buttermilk cornbread

bismillahirrahmaanirraheem..
assalamu'alaikum wrm wbt,


i have mentioned thousand times (ayat over :p) that i luurrrrve buttermilk
and how buttermilk does wonder to cakes & bakes
kelembutan, kenikmatan dan kesedapan yg dijamin menggemukkan! hehe..

so plain but oh-so-yummy!

buttermilk cornbread

Bowl 1
  • 2 eggs
  • 1 c. butter (melted) <-- abt 227g
  • 2/3 c. sugar
  • 1 c. buttermilk <-- 1Tbs vinegar + 1C milk
  • ½ t. baking soda
Bowl 2
  • 1 c. corn meal
  • 1 c. flour
  • ½ t. salt
  • 1tbs honey <-- cant help myself to add this on :D
  1. Combine all together. Spray an 8X8 pan. Bake at 375 degrees for 30 minutes. <-- you can mix eveything in blender of food processor.
verdict:
the sweetness is just nice.. even tho i had added the honey. 1Tbs does not affect the taste i guess..
i brought a jar of marmalade (just in case the taste is too bland) to office and most of my friend makan begitu saja.. dah cukup sedap kot? :D

    lemon polenta cake

    saya buat kek ni utk bawak p rumah makcik
    waduh.. kek ni mudah terbarai & berderai!
    no wonder notquitenigella buat dlm muffins pan
    awat tak habaq kat cek??? huhuhu..


    • 225g/7 1/8 oz butter at room temperature
    • 225g/7 1/8 oz caster or superfine sugar
    • 3 eggs (165g/5 1.2 oz) lightly beaten
    • 110g /3 3/4oz ground almond
    • 110g /3 3/4oz shredded coconut long thread
    • 110g /3 3/4oz fine polenta
    • finely grated zest of 2 lemon
    • 2.5 tablespoons lemon juice
    • 1 teaspoon baking powder
    • 1 teaspoon vanilla bean paste or extract
    Icing
    • 225g/ 71/8oz icing confectioner’s sugar, sieved
    • 2-3 teaspoons lemon juice
    • Sugar flowers to decorate (optional)
    1. Set the oven to 150c/300F. If making this as a large cake grease and line a 24cm (9.5 inch) round cake tin or if you are using mini muffin trays, butter them well and place a little square or circle of parchment on the base as shown to prevent any sticking. Cream the butter and sugar in an electric mixer for 2 minutes or until lump free (the mixture does not need to be light and fluffy). Slowly beat in the eggs, the fold in the ground almonds, polenta, lemon zest, lemon juice, baking powder and vanilla.
    2. Pour into cake tin. If you are using a mini muffin tray fill them 2/3 of the way up. Use the back of a spoon to flatten the top. Bake for 20-25 minutes for mini muffins or 30-50 minutes for a whole cake until they are just coming away from the side of the tin. Remove the squares of parchment.
    3. To make the icing, mix the sieved icing sugar and lemon juice in a bowl until smooth. Spoon over the cake/s letting the icing dribble down the sides a bit. Leave the icing to set.

    verdict:
    mula2 masuk mulut terimbau kenangan makan candy yg mamak roti juai
    cuma kek ni kurang padat mcm candy tu.. 
    dan mamak roti x penah jual candy perasa lemon 

    saya buat dalam 2 loyang kecik bersaiz 6inci
    satu loyang bagi kat makcik, satu lagi saya makan seniri ja..
    nak angkut mai opis tak gamak lak sbb asik hancus bila dipotong :(

    krissy's best ever corn muffins

    cornmeal yg beli sebulan (ke.. 2bulan?) yang lalu masih berbaki
    maka mula operasi mencari resepi cornbread atau corn muffins..
    jumpa dalam allrecipes.. tengok comments banyak positive..
    boleh cuba buat.. bagi utk luqman & kawan2 makan masa wrap-up, insyaallah!

    • 1/2 cup butter, softened
    • 2/3 cup white sugar
    • 1/4 cup honey
    • 2 eggs
    • 1/2 teaspoon salt
    • 1 1/2 cups all-purpose flour
    • 3/4 cup yellow cornmeal
    • 1/2 teaspoon baking powder
    • 1/2 cup milk
    • 3/4 cup frozen corn kernels, thawed
    1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 12 cup muffin pan.
    2. In a large bowl, cream together the butter and sugar. Beat in the honey, eggs and salt. Mix in flour, cornmeal and baking powder. Stir in milk until batter is smooth. Fold in corn. Spoon into prepared muffin cups.
    3. Bake in preheated oven for 20 to 25 minutes, or until tops of muffins are lightly browned.

    the sweetness is just rite with the cornish taste..
    oh! so yummm!!!

