banana bread protein bars

bismillahirrahmaanirraheem..

i have two tub of unused HL protein powder (or rather known as F3)
bought those moons ago.. before ramadhan.. as a preparation for sahur
for me and my kids.
tapinya cek tak boleh telannn!!!
tried twice. almost puked there and then. same goes with the kids :|
but i need to use up those expensive powder!

alhamdulillah.. after a lengthy googling..
i came across one recipe that i think would be nice to try..
yep. tried it last monday and hey! i can finish off the whole pan!
but of course i didnt do it. buruk lantak wehhh!
i shared with other parents and a teacher while waiting for insyirah
oh! my eldest, insyirah took UPSR this year ;)
tolong doakan kejayaannya ya! (ummi yg over anyway thank u for the doa :) )




here's the recipe from your trainer paige with my mod
  • 1/2cup quick cooking oat (i used quaker oat)
  • 1cup Almond meal/flour
  • 4-6 scoops protein powder 
  • 2 large ripe bananas (smashed)
  • 1tsp baking soda
  • 1/2tsp cinnamon powder
  • 1/2tsp sea salt
  • 2 eggs
  • 1/2cup coconut oil (i used canola oil)
  • 1Tbs honey
  • 1/2cup chocolate chips (optional)
  1. Preheat the oven to 350 degrees, and spray a load pan with nonstick spray. 
  2. Add all of the dry ingredients in a large bowl and mix to combine. 
  3. Add the rest of the ingredients, and stir until mixed together. 
  4. Pour the batter into the loaf pan (i use 8x8 pan) and cook for 25-30 minutes, using the toothpick method to check for doneness.

healthy banana bread with dark chocolate chips

assalamu'alaikum wrt wbt

am into healthy breakfast (yes breakfast only :p) nowadays
so.. i made this healthy bread & muffins last weekend
(i got 4 teeny-weeny mini loaf and 10 or more muffins)
and just had the last slice for this morning breakfast!
its healthy. it keeps well in the fridge. and its yummy!

banana wholemeal muffins
i ate 4 of them while driving on sunday morning. bedal sakan!

  • 4 very ripe bananas, well mashed
  • 2 eggs plus 1 egg white, lightly beaten
  • 1 teaspoon vanilla
  • 2 cups whole wheat flour
  • 3/4 cups Sucanat (evaporated cane juice/ sugar) 
  • 1 tablespoon ground flax seeds
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 oz dark chocolate, chopped or choc chips (about 1/2 cup)
  1. Preheat oven to 350° and grease either a large loaf pan, three mini-loaf pans, or a large muffin pan.
  2. Mix mashed bananas with eggs and vanilla, and then stir in flour, Sucanat, flax seeds, salt and baking soda until just combined.  Gently stir in chocolate and pour batter in prepared pans.
  3. Bake a large loaf pan for 60 minutes, mini-loaf pans for 35 minutes, and muffins for 20 minutes (until cake tester or wooden skewer comes out mostly clean).  Set on cooling racks for 5 – 10 minutes, then remove from pans to finish cooling.
tips:
  1. Ripe bananas, please.  Yellow ones just won’t do- they need to be more black than brown.  I wouldn’t bother making the bread if the bananas aren’t ready.  Better to make a banana split or a banana/almond butter/almond milk/cinnamon shake if you feel the urgent need to use up your bananas.
  2. Substitutes?  But of course.  Use regular flour if you don’t have the whole wheat, and regular or brown sugar if you don’t have Sucanat.  Skip the flax seeds if you want.  (Just know that you won’t be able to call these Impossibly Healthy if you take out the healthy ingredients.)  If you don’t have dark chocolate, you can chop up other kinds of chocolate (or use chocolate chips)- but again, you lose the right to use the Healthy claim… just so you know.  Dark chocolate wins in the antioxidant department and is less sweetened than its semi-sweet and bittersweet counterparts.
  3. Nuts… yes, nuts are lovely in banana bread, especially walnuts.  Toast some and add them in if you’d like.  They’ll bring a healthy fat to the party, which is good but something to consider if you’re looking to take some of the fat out of your life.
  4. “Healthy”: Be sure to explain to people that this is a Healthy bread- yes, with a capital H- and while it’s super-good, it’s definitely not a decadently sweet and rich classic banana bread like this recipe.  When you build whole wheat and flax and raw sugar and you strip out butter and oil and a yolk, you’re not getting an indulgent treat.  But you do have my word that this is pretty damned good.
  5. Storage: keep this bread wrapped in plastic wrap (or in an airtight container) to stay moist, and eat within a few days.  Enjoy!
note:
my batter is quite thick, i assume due to the not-so-ripe bananas. so, i added few tablespoons of low fat milk and canola oil. alhamdulillah.. it turn out great!

