aubergine, red pepper and tomato tart

bismillahirrahmanirraheem..
assalamu'alaikum wrm wbt,

while making dinner for kids,
i made this for my other half
alhamdulillah.. he likes it!

i have made a tart with pizza dough before
sangat2 mengenyangkan!
great for dinner, insyaallah.

pizza base:
  • 220g strong flour <-- i used 50g wholemeal flour + 170g bread flour
  • 1 tsp dried quick yeast
  • 1/2 tsp salt
  • 2 Tbs olive oil
  • 1 egg
  • 80ml warm water
tart:
  • 160g aubergine, chopped
  • 2 large red peppers, deseeded and cut into strips
  • 1 large red onion, thinly sliced
  • 50ml olive oil, plus extra to drizzle
  • 1 tsp salt
  • 1/2tsp crushed black pepper
  • 100g cherry tomatoes, halved
  • 1 Tbs chopped parsley <-- nil.
  • 110g mature cheddar cheese, grated
  • 150g greek yogurt



method:
pizza base:
  1. mix the flour, yeast and salt in a bowl. make well in center and pour in the oil, egg and water. draw everything together with your hands until you get a soft dough.
  2. transfer the dough to a lightly floured surface and knead for a couple of minutes. the dough should be soft but not sticky. if sticky, add a little flour and knead again. roll out the dough with a rolling pin until 3mm thick.
tart:
  1. preheat oven to 180C.
  2. put the eggplant, peppers and onions in a non-stick roasting pan, drizzle with oil and season well with salt and pepper.  cover the pan with aluminum foil. bake in the preheated oven for about 20 minutes or until just soft. Drain any excess juice from the roasted vegetables.
  3. reduce heat to 170C.
  4. line the tart tin with pizza dough but do not trim the edges yet. set aside.
  5. stir the tomatoes, parsley, and half the cheese into the roasted vegetables and set aside.
  6. In a separate bowl, mix together the yogurt and remaining cheese. spoon into the tart shell.
  7. Scatter the roasted vegetables over the yogurt, spreading it evenly. trim the excess of pizza dough neatly around the edges.
  8. bake for 25-30 minutes. remove from the oven and leave to cool.

cauliflower quiche

bismillahirrahmanirraheem..
assalamu'alaikum wrm wbt,

when i saw this recipe in taste of beirut
i can feel the goodness to eat it for breakfast
since kiddos are not so adventurous with morning eats
(typical genetically-malay kids i must say -
its either nasi lemak or nasi goreng or roti bakar or roti canai)
i made it for friends in the office..

naturally, quiche is "eggy"
and i had to halve the cheese - no stock :(
so.. some like it but..
some can stomach only "cubit-cubitan"
me? i gobbled it like nobody's business :p
alhamdulillah.. ramai yg kenyang :)

makan dengan chilli sauce ye.. bukan cherry :p


cauliflower quiche

Crust: 
  • 2 cups of flour, dash of salt
  • 1 egg
  • 1/2 cup of unsalted butter (4 ounces or 125 g.)
  • 1 tbsp of whipping cream or milk or more as needed
Custard:
  • 1/2 of a large cauliflower
  • 3/4 cup of shreds of prosciutto or ham <-- i use sausages
  • 6 eggs plus  2 egg whites
  • 2 cups of whipping cream or 1 cup of cream and 1 cup of milk
  • 1 cup of shredded Swiss cheese <-- i use cheddar but only 1/2cup :|
  • 1/2 cup of grated parmesan
  • 1 1/2 tbsp of grainy mustard
  • Spices: 1/4 tsp of white pepper, 1/4 tsp of nutmeg, 1 1/2  tsp of paprika, 1/4 tsp of black pepper
To make the crust: 
  1. Place the flour and salt in the bowl of a food processor; mix to combine well. Add the butter, and pulse until the mixture looks sandy. Add the egg and mix, adding the tablespoon of cream or milk through the feed tube. As soon as the pastry holds together, stop the machine and transfer onto a piece of wax paper; gather the dough into a bowl, wrap and place in the fridge for one hour or overnight. 
  2. When ready, bring to room temperature. Roll out on a large piece of wax paper. Flip onto a greased and floured pie plate. Prick all over with a fork, cover with a piece of foil and a mound of beans and bake in a preheated 350F oven for 15 minutes or so until the pastry is dry and almost completely baked. 
To prepare the custard:
  1. Steam the cauliflower (or boil in salted water) until tender. Drain well and cool then cut into small florets and chunks to fit the pie plate. 
  2. Place the prosciutto shreds all over the crust then cover with the cauliflower pieces.  
  3. In a large bowl, beat the eggs then pour the cream (or cream and milk), then cheese, then add the spices and mix well to combine. 
  4. Pour the custard over the cauliflower and bake in a preheated oven at 350F till puffy and golden. Serve.
  5. If desired, you can brush the crust with a bit of beaten egg after baking it first for ten minutes, then bake it again for 5 or so; the egg will help keep the crust flaky and will give it a nice sheen. <-- i did this.

