu dan vanilla kedalam periuk kecil dan masak atas api kecil hingga butter cair dan gula sebati. masukkan coconut dan gaul sebati. tutup api.
        8. setelah kek masak, keluarkan kek dari oven dan ratakan topping keatas permukaan kek dan bakar lagi 20-30minit atau hingga keperangan.
        9. sisipkan pisau pada keliling kek dan buka springform pan perlahan2. 
        10. sejukkan kek pada suhu bilik sebelum dipotong.
        update:
        i got to taste just a bite..
        wow! its moist & flavorful!
        the tart-ness of the apples is covered by the sweetness of the dates
        and the crunchiness of the topping makes it outstanding!
        no wonder the lecturers literally licking their plate (ayat yg sgt over :p)

        whole wheat apple muffins

        masih ramai tamu dirumah.. so..
        cik abe belikan nasik lemak (restoran) taqwa for breakfast
        and i made the side dish = apple muffins!
        macam tak ngamm je kan?
        :p

        teringat nak buat muffins ni sebab ada baki apple,
        yang dah di'sauteed' dengan cinnamon & brown sugar
        belen buat apple puff pastry last weekend..

        bahan2:

        • 1cwn tepung whole wheat 
        • 1cwn tepung gandum
        • 1sdk baking powder
        • 1sdk baking soda
        • 1/4sdk garam <-- saya letak secubit je
        • 1tbs serbuk cinnamon
        • 1/2cwn atau 4oz gula castor
        • 1/2cwn gula perang, bahagi 2
        • 1 biji telur
        • 1cwn buttermilk atau plain yogurt
        • 2biji apple, dipotong dadu
        • dried kiw, potong kecil2 <-- saja tambah ;)
        tatacara:
        1. panaskan oven 210C dan gris loyang muffins/ lapik kertas cawan.
        2. sebatikan bahan2 kering, ketepikan dulu.
        3. pukul butter, gula castor dan 1/4cwn gula perang hingga gebu (dalam 3-5minit). 
        4. masukkan telur. pukul sebati. masukkan yogurt. pukul perlahan2.
        5. kaupbalikkan adunan kering kedalam adunan butter.
        6. masukkan apple. gaul sebati.
        7. cedok adunan kedalam loyang. tabur baki gula perang keatas muffins.
        8. bakar 10minit dan kemudian turunkan ke suhu 200C dan sambung bakar lagi 5-10minit.
        verdict:
        whole wheat flour + apple + yogurt = i feel healthy!

        apple puff pastry

        ramai tetamu kat rumah tadi..
        rasa seronok nak baking anything!
        lagi seronok bila tengok semua pun licin!

        apple puff pastry ni sangat simple
        guna pastry segera tajuk kawan
        inti dari internet tapi lupa sumbernya :(

        bahan2:
        • puff pastry tajuk kawan
        • 4biji apple hijau
        • 1/4cwn butter <-- elok kalau dikurangkan ni..
        • 1/2cwn gula perang
        • 2sdk cinnamon powder
        • dash of allspices
        • 1sdk tepung jagung
        • 1biji telur - egg wash

        tatacara:
        1. defrost pastry. panaskan oven 190C (fan-force) dan lapik dulang bakar dengan kertas.
        2. kupas kulit dan potong dadu apple hijau.
        3. panaskan butter dalam skillet/ pan dan masukkan gula perang, cinnamon dan allspices.
        4. masukkan apples dan gaul sebati hingga apple lembut.
        5. masukkan tepung jagung dan gaul hingga agak likat.
        6. sudukan adunan apple keatas pastry dan lipat & tekan keliling dengan garfu.
        7. sapukan egg-wash keatas pastry.
        8. bakar selama 20-25minit.
        nota:
        adunan filling tu cukup (dan mungkin lebih) utk 20 keping pastry "kawan".