mad grape cake

assalamu'alaikum wrt wbt

ampun dan maaf dipinta kerana menyepikan diri tanpa kabar berita
kesibukan sebelum ramadhan.. terus berjangkit sehingga selepas raya
dan akhirnya.. kemalasan melanda.
resepi baru yg dicuba cuma disnap. dan dimuatnaik kedlm IG
itupun tak semua.. ada yg berlalu begitu sahaja. dan akhirnya lupa!

mad grape cake ni dibuat utk jamua hari raya department
last minit decide nak buat.. bila terpandangkan grapes
dah hampir 1mggu grapes tu kesunyian..
saya langsung tak boleh makan sebab masam!
sejak mengandung anak pertama, tak tahan masam langsung.
yang paling best, kek ni takdak minyak, takdak butter.
menyihatkan! dan moist sangat2.



sumber: mula2 jumpa disini tapi rasa tak confident.. bila tengok kat blog quaypo baru berani nak cuba.
  • 2 eggs
  • 3/4 cup castor sugar
  • 1 tsp Vanilla Essence
  • 1 lemon - rind and juice
  • 1 1/2 cups self-raising flour
  • 500 grams grapes (seedless and remove skin)
  1. Preheat oven to 200 deg C. Beat eggs, sugar and vanilla essence, lemon rind and juice until thick. Add sifted flour. Stir until evenly mixed. Gently stir in grapes.
  2. Put in a greased and floured 23cm round tin. Reduce oven to 180 deg C and cook approximately 30-40 minutes. Leave for 3 minutes before turning out.
  3. Dust with sifted Icing Sugar. Serve with a dollop of whipped cream.

grilled eggplant wraps

bismillahirrahmaanirraheem..
assalamu'alaikum wrm wbt.

saya dah siapkan menu dinner utk seminggu
supaya tak kelamkabut pikir nak masak apa petang nanti
kebiasaannya ada saja ucapan berbaur seperti:
"muaz nak spaghetti, taknak nasi", "man taknak ayam, nak kari ikan";
bila dah ada menu yg dipersetujui bersama.. siapa pun tak banyak cerita
tapi bila menu yg dah sedia ada tak diikut atas sebab2 kelaparan tak tertahan
ummi depa mula jadi tak keruan.. kalau masak jugak takdak sapa yg nak makan
lagipula cik abe pun dah pesan.. "tak payah masak nasik!"
maka episod pencarian resepi kembali lagi..
bezanya kali ni, healthy recipe ;)
sekadar mengalas perut di malam hari..

telur tak masuk resepi sebab utk sikecik only ;)

resepi adaptasi dari eatingwell.com
  • 4 keping roti tortilla
  • sebiji terung panjang, potong serong <-- terung dimakan 2org dewasa sahaja. sila lebihkan terung kalau suka.
  • 6 biji tomato cherry <-- dibelah 2
  • sedikit minyak zaitun dan garam
  • sedikit mozarella cheese
  • 2Tbs mayonaise
  • salad lettuce
  1. panaskan oven pada kedudukan grill, suhu 190C
  2. sapu minyak zaitun pada terung dan sprinkle garam. grill terung bersama tomato cherry selama 5minit. terbalikkan menggunakan sepit/ spatula. tabur cheese mozarella (pada sebelah bahagian terung dah cukup. kalau letak kedua-dua belah cheese akan melekat pada bekas)  dan teruskan grill sehingga cheese cair ~ lebihkurang 3-4minit.
  3. panaskan roti tortilla dalam microwave selama 30-45saat atau boleh juga guna oven: balut dalam aluminium foil dan grill selama 2-3minit.
  4. sapu roti tortilla dengan mayonaise dan tabur bahan2 lain kedalam roti dan bungkus/ roll & serve :) 
alhamdulillah..
terasa nikmat bila dapat ikut saranan Nabi Muhammad s.a.w:
makan sebelum lapar, berhenti sebelum kenyang.

