nigel slater's apricot almond (volcano) cake

kek ni dibuat sbg buah tangan utk maklong..
maklong jemput kenuri tahlil
but we went there slps tahlil!
bertuah tak anak buah ni??

kes kek jadik volcano dlm oven!

nasib agak baik.. sebab masih sempurna bahagian atasnya..
dan masih ada rupa kek yang agak senonoh..
yang dah jadi larva tu.. sedekah kat en.tongsampah je la..

nigel propose makan kek ni dgn poached fruits2 ie: apricot or strawberry..
sebab takdak buah2 tu.. saya tabur gula aising jek..


tabur almond flakes jugek.. itu yg nampak bercapuk2 putih tu..

bahan2:
  • 250g butter, suhu bilik
  • 250g gula caster <-- saya kurangkan ke 205g
  • 75g ground almonds
  • 100g tepung
  • 4biji telur saiz besar, dipukul sedikit
  • 100g apricot kering
  • sebiji lemon, diparut kulit dan diambil jusnya
  • almond flakes <-- optional, saja tambah
tatacara:
  1. panaskan oven 180C dan gris loyang cetek bersaiz 9inci (saya guna loyang tart. satu kelisapan besarrr!!!)
  2. pukul gula & butter hingga kembang dan berwarna pucat, dalam 5minit.
  3. satukan ground almonds & tepung. hancurkan apricot hingga terbentuk halus, dalam food processor. ketepikan dulu.
  4. masukkan telur sedikit demi sedikit hingga sebati. masukkan lemon zest.
  5. masukkan campuran almonds+tepung dalam 3batch, perlahan-lahan (hentikan dulu mixer untuk tuang capuran tersebut. pukul dengan kelajuan perlahan).
  6. masukkan lemon jus dan apricot dan pukul perlahan hingga sebati.
  7. tuang adunan kedalam loyang dan bakar selama 30minit (saya tambah lagi 5mins-saja nak bagi garing)
nota:
sila jangan guna loyang yg sgt cetek! sebab takdak agen penaik, saya menganggap takkan ada kenaikan pada kek.. oh.. sungguh salah! macamla taktau kek tu akan naik jugak sbb ada air incorporated.. yappadei!! ok. lesson learnt today :|

devil's food choc cake david lebovitz

made this DFCC for an old friend.. my schoolmate, deskmate to be exact ;)
we havent met for 5years, ever since she went to holland
following her hubby doing his MPhil..
they are back now, with an addition of family member..
a twin girls which look so very alike!
today i can differentiate them sebab pakai baju lain
next time i see them, i dont think i can pinpoint.. this is asmaa', this is husna
masyaallah.. beautiful twins.. and my friend.. am amazed at her ability & energy..

she cares for her own children.. 5 of them age from 10yo to 10mnths
all on her own.. without a helping hand! subhanallah.. she is so great!!!
and her children.. everyone who has met them will fall in love with them!
they are so very sweet & demure, sangat sopan santun & no jerit2 here & there
(huhuhu.. very the opposite of mine to be exact!)

anyway, i'm glad the kids and their ummi enjoy this DFCC very much..
i just want to try.. different recipe of DFCC from previous effort
( o yes.. i love sis rima's DFCC as well!!)
when i read the recipe.. i feel like there's nothing special
but i was wrong! i suppose its the cake flour, which make the cake so very soft!
next, i will try nigella's DFCC, insyaallah..