    southwest cornbread

    i dream of making this cornbread last nite
    niat asal nk buat malamnya but am dead tired.. i need my rest.
    so, this morning after sending kids off at the door i hit the kitchen
    and the rest is history :)

    bahan2:
    • 15strips bacon (optional) <-- i skipped it. tak pernah beli pun!
    • 1 1/4cwn all purpose atau bread flour (156g) <-- saya guna half half
    • 1sdk baking powder
    • 1/4cwn gula
    • 1/4sdk garam
    • 3/4cwn cornmeal
    • 2biji telur
    • 1/4cwn minyak sayur
    • 1/2cwn susu 
    • 3sdb maple syrup atau madu <-- saya guna madu
    • 1/2cwn jagung frozen
    • 1cwn grated cheddar cheese
    tatacara:
    1. panaskan oven 180C. gris dan tepungkan loyang bulat 9inci atau muffins pan (saya guna loyang muffin & lapik papercup).
    2. ayak tepung bersama baking powder, gula, garam dan cornmeal. ketepikan dulu.
    3. dalam mangkuk besar, pukul bersama telur, minyak, susu dan madu.
    4. masukkan bahan kering kedalam adunan telur dan gaul hingga betul2 sebati.
    5. kaupbalikkan jagung frozen dan cheese (dan bacon yg dah di masak - kalau guna).
    6. tuang adunan kedalam loyang dan hias dengan cheese atau jagung atau roasted bell-peppers.
    7. bakar selama 20-25minit atau sehingga kepereangan di bahagian atas.
    tis is my sunshine. hehe..

    verdict:
    am falling in love with this cornbread!!
    its not sweet but not the savory type also..(sebab tak letak bacon) 
    sedang-sedang enak rasanya.. me likey! makan 3ketul skali hadap.
    next time nk try buat dlm 9inch pan. if only i have skillet yg boleh masuk oven.. cool!
    some is sprinkled with mozarella, some with parmesan.. and some with bell peppers.
    ambo make belake :D

    kenny roger's corn muffins

    saya jumpa resepi ni dalam 1001resepi
    dah lama peram sebab tak sempat nk pergi beli jagung frozen
    last weekend cik abe dah tlg belikan.. :)
    pagi ni buat sebagai bekalan anak dara kesekolah..
    tapi anak dara tu tak makan pun!
    seronok nak bagi kawan2 ja..
    sebelum ni dia sibuk nak jual2
    tapi cikgu dah tak bagi jual.. sedih dia..
    takpa.. ummi buatkan dan kakak sedekah aja..
    moga lebih afdhal begitu.. insyaallah..


    lembut tapi crunchy thanks to the cornmeal ;)

    bahan-bahannya:
    • 1/2 cawan butter*
    •  2/3 cawan gula halus*
    • 1/4 cawan honey*
    •  2 biji telur*
    • 1/2 sudu kecil garam*
    • 1 1/2 cawan all purpose flour, ayak
    • 1/2 sudu teh baking powder, ayak
    •  3/4 cawan yellow cornmeal
    • 1/2 cawan susu
    1. pukul bahan diatas bertanda * hingga creamy
    2. kemudian masukkan: all purpose flour & baking powder dan yellow cornmeal (gaul rata)
    3. masukkan berselang seli dengan 1/2 cawan susu....gaul sebati.
    4. akhir sekali masukkan 3/4 cawan frozen corn...
    5. gaul rata dan sudukan kedalam muffin cups dan bakar pada suhu 180C selama 25 ke 30 minit atau hingga keperangan...hidang panas...hmmm...sedappp...
    nota: 
    saya bakar 25minit ja. tak cukup perang tp mmg dah cukup masak. 
    sgt kalut pagi tadi!!! keluar oven terus masuk tupperware.

    bolognese polenta and apple cake jamie oliver

    dalam mencari resepi yg menggunakan polenta
    terjumpa resepi pakcik jamie ni..
    teruja nak buat bila ditulis "its a bit like clafoutis"
    kalau dalam resepi melayu, lebih kurang bengkang la tu :p
    boleh bawak kerumah mak nanti.. :)

    hmm.. kenapa dinamakan bolognese ya?
    resepi ni berasal dari bologna kot?

    bahan2:
    • 100g polenta
    • 200g tepung, diayak
    • 100g breadcrumbs
    • 100g gula caster <-- saya letak 80g shj
    • 500mk susu fullfat <-- ada stok fresh milk shj
    • 3biji telur, dipukul sedikit
    • 100g madu
    • 55ml olive oil
    • 100g buah tin kering
    • 100g kismis
    • 500g buah apple, dibuang kulit dan dipotong kecil
    • 1/2sdk serbuk cinnamon
    • parutan kulit oren dan lemon <-- nehi! lupa yg ini!!!
    • 1sdk garam
    bukan lapar dah ni.. macam org kebuluran ja gayanya!