nota:
disini ada cara2 nak buat homemade tortilla
inti/ filling boleh dipelbagaikan.. kebiasaannya letak cooked shredded chicken.
kalau nak dimelayukan, letak inti karipap pun boleh ;)

homemade apple chips

bismillahirrahmaanirraheem..
assalamu'alaikum wrm wbt,

this apple chips is the most healthiest snacks i've ever eaten
and the most easiest snacks to be done!
you just need an apple a day keeps the doctor away
a mandolin or a slicer
and brown sugar + cinnamon powder
the only critical thing is time: you need to wait 2 hours to enjoy it!
but its worth the waiting time.. insyaallah..

  • 1 green apple
  • 2tbs brown sugar
  • 1tbs cinnamon
  1. preheat the oven to 107-110C.
  2. slice the apples as thin as you can <-- i think i need to invest on mandolin. my plastic-pasar-malam mandolin is killing me with frustation!
  3. mix the sugar + cinnamon. dip the apple slice lightly in the mixture.
  4. Lay the slices on the baking sheets, about 12 slices per sheet.  
  5. Bake for 1 hour.  Remove one pan at a time and flip the apple slices over with tongs.  When you return pans to oven, also rotate them - put the one that was on the top rack on the bottom.  Bake for one more hour.  Remove pans from oven. Apple slices will start to harden up pretty quickly. Remove with tongs.  
the result of thick coating = huduh bangat!
but still very crispy :)

oatmeal breakfast bread

baking mojo.. pls come to me..
this is an attempt to get that baking mojo
and a healthy one too!



this oatmeal bread uses applesauce
and a little bit of oil..
no. no butter at all :)
so, do you feel healthy already?

btw, i bought the applesauce from cold storage
i dont think its available in jusco or giant
i bought it at RM0.99 (actual price was RM11.90)
the price was marked down simply because its nearing due date
which is in june2011! jauh lagi tu.. hehe..

a good bargain indeed!

Adapted from Baking from My Home to Yours by Dorie Greenspan
For the topping:
  • 1/4 cup packed light brown sugar
  • 1/4 cup chopped walnuts or pecans
  • 1/4 teaspoon ground cinnamon
For the bread:
  • 2 large eggs
  • 1 1/4 cup unsweetened applesauce
  • 1/3 cup flavorless oil, such as canola or safflower
  • 1/4 cup buttermilk or whole milk
  • 1 1/4 cups all-purpose flour (I used 3/4 cup all-purpose, 1/2 cup whole wheat)
  • 3/4 cup sugar
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly grated nutmeg
  • pinch of ground cloves <-- i opted out
  • 1/2 cup diced dried figs, apples or apricots or moist, plump raisins (dark or golden) <-- i uses 1/4 cup apples + 1/4 cup dried figs
  • 1 cup old-fashioned oats
Getting Ready:
Center a rack in the oven and preheat the oven to 350 degrees F.  Butter a 9-x-5-inch loaf pan, dust the inside with flour and tap out the excess.  Put the pan on a baking sheet.

To Make the Topping:
In a small bowl, using your fingers, toss together the sugar, nuts and cinnamon until evenly mixed.  Set aside.

To Make the Bread:
Whisk together the eggs, applesauce, oil and buttermilk until well blended.

In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, baking soda, salt, nutmeg and cloves.  Remove 1/2 teaspoon of the mix and toss it with the fruit, just to coat; set aside.  Stir the oats into the bowl.  

Pour the liquid ingredients over the dry and, using a large rubber spatula, stir just until everything is evenly moistened- this is a case in which less is more, so don't overdo the mixing.  Scatter the dried fruit over the batter and stir to blend.  Scrape the batter into the pan and sprinkle over the topping, tamping it down very lightly with your fingers so it sticks.  