For the cake:
  • 9 tablespoons unsweetened cocoa powder
  • 1½ cups cake flour (not self-rising)
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • 4 ounces (1 stick) unsalted butter, at room temperature
  • 1½ cups granulated sugar
  • 2 large eggs, at room temperature
  • ½ cup strong coffee (or water)
  • ½ cup whole or low-fat milk
For the ganache frosting:
  • 10 ounces bittersweet or semisweet chocolate, coarsely chopped
  • ½ cup water (or cream)
  • ¾ cup (1½ sticks) unsalted butter
1. Adjust the oven rack to the center of the oven and preheat the oven to 350 degrees.
2. Butter two 9″ x 2″ cake pans and line the bottoms with circles of parchment paper.
3. To make the cake layers, sift together the cocoa powder, cake flour, salt, baking soda, and baking powder in a bowl.
4. In the bowl of a standing electric mixer, or by hand, beat together the butter and sugar about 5 minutes until smooth and creamy. Add the eggs one at a time until fully incorporated. (If using a standing electric mixer, stop the mixer as necessary to scrape down the sides to be sure everything is getting mixed in.)
5. Mix together the coffee and milk. Stir half of the dry ingredients into the butter mixture, the add the coffee and milk. Finally stir in the other half of the dry ingredients.
6. Divide the batter into the two prepared cake pans and bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Cool completely before frosting.
7. To make the frosting, melt the chopped chocolate with the water (or cream) in a heatproof bowl set over a pan of barely simmering water, stirring occasionally until melted. Remove the bowl from the pan of water.
8. Cut the butter into small pieces and whisk them into the chocolate until completely melted and the ganache is smooth. Cool until spreadable, which may take about 1 hour at room temperature.

To frost the cake:

Run a knife around the inside of each of the cakes which will help release them from the pans. Tilt one cake out of the pan, remove the parchment paper from the bottom and invert it back onto a cake plate. Spread a good-sized layer of icing over the top. Top with the second cake layer and spread the top and sides with the remaining icing as decoratively as you want.

Storage: Cake is best the day it is made, although it’s fine the next day. Store at room temperature under a cake dome. Just be sure to keep cake out of the sun in the meantime.

2hari yg lalu, cik abe beli pisang yg sgt2 comel.. besar sikit je drp ibujari nih..
tapi tak laku pulak.. budak2 tu tak tergoda langsung!
kalau pisang berangan tu mmg sekejap je hilang dari pandangan..
(sampai kena sorok la kalau berhajat nak di'kek'kan)
sang ibu berasa sangat2 gumbira pabila pisang2 itu hampir tidak disentuh!
ini satu peluang baik.. memang pucuk dicita ulam mendatang ;)
maka, pada kamis malam jumaat, jam 9mlm, tamatlah riwayat pisang2 tersebut..
dan tercapailah hajat sang ibu nak menjamah CBBS ini..
alhamdulillah....

oh, nak baking kena ada alasan kukuh!
maka alasan utk CBBS ini adalah utk teman2 usrah :)
(pengganti diri sebab tapi tak dapat join usrah hari ini...)

Bahan-bahan
  • 1/2 cawan butter
  • 1 cawan gula <-- saya kurangkan 3/4cwn
  • 1 biji telur
  • 1 sk esen vanila
  • 1 1/2 cawan pisang lenyek (lebih kurang 3biji size medium)
  • 1 1/2 cawan tepung gandum
  • 1 sk baking powder
  • 1 sk baking soda
  • 1/2 teaspoon salt
  • 1/4 cawan serbuk koko - hana buh 2sb je
  • 1 cawan chocolate chips dan kacang nibs
Cara-cara
  1. Dalam mangkuk, pukul butter dan gula. Masukkan telur, esen vanila dan juga pisang lenyek. Pukul sebati.
  2. Dalam mangkuk lain, satukan tepung, baking powder, soda dan juga garam. Ayak dan masukkan ke dalam adunan. Gaul sebati.
  3. Bahagikan kepada 2 bahagian. Masukkan satu bahagian dengan serbuk koko dan kacau rata. Griskan loyang 9 x 13-inci.. Tuang adunan secara berselang seli atau ikut suka. Taburkan choc-chips dan almond/kacang nibs.
  4. Bakar suhu 170 selama 30min atau hingga masak. Sejukkan dan potong 24 square.
verdict:
saya memang peminat coklat + banana
maka.. verdict yg ditulis disini amatlah bias!
of course i like it soooo soooo soooo much!!!
nikmatnya makan chocolate+banana..
the texture is somewhere between cake & fudgy brownies

sicilian orange cupcake

isnin yang lalu anak dara mintak buatkan cupcake atau muffin
umminya terkejut sungguh! tanya dia balik 2,3 kali.. kakak nak ummi buat apa???
sebabnya anak dara tu tak suka langsung makan kek.. kecuali kek batik
jadi, bila dia mintak buatkan.. rasa macam tak percaya..
rupanya untuk dibawa kesekolah.. utk belajar maths.. specifically, fraction.
ummi oke jek.. tp bila dia cakap tu.. xdak resepi yang terlintas lagi..