    tatacara:
    1. panaskan oven 180C dan gris loyang springform 11inci (saya guna 9inci + 6cavity muffin pan).
    2. satukan bahan2 kering: polenta, tepung, breadcrumbs dan gula. 
    3. dalam mangkuk berasingan, satukan bahan2 basah: susu, telur, madu dan olive oil. masukkan bahan basah kedalam bahan kering dan gaul hingga betul2 sebati.
    4. masukkan buah2: buah tin, kismis dan apple serta serbuk cinnamon, parutan oren dan lemon dan garam. gaul sebati.
    5. tuang kedalam loyang dan bakar selama 50minit. mungkin perlu ditutup dengan aluminium foil ketika hampir masak.
    verdict:
    memang macam clafoutis! tak rasa sangat the grains of polenta & breadcrumbs.
    plus.. agak tawar.. kalau makan dgn cream fraiche mcm jamie kata sure lagi menarik!
    bila makan gitu ja rasa macam bengkang buah epal yang kurang lemak :p


    "the polenta" yg dibeli di cold storage. rm9.90 rasanya..

      jam-filled cornmeal muffins

      plan asal nak buat 2 jenis muffins utk muaz bawak ke educare..
      sementelah cornmeal masih berbaki, saya gugel resepi cornmeal muffins.
      satu chocolate muffins, satu jenis lagi cornmeal muffins..

      tapi bila dah siap cornmeal muffins ni..
      rasa macam tak adil pulak.. nanti ada yg dapat cornmeal, nak chocolate..
      rasanya.. budak2 lagi suka chocolate muffins, kan?
      maka, cornmeal muffins ni jadi habuan teman2 di ofis ;)

      • 1/2 cup granulated sugar
      • zest of 1 lemon <-- i use orange zest
      • 1 cup cornmeal
      • 1 cup flour
      • 2 teaspoons baking powder
      • 1/2 teaspoon salt
      • 1 beaten egg
      • 1/4 cup oil
      • 1 cup milk
      • 1/2 cup jam (I used raspberry, but it's really up to you)
      1. In a large mixing bowl, combine the sugar and lemon zest with your fingers until the sugar is a yellowish color. Add in the cornmeal, flour, baking powder, and salt. Add in the beaten egg, oil and milk, stirring until just combined.
      2. Fill muffin cups half full. Place 1/2-1 tbsp of jam onto batter. Scoop in another spoonful of batter, until the muffin cup is 3/4 full.
      3. Bake at 400 degrees F for 20-25 minutes or until set and slightly golden. (i bake at 180C)
      4. Allow the muffins to cool before removing from the muffin tin. Makes about 15 muffins.

      plum, polenta, and olive oil cake

      inilah resepi pertama yg dicuba dari timbunan buku yang dibeli..
      buku yang tak pernah didengar namanya - cake keeper cakes
      tapi saya beli sebab bekenan description: 100 simple recipes
      dasar pemalas. nak yang mudah & simple ja :p
      retail price buku ni rm73.60 tapi bookxcess jual rm19.90
      happy :)


      polenta ialah cornmeal.. tapi bukan tepung jagung tau!
      warnanya kuning dan kasar drp tekstur tepung
      and its gluten-free!
      sesiapa yg ada diabetes elok makan ia sbg ganti nasi/ roti
      tapi cara masak utk ganti nasi/ roti saya belum study..
      sebab hanya berminat dengan baking ;)
      saya beli cornmeal di cold storage
      harganya rm10.99 utk 500g
      memang sgt mahal!
      tapi teringin nak rasa punya pasal.. beli je lah!




      bahan2:
      • 1cwn tepung
      • 1/2cwn yellow cornmeal/ polenta
      • 1 1/2sdk baking powder
      • 1/4sdk garam
      • 2biji telur saiz besar
      • 2/3cwn gula <-- tak kurangkan pun takpa.. tak manis sgt pun
      • 1/2cwn minyak zaitun (extra-virgin)
      • 1/3cwn susu
      • 1sdk vanilla
      • 1sdk parutan kulit lemon <-- saya letak kulit oren
      • 1 3/4cwn red seedless grapes <-- saya guna 2biji plum
      • gula aising, utk tabur atas kek
      tatacara:
      1. panaskan oven 175C. gris loyang spring form 9inci.
      2. gaul tepung, cornmeal, baking powder dan garam dalam mangkuk sedang.
      3. pukul gula dan telur hingga gebu dan berwarna pucat (lebihkurang 5minit). perlahankan kelajuan mixer dan masukkan minyak zaitun. pukul 1minit dengan kelajuan sederhana. masukkan susu, vanilla dan parutan kulit oren dan pukul pada kelajuan perlahan.
      4. masukkan adunan tepung 1/2cwn sekali masuk. masukkan grapes separuh. tuang kedalam loyang dan bakar 10minit.
      5. masukkan baki grapes (masa ni baru saya masukkan plum) dan sambung bakar 40minit (saya bakar 30minit).
      6. tabur gula aising keatas kek yang telah masak.
      verdict:
      polenta membuatkan tekstur kek agak kasar dan berbijik2 tapi tak lemak macam makan almond meal cake.. rupa macam butter cake tapi rasa langsung tak macam butter cake.. tapi takdela rasa pelik bila guna minyak zaitun tu.. and its not sweet either! agak2 geng opis suka tak? ;)