Bake for 55 to 65 minutes, or until the bread is beautifully browned and a thin knife inserted into the center comes out clean.  Transfer the bread to a rack to cool for about 5 minutes, then run a knife around the sides of the pan and unmold.  Invert and cool to room temperature right side up.

swiss bircher muesli ~ a healthy breakfast :)

saya jumpa resepi ni tatkala men'gugel' healthy baking
kenapa saya yang kategori kecik ni mencari healthy baking??

sebab pertama yang saya dah mention banyak kali..
kenaikan lemak tepu disekeliling pinggang & pinggul

sebab kedua yang saya tak pernah sebut..
tahap kolestrol saya yang agak tinggi.. ya.. melebihi paras normal!

sebab ketiga hanyalah berdasarkan niat dan azam
untuk terus sihat supaya boleh beribadat dengan mudah
dan boleh menguruskan anak2 dan kehidupan seharian
selagi hayat dikandung badan.. insyaallah..

panjang pulak intro hari ini ;)
oh! resepi ni takde kaitan dengan baking
saja nak share healthy breakfast..



adaptasi dari kitchenparade
bahan2 (utk sorang makan):

  • 1/4cwn rolled oats (bukan quaker oat tau!)
  • 1/2cwn susu lowfat
  • 1/4 apple, potong wedges
  • a splash of honey 
  • 1sdb yogurt <-- lupa pulak nak letak!
  • kekacang - almonds/ walnuts/ sesame seeds/ sunflower seeds <-- saya letak biji kuaci
  • buah2 kering - cranberry/ apricot/ kismis <-- saya letak kismis
  • spices - cinnamon/ nutmeg/ cardamom <-- tak letak pun
tatacara:
  1. rendam 1/4cwn rolled oats bersama2 1/4cwn susu dan biar semalam dalam peti sejuk.
  2. keesokan hari, tambah baki 1/4cwn susu dan masukkan semua bahan2 lain dan gaul.
  3. enjoice!
verdict:
senang sangat2 nak makan healthy food nih..
cumanya saya rasa tekak ni tak boleh telan menu ni hari2..
walaupun isi2 dan inti2 tu dipelbagaikan.. 
seminggu 2x mungkin boleh.. insyaallah..
hmm.. cemana nak ajar budak2 makan healthy ni ek?

healthy apple oatmeal muffins

healthy muffins is a good option ;)
demi menghilangkan gian nak membakar :p

bahan2:
  • 2cwn apple, buang kulit dan sagat <-- lebih kurang 3-4biji
  • 1 1/2cwn tepung <-- lagi healthy kalau substitute separuh tepung dengan wholemeal flour
  • 1cwn quick cooking oat <-- quaker oat plastik merah
  • 2/3cwn gula perang <-- saya letak 1/2cwn saja
  • 1 1/2sdk baking powder
  • 1/2sdk baking soda
  • 1/2sdk serbuk cinnamon <-- saya letak 1sdk
  • 1/4cwn fat-free milk <-- saya guna susu low-fat
  • 2tbs minyak jagung
  • 1sdk vanilla
  • 1/2cwn plain fat-free yogurt <-- guna 1cwn low fat yogurt
  • 1/2cwn fat-free sour cream <-- tak letak
  • 2biji telur putih <-- saya guna sebiji telur kecil
tatacara:
  1. panaskan oven 200C dan sediakan muffin cup.
  2. sebatikan bahan2 kering dalam mangkuk besar: tepung, oat, gula, bp, bs dan serbuk cinnamon.
  3. gaul bahan2 basah dalam mangkuk berasingan: susu, minyak, vanilla, telur dan yogurt.
  4. kaupbalikkan bahan basah kedalam mangkuk bahan kering.
  5. masukkan apple yang dah disagat (tapis lebihan air) dan kaupbalik hingga adunan sebati.
  6. masukkan kedalam muffin cup. 
  7. sediakan streusel topping. tabur atas adunan muffins dan bakar 20-25minit.


sterusel topping:
  • 45g butter sejuk, dipotong kecil
  • 1/2cwn tepung
  • 1/4cwn gula perang
  • chopped nuts (optional)
  1. gaul sebati gula dan tepung (dan kacang; kalau ada).
  2. ramas butter sejuk kedalam adunan hingga terbentuk seperti breadcrumbs.
nota:
saya buat dalam muffins case yg besar gedabak.. 
20min tak cukup! kena tambah jadik 30min rasanya..
dapat dalam 8bijik je..
kalau muffin cup yg stended tu.. insyaallah bleh dpt 14 bijik.