mula2 nak buat brownies nutella izah.. tapi anak dara taknak pulak..
dia nak jugak2 cupcake or muffins.. so that setiap sorang kawan2 dapat sorang seketul
(sebenarnya mak dia yg nak rasa brownies tu :p)

then.. tgk kat dapur zarin pulak.. lepas tu balik rumah tgk oren dlm peti bertambah lagi!!!
hah.. apalagi.. terus sagat kulit oren 2 bijik.. utk buat sicilian orange cake ;)
tapi buat in cuppies.. ikut permintaan anak dara..
dia bawak kesekolah 18ketul, ada baki lagi 8..
satu dah kena ngapp dgn ummi :p
yang lain2 tinggal utk sikecik sikit.. bawak ke opis sikit..

verdict:
sicilian orange kek ni dah 3kali buat tapi semua kasik orang (ye.. kasik sebijik kek)
so, tak pernah duduk makan betul2.. tak pernah menikmati sepenuh hati..
semalam ngapp seketul.. even without any frosting.. amboi.. nikmatnya!
lembut jek.. dan paling best aroma oren tu.. mmg aromatik! refreshing!

update:
kawan2 anak dara semua kata "sedapnya kek ummi awak!!!!"
wah.. lagi kembang lobang hidung yg dah sedia kembang nih! hehe..

red velvet cheesecake

my sister is coming down for a meeting..
as a kakak mithali (perahsan!), i asked her what she wanted to taste this time
of course she choose this red velvet cheesecake when i emailed the link to her
i think everybody will be attracted to the colour.. esp those who like cheesecakes

as for me..
i just cant stop snapping it with my p&s camera!
kejap2 snap.. makan sikit.. snap! sikecik makan pun snap! :p
rasa macam ambil gambar models on runways pulak!

bahan2 base:
  • 17keping biskut oreo <-- saya tambah lagi sekeping & keluarkan cream
  • 1sdb gula <-- saya letak 1sdk je
  • 1/4cwn butter cair
bahan2 cheesecake:
  • 3ketul cream cheese 250g
  • 1 1/2cwn gula castor
  • 4biji telur, dipukul sedikit
  • 3sdb serbuk koko
  • 1cwn sour cream
  • 1/2cwn buttermilk
  • 1sdk cuka
  • 2sdk vanilla
  • 1oz food coloring <-- saya letak 2sdb
bahan2 frosting:
  • 1ketul cream cheese 250g
  • 1/4cwn butter, dilembutkan
  • 2cwn gula aising, diayak
  • 1sdk vanilla
tatacara:
  1. panaskan oven 160C dan sediakan waterbath. balut bahagian luar loyang springform dengan aluminium foil, sebaik-baiknya 2 lapis.
  2. base: hancurkan biskut dan gaul bersama gula dan butter cair. tekapkan adunan kedalam loyang springform 9inci. (saya simpan dalam freezer sementara buat cheesecake)
  3. cheesecake: putar cream cheese bersama gula hingga lembut. masukkan telur dan bahan2 lain dan putar dengan kelajuan perlahan sehingga adunan sebati. tuang adunan keatas base tadi.
  4. bakar pada suhu 160C selama 10minit dan kemudian turunkan ke suhu 150C dan bakar lagi selama 75minit. biar cheesecake dalam oven lebih kurang 30minit baru keluarkan pada suhu bilik. sebelum buka springform, sisipkan pisau tajam disekeliling kek. sejukkan dalam petisejuk semalaman.
  5. frosting: pukul creamcheese dengan butter hingga lembut. masukkan gula aising sedikit demi sedikit. masukkan vanilla dan pukul sebati. sapu atas kek yang dah sejuk.




nota:
saya buat frosting separuh resepi saja..

verdict:
i think i have a high expectation on this cheesecake..
even though am not sure what to expect! :p
maybe i was expecting the best of both world.. the cake itself.. and the cheesecake
except for the interestingly attractive colour..
i think this cheesecake is just like any other normal cheesecake :-|
anyhow, that is just my perception.. (tastebud ini sgt mengada2 lani tau!)