        boss fav apple cake

        the secetary ordered kak ainon's quiche for dept. meeting
        takut muak makan quiche.. she asked me to bring apple cake
        when the meeting is done.. boss says "i really like this cake!"
        i suppose he had more than 3 slices :p

        bahan2:
        • 3/4cwn chopped walnut
        • 1pound apple hijau (lebih kurang 5biji)
        • 1-2sdb lemon jus <-- utk rendam apple (rasanya guna air bergaram pun boleh)
        • 1 1/2cwn tepung
        • 3/4cwn gula
        • 1 1/2sdk baking powder
        • 1sdk cinnamon
        • 1/4sdk garam <-- kalau guna butter bergaram, kurangkan ke 1/8 atau secubit
        • 85g unsalter butter, dicairkan dan disejukkan ke suhu bilik
        • 2biji telur
        • 1/2sdk esen vanilla
        • 1/3cwn kismis hitam
        • 2sdb susu
        tatacara:
        1. panaskan oven ke 180C dan gris loyang 8inci 4segi dan lapik dasar loyang dengan kertas.
        2. tabur walnut atas baking sheet dan bakar 8-10minit.
        3. kupas kulit apple dan potong dadu. rendam dalam air lemon jus. ketepikan dulu.
        4. dalam mixer atau mangkuk besar, masukkan tepung, gula, baking powder, serbuk cinnamon dan garam. gaul sebati.
        5. masukkan butter, telur dan esen vanilla. gaul sebati.
        6. masukkan apple (tapis dulu lebihan air lemon), walnut dan kismis.
        7. kalau rasa adunan agak pekat, tambah 2sdb susu (saya tambah 1sdb).
        8. tuang kedalam loyang dan bakar selama 35-45minit.
        nota:
        boleh disapu glaze (aprikot glaze ada jual di bagus) pada permukaan kek.
        saya cuma tabur gula aising.

        omenakakku

        the name is so very cute!
        meaning: apple cake (bahasa finnish)

        • 100g butter (soft)
        • 2/3cup caster sugar
        • 1egg, beaten
        • 1 2/3cups plain flour
        • 2tsp baking powder
        • 1/2tsp cinnamon powder <-- i added
        • 2/3cup sour cream
        • 2 dessert apples
        1. Whisk the butter and sugar until light and fluffy.
        2. Add the egg and mix until a smooth batter is formed.
        3. Combine the flour, bp and cinnamon.
        4. Add flour mixture and sour cream into the batter. Don’t over mix!
        5. Peel, core and slice the apples.
        6. Pour the batter into a cake tin and submerge the apple slices.
        7. Sprinkle with a little sugar and bake in a 170oC oven for 45 mins – 1 hour.  <-- i use muffin pan and bake 35mins.
        verdict:
        lembut weh kek nih!!

        note:
        i sprinkled the sliced apples with cinnamon+sugar.

        another adjustment: sprinkle cinnamon+brown sugar+almond nibs & grill 5mins

        apple & raisin oatmeal quickbread

        rolled oats dah overdue!! yelp!!!
        this is the 2nd time..
        i buy rolled oats..
        and waited until overdue
        baru nak guna
        apa punya orang!

        konon2 nak buat oat&raisin cookies utk hari raya
        tapi semangat tak datang2!
        yep.. i bake when am in the mood only :p

        so.. this recipe is so in my mood yesterday (konon2)
        just because of the overdue rolled oats (rasa bersalah la tu)

        sumber: one perfect bite
        bahan2:
        • 1-1/2 cups flour
        • 2 teaspoons baking powder
        • 1/4 teaspoon baking soda
        • 1 teaspoon salt
        • 2 teaspoons ground cinnamon
        • 1/4 teaspoon ground nutmeg
        • 2/3 cup brown sugar
        • 1 cup rolled oats
        • 1-1/2 cups grated apple <-- i use 3 small apples
        • 1/4 cup raisins
        • 2 large eggs
        • 1/4 cup whole milk
        • 1/4 cup vegetable oil
        tatacara:
        1. preheat oven 170C & grease 8x4 loaf pan.
        2. dalam mangkuk sedang, whisk semua bahan kering (dari tepung hingga rolled oats). 
        3. add raisins & apples with eggs, milk & oil. <-- bahan basah.
        4. combine bahan basah kedalam bahan kering dan gaul sebati.
        5. tuang dalam loyang dan bakar 55-60min.

        verdict:
        i feel healthy eating this quickbread!
        semata2 sebab ada apple & oats :p

        eh! kalau tabur sunflower seeds sure lagi healthy-feeling kan?