verdict:
saya makan seketul je.. memang kenyang!
tapi sedihla.. sebab tak masak betul..
silap sendiri.. tak cucuk lidi sblm tapau ke opis
rasa mcm nak beli oven letak kat opis je!
kalau ada yg underbake.. boleh continue bakar
takpun.. siapkan batter kat rumah.. bakar kat office..
nak buat quiche pun boleh..
walla.. takyah susah2 ke cafe, brunch is ready!
haish.. berangan tak sudah!
kena halau keluar opis baru tau :p

homemade muesli bar

khamis lepas amirah buat muesli bar
tapi tak sempat rasa.. sebab puasa
dah mintak resepi siap2..
lepas tu entah letak kat mana
sabo je la!

pagi tadi try gugel
jumpa kat kidspot
hmm.. lebih kurang je..
jalan je lah!
tak sabar nak korbankan honey stars..
yang dah berbulan2 tersadai!

potong kecik2 senang nak ngap ;)

Ingredients:
  • ½ cup (125mL) honey <-- i add 2tbs of peanut butter
  • ¼ cup caster sugar <-- replace with 1/8cup brown sugar 
  • 125g butter
  • 3 cups rolled oats (see note for GF) <-- use 2cups only
  • 1 cup rice bubbles <-- use 2cups of honey stars
  • 1 cup sultanas <-- my son kept adding more and more!!
  • ½ cup chopped apricots or dates or choc chips <-- i opt for choc chips 
  • ½ cup desiccated coconut <-- i use 2tbs only (dont really like it :p)
  • ¼ cup pepitas (pumpkin seed kernels), sunflower or sesame seeds <-- use sunflower seeds
Method:
  1. Preheat oven to 180°C. Grease and line a slice tray with baking paper <-- i use swiss-roll tray
  2. Combine honey, sugar and butter in a saucepan over medium heat.
  3. Cook, stirring, for 2-3 minutes until butter melts and sugar dissolves.
  4. Bring to the boil and cook for 2 minutes or until syrup thickens slightly.
  5. Remove from heat.
  6. Combine remaining ingredients in a large bowl.
  7. Pour over the hot syrup and stir to combine.
  8. Spoon into prepared pan and press firmly to make sure the mixture will stick together.
  9. I wet my fingers with a bit of cold water and press the top to get a smooth finish.
  10. Bake in oven for 15-20 minutes or until golden.
  11. Cool and then refrigerate until well chilled and cut into 24 slices (about 2cm x 6cm). <--definitely must be chilled first otherwise you'll get a crumbly muesli instead of a bar..
Notes:
  1. To make these muesli bars gluten free, use 2 cups of crushed cornflakes and 2 cups of rice bubbles.
  2. The mixture has a total of 1½ cups of dried fruit – use whatever combination you or your kids prefer.
  3. You could use half honey, half smooth peanut butter in the ‘syrup’ or add nuts to the mixture

maple syrup muffins with oat & raisin - eggless

i found another overdue stocks in my mom's fridge
i took home and poured it on my pancakes..
alhamdulillah.. i didnt had any diarrhea or vomitting
and my stomach is still intact! :p
so. i conclude. the overdue maple syrup is still good to use

i feel like jumping up and down my chairs
when i came across this maple syrup muffins recipe
why? coz i can use both overdue items in it!! 
the oats & the maple syrup. ngeee....
and it uses only 1tbs of sugar!! 
wow!
and its eggless!!!
wowow!

bahan2:
  • 1/4 cup butter -- melted and cooled
  • 1 tablespoon sugar
  • 1 teaspoon salt <-- reduce to 1/2tsp if using salted butter
  • 1 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 cup oats
  • 1/2 cup 1% low-fat milk
  • 1/2 cup maple syrup
methods:
  1. Preheat oven to 375F (190C).
  2. Melt and cook butter. Add sugar. Mix well. Add oats.
  3. In a separate bowl mix: salt, flour, baking powder.
  4. Mix the butter mixture with the dry ingredients alternating with the milk and the maple syrup.
  5. Pour batter in muffins tin.
  6. Bake at 375F for 15 min.