update:
adik kata settaappppp sgt!
adik ipaq siap tukar.. nk oder hatni instead of red velvet cake utk birthday dia nanti..

mini impossible quiche

hari tu tengok kak LG buat impossible quiche ni..
hari ni saya cuba buat utk dibawa ke potluck sekolah anak2..
buat kecil2 dalam muffin cups.. senang sikit nak pick&eat ;)

bahan2:
  • 1sdb minyak
  • 1bijik bawang, potong halus
  • 2batang sausages, potong kasar
  • 1biji capsicum, potong kecik <-- guna cili idup jek
  • 1/2batang carrot, dipotong dadu kecil <-- saja tambah
  • 1sdb black pepper sauce <-- saja tambah jugek ;)
  • 3bijik telur
  • 1 1/2cwn susu
  • 1/2cwn tepung naik sendiri <-- saya guna tepung gandum + 3/4sdk BP + secubit garam
  • 1cwn grated cheese <-- saya guna 1/2cwn
  • salt & pepper secukupnya
tatacara:
  1. panaskan oven 200C. gris loyang quiche/ muffin (utk mini sizes)
  2. tumis bawang, masukkan sausages dan capsicum (dan carrot dan sauce) dan masak hingga lembut molek dalam 4-5minit. dah masak, tutup api dan biar sejuk sekejap dalam 5minit.
  3. gaulkan telur bersama susu dan tepung. masukkan cheese dan adunan sausages tadi. gaul sebati. perasakan dengan salt & pepper.
  4. tuang kedalam loyang dan bakar 45-50minit (utk loyang quiche); 20-25minit (utk muffin pan).


verdict:
sedap!! tapikan.. huduh bebenor rupanya! tak mantap & padat macam kak LG buat. kenape ye?? lepas keluar oven sekejap.. abih terpenyek2.. syahdu je tengok..sebab kurang cheese agaknya?? mujurlah rasanya yg sedap tu boleh mengubat duka. cewah!

swiss bircher muesli ~ a healthy breakfast :)

saya jumpa resepi ni tatkala men'gugel' healthy baking
kenapa saya yang kategori kecik ni mencari healthy baking??

sebab pertama yang saya dah mention banyak kali..
kenaikan lemak tepu disekeliling pinggang & pinggul

sebab kedua yang saya tak pernah sebut..
tahap kolestrol saya yang agak tinggi.. ya.. melebihi paras normal!

sebab ketiga hanyalah berdasarkan niat dan azam
untuk terus sihat supaya boleh beribadat dengan mudah
dan boleh menguruskan anak2 dan kehidupan seharian
selagi hayat dikandung badan.. insyaallah..

panjang pulak intro hari ini ;)
oh! resepi ni takde kaitan dengan baking
saja nak share healthy breakfast..



adaptasi dari kitchenparade
bahan2 (utk sorang makan):

  • 1/4cwn rolled oats (bukan quaker oat tau!)
  • 1/2cwn susu lowfat
  • 1/4 apple, potong wedges
  • a splash of honey 
  • 1sdb yogurt <-- lupa pulak nak letak!
  • kekacang - almonds/ walnuts/ sesame seeds/ sunflower seeds <-- saya letak biji kuaci
  • buah2 kering - cranberry/ apricot/ kismis <-- saya letak kismis
  • spices - cinnamon/ nutmeg/ cardamom <-- tak letak pun
tatacara:
  1. rendam 1/4cwn rolled oats bersama2 1/4cwn susu dan biar semalam dalam peti sejuk.
  2. keesokan hari, tambah baki 1/4cwn susu dan masukkan semua bahan2 lain dan gaul.
  3. enjoice!
verdict:
senang sangat2 nak makan healthy food nih..
cumanya saya rasa tekak ni tak boleh telan menu ni hari2..
walaupun isi2 dan inti2 tu dipelbagaikan.. 
seminggu 2x mungkin boleh.. insyaallah..
hmm.. cemana nak ajar budak2 makan healthy ni ek?