    vegetables topped with mashed potato

    harga makanan di kantin sangat mahal sejak kebelakangan ini..
    nasi putih 1/4cwn
    + seekor ikan keli kurus keding
    + sayur bayam sejemput
    + tempe goreng cili juga sejemput
    = RM4.50

    dalam sebulan yang lalu harganya cuma RM3.50!
    waduh.. boleh bangkrap gini!
    sehari naik RM1..
    sebulan bekerja bertambah RM22..
    setahun bekerja bertambah RM264!
    tapi gaji naik tak sebanyak itu!

    maka saya membuat resolusi terkini..
    akan cuba membawa bekal makanan tengahari..
    kalau boleh setiap hari!

    hari ni mati kutu jugak nak bawak bekal apa.
    lauk semalam cuma tinggal udang bakar 4ketul..
    sesudah subuh belek2 buku resepi tajuk POTATO..
    (kebetulan semalam dah buat mashed potato tanpa ada idea nak makan dengan apa)
    terasa berkenan dengan resepi dibawah ni:

    vegetables topped with mashed potato
    bahan2:
    • 4biji kentang sederhana besar, direbus & dilecek
    • 1sdb butter
    • 2sdb yogurt <-- ganti susu pun boleh
    • 1sdk jintan putih <-- saya guna serbuk
    • 2oz parmesan cheese
    • 6oz carrot, potong bulat <-- saya guna sebatang setengah
    • 6oz cauliflower, amek florets saja <-- agak2 sama banyak dgn carrot je..
    • 6ketul cendawan butang, hiris nipis <-- pandai2 tambah ;)
    • 2sdb butter
    • 2sdb tepung
    • 125ml vegetable stock <-- saya guna 1/2air panas + 1/4cube maggi
    • 125ml susu
    • garam & lada hitam secukupnya
    tatacara:
    mashed potato
    1. rebus (guna air bergaram) & lecek kentang yang masih panas. masukkan butter dan gaul hingga butter cair dan sebati. 
    2. masukkan jintan, yogurt dan separuh daripada parmesan cheese, gaul sebati.
    sayur
    1. potong kecil sayur mayur dan rebus dalam air mendidih selama lebih kurang 10minit. kemudian, toskan. (cendawan butang tak perlu rebus)
    kuah
    1. cairkan butter dalam saucepan. masukkan tepung dan gaul sebati. 
    2. alihkan dari api dan masukkan vegetable stok dan susu. gaul sebati. letak semula atas api dan masak hingga mendidih. 
    3. masukkan garam & black pepper. tutup api.
    assembly
    1. panaskan oven ke 190C.
    2. masukkan sayur dan cendawan kedalam kuah. 
    3. tuang kedalam bekas kaca/ casseroles ( masa ni saya masukkan sekali lebihan udang bakar semalam).
    4. ratakan permukaan atas dengan mashed potato.
    5. tabur baki cheese atas mashed potato tadi.
    6. bakar selama 30-35minit.
    
    tertumpah!!
    

    alhamdulillah.. kenyang juga makan ni utk lunch ;)
    tapikan.. syahdu sangat.. sebab masa transport (dalam kereta je..) bekas tu tersenget2.. tertumpah sikit dalam paper bag.. :(

    crustless spinach & feta quiche

    teringin nak rasa feta-cheese
    so, mintak tlg cik abe belikan kat cold storage
    mak aih.. mahal sesangat mahalllll!!!
    RM19.90 for 6oz! pitam!
    hmm.. cheeses memangla sangat mahal kat malaysia ni
    buatan malaysia punya takdak ka??
    i suppose it will be the 1st & last time, me buying feta cheese.
    :(

    banyak jumpa resepi spinach & feta cheese
    mungkin gandingannya ada umphhh..
    umpama apple & cinnamon?
    ;)

    mak taknak makan nasik for dinner
    so, i made her this crustless quiche
    kesian kat mak.. jadik pening pulak..
    sebab masin!!! silap besaq la tak rasa dulu feta tu
    i shouldnt have added the salt! walaupun hanya secubit!
    and the feta qty.. kena kurangkan sikit..
    anyway, this is my trial & error recipe
    can be further improved, insyaallah..