the original recipe has frosting but i didnt make it 
..because i want to feel healthy eating this muffins :p
so. i added 1/2cup of raisins in the batter
yep! another healthy breakfast for me & my friends :)

apple & raisin oatmeal quickbread

rolled oats dah overdue!! yelp!!!
this is the 2nd time..
i buy rolled oats..
and waited until overdue
baru nak guna
apa punya orang!

konon2 nak buat oat&raisin cookies utk hari raya
tapi semangat tak datang2!
yep.. i bake when am in the mood only :p

so.. this recipe is so in my mood yesterday (konon2)
just because of the overdue rolled oats (rasa bersalah la tu)

bahan2:
  • 1-1/2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2/3 cup brown sugar
  • 1 cup rolled oats
  • 1-1/2 cups grated apple <-- i use 3 small apples
  • 1/4 cup raisins
  • 2 large eggs
  • 1/4 cup whole milk
  • 1/4 cup vegetable oil
tatacara:
  1. preheat oven 170C & grease 8x4 loaf pan.
  2. dalam mangkuk sedang, whisk semua bahan kering (dari tepung hingga rolled oats). 
  3. add raisins & apples with eggs, milk & oil. <-- bahan basah.
  4. combine bahan basah kedalam bahan kering dan gaul sebati.
  5. tuang dalam loyang dan bakar 55-60min.

i feel healthy eating this quickbread!

eh! kalau tabur sunflower seeds sure lagi healthy-feeling kan?

pavlova

telur putih dah lama diperam dalam peti ais
asik tertangguh nak cuba buat pavlova nih
sebab takdak berries & buah yg sewaktu dengannya

semalam singgah cold storage
terus sambar stoberi tanpa fikir 10kali
selalu fikir berkali2 sebab mahal!!
kudukut sungguh :p



verdict:
seumur hidup, pertama kali makan..
sedap rupanya pavlova ni!
luarnya crispy2 crusty.. dalamnya lembut2 yummy..
kena pulak dengan whipping cream yg lemak2
& digandingkan dengan buah2 yg masam2..
rasa yang cukup lengkap!

strawberry-filling muffins

dah seminggu saya tak membakar
sampai cik abe tegur..
ingatkan this new hobby of yours will last
(dia kecek kelate tp bila tulis kot omputih ni sedap pulak :p)

saya pun kata..
saja nak berehat
dan bagi peluang oven rehat

yang sebenarnya..
saya kesian tengok hummingbird cake
dok tergolek2 dalam peti ais tu..
nak makan sendiri x daya dah!
alhamdulillah..
selepas seminggu bergolek..
abih jugak dia..

we'll be having late lunch!
makanya.. seawal 1030am saya dah mula operasi
buat muffin utk brunch (brunch ke? walhal dah breakfast roti banjir!)

resepi cedok dari joyofbaking punya blueberry muffins
tapi saya takdak blueberry..
not even frozen ones!
maka saya ganti dengan strawberry filling
yang dah lupa sebab musabab al-tujuan saya beli! :p


rupa yg sememeh x sudah!

peralatan: 2 mangkuk sedang, whisker, spatula plastik, muffin cup
tahap: senang
masa: penyediaan ~ 25-30min, pembakaran ~ 20min.

bahan2:
  • 1cwn plain yogurt
  • 1 biji telur <-- pukul sikit
  • 1/4cwn minyak sayur
  • 1/2sdk esen vanilla
  • 2cwn tepung
  • 1/2cwn gula
  • 1sdk baking powder
  • 1/2sdk baking soda
  • 1/4sdk garam
  • 1cwn stoberi filling <-- joyofbaking guna 100gm blueberries

tatacara:

  1. panaskan oven 190C dan susun muffin cup dalam dulang muffin.
  2. dalam satu mangkuk sedang, gaulkan kesemua bahan basah dengan whisker: yogurt, minyak, telur dan esen vanilla.
  3. dalam mangkuk sedang yang lain, gaulkan kesemua bahan kering: tepung, soda, baking powder, gula dan garam. gaul hingga rata & sebati.
  4. masukkan bahan basah kedalam mangkuk bahan kering (buat macam telaga kat tengah2 tepung tu). gaul sebati guna spatula.
  5. masukkan separuh stoberi filling kedalam adunan dan gaul rata
  6. cedok adunan kedalam muffin cup guna 2sudu besar. (saya masukkan separuh dan layer dengan filling dan masukkan lagi adunan. konon2 ada layer stoberi kat tengah. tapi sememeh ya amat!)
  7. atas muffin tu pun saya letak filling lagi.
  8. bakar selama 15-20minit.
nota:
bahagian menggaul anak2 teruna saya berebut nak buat.. buatlah korang..
bahagian mencedok kedalam cup pun diorang nak buat.. tapi uminya bagi cedok filling je.. itu yg "lawa semacam" je rupa muffin tu :p

saya guna cupcake punya cup.. dapat 18bijik. kalau guna muffin cup yg tinggi/ dalam tu rasanya dapat 12bijik.. sbb resepi kata yields 12pcs.

verdict:
boleh tahan sedap! lembut je.. :)
sikecik pun suka makan.. tak cukup seketul!

eh! rasanya boleh masuk kategori healthy nih! esp kalau guna low fat yogurt ;)

chocolate oil cake


i ran out of eggs
but i gotta bake a cake
i dunno why
i just have to
then only i can sleep peacefully..

i searched for eggless recipe
and settled for this chocolate oil cake
i made half of the recipe
and use 8inch baking pan
and lessen the baking time to 25mins

its so very fast & easy!
the big girl helped to read the ingredients
the boys helped to stir & whisk
within less than 20mins..
the cake is already in the oven

verdict:
the cake is moist & chocolate-y
big girl loves it & so does mommy

whole wheat banana nut bread

i am desperate
nope. am not a desperate housewife!
just a desperate baker.. :(

i need to bake something
that will turn out good
i need to bake something
that will soothe my heartbreak

ive been eye-ing this recipe for quite sometime
ive been waiting for the banana to be more riper
but there are too many banana-fans at home!
they are gone before i can smell them!

last nite i sent half of the banana-fans to mom's
another half will definitely sleep through the morning
yay! the balance, two bananas, are all mine!
silly-selfish mommy :p

this morning.. i woke up with 1 aim.. 1 goal..
(definitely not 1Malaysia-lah!)
the 1 aim: to bake this healthy quickbread
the 1 goal: to make me feel good again!





the preparation is very fast & easy
it took me about 20mins or less
the baking time is a bit time-consuming
it took 60mins plus 5mins

note:
i added 1/2cup of raisins and 1/2tsp of cinnamon powder

verdict:
i am feeling so damn GOOD..
i am so PLEASED with myself..

this rich, moist & deliciously healthy recipe
is definitely a keeper!

mission accomplised.

feather-like peach pudding



i think i have to omit the "feather-like" title
mine doesnt turn out feathery at all!
but it taste healthily goody-goody!

yep! its listed under the low-fat bakes & cakes
in this encyclopedia-like book

materials:
  • 400g canned peach slices
  • 50g low fat spread <-- unsure about this but i used low-fat margarine :p
  • 40g soft light brown sugar
  • 1 egg, beaten
  • 50g wholemeal flour
  • 50g plain flour
  • 1tsp baking powder
  • 1/2tsp cinnamon powder
  • 4tbs skimmed milk <-- i used low fat-milk
  • 1/2tsp vanilla essence


method:

  1. preheat oven to 180Celcius
  2. drain peaches & put into 1L dish
  3. add 2tbs of the peach juice into the dish
  4. put all remaining materials into mixing bowl. mix thoroughly till combined
  5. spoon the mixture over the peaches & level top evenly
  6. bake 35-40mins
  7. lightly dust the top with icing sugar before serving

note: serve with custard:

blend 1tsp arrowroot with 1tbs peach juice in a saucepan. stir remaining juice & simmer for 1 min. <-- i use custard powder & dollop a whipping cream before serving.

verdict:

this is great as dessert.. and teatime!

i feel wonderful! i feel healthy!

healthy carrot cake

i can feel my waistline increasing
i can feel my tummy kind of bloating

am i pregnant?
yep! pregnant-ing fats!

thats what happened
when you have to finish off
everything that you baked
since no one have the desire to eat it