    bahan2:
    • sepokok bayam, basuh dan ambil daun saja
    • button mushroom <-- saya guna yg dalam tin, 1/4tin saja
    • 1labu bawang besar, dicincang
    • 1ulas bawang putih, dicincang
    • 2sdb minyak zaitun
    • 1.5oz feta cheese, potong kecil <-- originally saya letak 3oz
    • 1/2cwn shredded cheddar cheese
    • 1cwn susu low fat
    • 2biji telur, dipukul sedikit
    • 1/2sdk black pepper
    tatacara:
    1. panaskan oven 175C dan gris loyang pie 9inci dengan butter.
    2. tumis bawang besar dan bawang putih. masukkan bayam dan cendawan. masak hingga air kering.
    3. gaulkan feta cheese dengan bayam. tuang kedalam loyang pie.
    4. tabur cheddar cheese keatas bayam.
    5. campurkan susu dan telur. perasakan dengan black pepper. tuang adunan kedalam loyang pie yang berisi bayam.
    6. bakar selama 35-40minit.

    spiced roasted cauliflower and potatoes

    semalam dear hubby beli ikan bakar minang for dinner
    dia nak try test this one new minang resto in uptown
    taktahulah apa namanya..
    (but the kids kata ikan bakar tu tak sedap!
    it end-up in this morning punya nasik goreng :p)
    so, i just cooked kangkung goreng belacan & ikan goreng
    (kids prefer ikan to meat)

    and for myself..
    i made this roasted cauliflower & potato
    i halved the recipe since nak makan sorang2..
    below is the original recipe c&p from the original blog

    Ingredients

    • 6 Medium Sized Yellow Wax Potatoes
    • 1 Medium Sized Cauliflower (about 450 - 500 g)
    Marinate

    • 2 Tbsp Curry Powder
    • 1 tsp Garam Masala
    • 2 tsp Paprika or Cayenne Pepper
    • 2 tsp Garlic Paste
    • 1 Tbsp Ginger Paste
    • 1 tsp Sea Salt
    • ¼ Big Lime, juiced
    • 3 to 4 Tbsp Canola Oil
    • 2 Sprigs Fresh Curry Leaves (optional)
    Method:
    1. Boil the potatoes and allow them to cool completely. Peel the potatoes and cut them into ¾ inch (2 cm) dice.
    2. Break up the cauliflower into chunky florets, about 1-½ inches (4 cm). Blanch the cauliflower for about 15 seconds, drain into a bowl of ice water for 10 minutes. Drain well and pat dry with paper towel.
    3. Combine all the marinate ingredients and mix well. Rub the cauliflower and potatoes with the marinate mixture.
    4. Preheat the oven to 425˚F/220˚C.
    5. Place the vegetables on a large baking tray in a single layer. Bake the vegetables for about 10 minutes.
    6. Heat the broiler. Place the vegetables under the broiler, about 6 minutes on each side. Serve the vegetables warm with some steamed rice.
    verdict:
    even though this simple dish is delish..
    the non-mamak in me prefer the non-spicy ones..
    the much more simpler version - roast with olive oil, garlic, salt & pepper ;)

    broiled vegetables

    terung+tomato+bawang panggang










    resepi dari buku chef sabri
    satu cara berbeza utk memasak sayur..
    sedap!

    bahan2:
    • 200gm terung (~ 2biji sederhana besar), hiris bulat
    • 200gm tomato (~3biji saiz besar), hiris bulat
    • 100gm bawang besar (~1biji saiz besar), hiris bulat
    • 100ml minyak sayur
    • 1biji limau nipis, diperah ambil airnya
    • 2biji bawang merah, dicincang halus
    • 1biji bawang putih, dicincang halus
    • 1sdt serbuk oregano*
    • 1sdt daun parsley
    • 1sdt rosemary kering*
    • 1sdt thyme*
    • 1sdt serbuk lada hitam (saya tambah)
    • 100g butter, dipotong kecil
    *guna mixed herbs pun boleh.

    tatacara:
    1. panaskan oven ke 160C.
    2. potong sayur dan bawang besar dan susun dalam bekas.
    3. gaulkan semua bahan dari minyak hingga serbuk lada hitam dan tuang keatas sayur.
    4. tabur butter keatas sayur dan bakar selama 20minit.
    verdict:
    yumm! beza. memang berbeza!

    nota:
    semalam buat sekali lagi untuk berbuka.
    kes lewat memasak.. dah 630pm baru nak mula masak.
    atas tungku dapur dah penuh & lambat sangat nak tunggu..
    terus masuk oven sayur campur & udang
    tapi ditengah jalan (dalam 10min) kena balik-balikkan udang
    biar masak sekata..

    yummeh!