(the baking itchiness just won't go away!)
i searched for healthy baking
and settled for this carrot cake recipe

i suppose it was listed as healthy
since sugar is substituted by honey
and only 1full egg being used
and oh! half of the flour is wholewheat flour!





verdict:

when i tasted the batter..
i got a feeling..
it will taste lousy!
because the of the nutmeg amount

nutmeg is definitely an acquired taste!
or isit just me??
whois raised in a land of nutmeg..
but still couldnt get used to its taste!

but when the cake is ready..
its not as bad as expected!

pst! i added some raisins to balance out the weird nutmeg taste :p
am i back to square one? duh!

wholemeal bread



the recipe is adapted from ms. rinnchan's fp

materials:
  • 100ml warm water
  • 20g dry active yeast
  • 4tbs hi-protein flour
  • 1tbs castor sugar
  • 175g rolled oats
  • 225g wholemeal flour
  • 1L warm water
  • 1.5tbs fine salt
  • 150ml vegetable oil
  • 1.3kg hi-protein flour
method:
  1. in your mixer, combine & mix slowly the first 4 ingredients: warm water, yeast, 4tbs flour & sugar. let it sit for 5mins.
  2. add in oats, half of the flour, warm water, brown sugar & vegetable oil into the yeast mixture.
  3. add in the balance flour & mix until the dough is smooth & does not stick to the sides of the bowl.
  4. shape dough into a ball & place it in a lightly oiled bowl. cover with clingwrap of moistened kitchen towel for 1hour or risen 2x.
  5. after it has risen, punch out the air and shape it into a buns or just place it in greased loaf pan. let it rise again.. 2x sizes.
  6. bake 180Celcius for 30mins.
note:
  • i made half of the above recipe & yields 2 loaf pans
  • if using pyrex loaf, pls increase the temperature by 5Celcius

carrot cake



the simplest & healthiest(minus the frosting) carrot cake

materials:
  • 1cup olive oil
  • 1cup brown sugar
  • 3eggs
  • 1.5cup plain flour
  • 1.5tsp baking powder
  • 1tsp baking soda
  • 2tsp ground cinnamon
  • 2cups grated carrot
  • 1cup chopped walnut
method:
  1. grate carrot & chop walnut.
  2. preheat oven to 180Celcius. grease cake pan with butter and flour.
  3. in bowl1: whisk oil, sugar & eggs (larger bowl please).
  4. in bowl2: sift all dry ingredients - flour, baking powder, baking soda and cinnamon.
  5. pour bowl2 into bowl1 mixture. mix well.
  6. add carrot and walnut into the mixture. stir until combined.
  7. pour into your cake pan. bake 45mins.
frosting:
  • 250gm cream cheese
  • 1cup icing sugar
  • 1tsp vanilla
  1. combine all ingredients in mixer. mix well.
  2. spread on top of cooled carrot cake.

verdict:
yummeh!
just cant stop biting into it.

low-fat banana bread


1st trial - a failure (different recipe though)
2nd trial - a success

why it is low-fat?
because it has low-fat yogurt!

the recipe from joyofbaking
is never disappointing

materials:

  • 1cup banana
  • 1/2cup low-fat plain yogurt
  • 1tsp baking soda
  • 1/4cup canola oil
  • 3/4cup brown sugar
  • 2egg whites
  • 1cup plain flour
  • 1/2cup wheat flour
  • 1/2tsp ground cinnamon
  • 1tsp baking powder
  • 1/4tsp salt

method:

  1. preheat oven to 180Celcius. prepare loaf pan: butter & flour the pan.
  2. you need 3 bowls.
  3. in smallest bowl, mashed banana. add in yogurt and baking soda. let it sit.
  4. in medium bowl, whisk together oil, sugar and eggs.
  5. in largest bowl, combine flours, baking powder, cinnamon and salt.
  6. combine banana mixture (small bowl) into oil mixture (medium bowl).
  7. add the batter to flour mixture (largest bowl). stir just until moistened.
  8. pour into prepared pan.
  9. bake for about 50mins.


verdict:

outlook like a bread. taste like a cake. soft & fulfilling cake.

dear hubby suggest to include nuts & raisin for more flavor

great for banana lovers.
