nutella banana french toast strata

mula2 jumpa resepi ni i was like.. huh? makanan pun ada strata?
ingatkan bangunan ja.. :p
tapi bila dibelek dan ditelek2..
sungguh meruntun nafsu yg kekontangan breakfast yg enak!

en.wiki kata strata ni:
Strata or stratta is a family of layered casserole dishes in American cuisine.
The most common modern variant is a brunch dish, similar to a quiche or frittata, made from a mixture which mainly consists of breadeggs and cheese. It may also include meat or vegetables. The usual preparation requires the bread to be layered with the filling in order to produce layers (strata). It was popularized in the 1984 Silver Palate Good Times Cookbook by Julee Rosso andSheila Lukins.[1]

the one i made is quite different..
its a sweet strata.. macam bread pudding but me likey! ;)


i halved the below recipe & made in 8x8inch pyrex glass

  • 3 1/2 - 4 cups milk
  • 8 eggs
  • 2 tsp vanilla extract
  • 1 tbsp agave syrup <-- i replace with honey
  • Nutella 
  • 8 sliced bananas
  1. Lightly butter the bottom of a 9x13 dish. 
  2. In a medium bowl, whisk together the milk, eggs, vanilla and agave syrup. 
  3. Spread Nutella on half the squares/rectangles of bread and layer them in the dish, nutella side facing up. Layer sliced bananas on top. Spread Nutella on the remaining squares/rectangles of bread  and layer them on top of the bananas (nutella side facing down).
  4. Pour the egg mixture on top, pressing gently with a spoon so that the bread soaks it all up. Cover with clingfilm and refrigerate overnight (or at least 4hours).
  5. Preheat oven to 350F (170C). Bake strata for 35 minutes, uncovered. 
  6. Let stand for 10 minutes. Dust with icing sugar & serve. I drizzled a little mixture of nutella & cream on top before serving.


note:
i drizzled hershey's chocolate syrup on top..
definitely a yummeh breakfast!

kiwi and plum tart

resepi asal adalah apple and plum tart
tapi stok apple dah susut.. kesian pulak kat cik abe..
itulah dinner dia hampir setiap hari..
plum pun cuma tinggal seketul
mujur kiwi yg keras dan masam masih banyak
so, kiwi and plum it is :)

sweet shortcrust pastry
  • 250g plain flour
  • 125g unsalted butter, chilled and cubed
  • 85g golden caster sugar
  • 1 egg
sponge dough
  • 45g unsalted butter, room temperature
  • 90g golden caster sugar
  • 1 egg
  • 1 1/2tsp baking powder
  • 90g plain flour
fruits
  • 2 bramley apples, cord and cut into 1cm thick
  • 10victoria plums, stoned and halved
  • 3tbs apricot jam to glaze (optional)


  1. sweet shortcrust pastry: put flour, butter and sugar in a mixer and blitz until you get crumbs. add eggs and mix again. take out the dough and bring together into a ball. put the dough on a lightly flored surface and roll until 3-4mm thick. line the tart tin with the dough and trim excess neatly around the edges.
  2. sponge dough: mix butter and sugar with electrick whisk until combined. mix in the egg and baking powder with the whisk, then gently fold the flour by hand (spatula) until evenly combined. spoon into the tart shell and spread evenly.
  3. scatter the apples and plums all over the sponge.
  4. bake in a preheated oven (160C) for 40mins. when the tart is ready, the fruit will have sunk a little and the sponge will have risen up in parts and be golden.
  5. remove from oven and leave to cool for few minutes.
  6. in the meantime, put apricot jam, if using in a small saucepan and heat gently until melted and runny. brush the jam all over the tart filling with a pastry brush and leave for a few more minutes before serving. alternatively, serve it straight from the fridge with a helping of custard.

terasa janggal pulak dok kat dapur tak buat apa2
(hahaha.. macamla rajin sangat! :p)

bahan2:
  • 1cwn rolled oats
  • 3/4cwn air panas mendidih
  • 1 1/2cwn tepung
  • 1 1/2sdk baking powder
  • 1/2sdk serbuk cinnamon
  • 1/4sdk garam 
  • 1/2cwn butter
  • 1cwn gula perang
  • 1/2cwn gula pasir <-- tak letak
  • 2biji telur
  • 1 1/2sdk vanilla
  • 1cwn chocolate chips
  • 1cwn walnuts, dipotong kecil2 <-- saya letak 1/2cwn saja
tatacara:
  1. panaskan oven 170C. gris dan tepungkan loyang 4segi 8inci.
  2. tuangkan air panas kedalam oats. ketepikan dan biar sejuk.
  3. sebatikan bahan2 kering: tepung, bp, cinnamon dan garam. ketepikan dulu.
  4. pukul butter dan gula hingga kembang dan sebati. masukkan telur satu demi satu. masukkan vanilla. masukkan oats.
  5. masukkan tepung dan gaul sebati.
  6. masukkan chocolate chips dam walnut dan gaul sebati. 
  7. tuang kedalam loyang dan bakar 50-55minit.
verdict:
i think the flour (yg dpt free hasil cik abe main tarik tali during the kids sports day- hahaha.. i just realized.. tak releven langsung! tarik tali dapat hadiah tepung!) tak elok.. bau macam hapak! the cake taste weird too.. i was thinking it might be the oat. tapi bila buat tart.. it smells the same! haisshhhhhhh!!! rugi!!!! should i throw the whole cake away????

    spiced orange madeleine

    inilah bekal anak teruna gebu hari ni..
    utk dimakan bersama classmate selepas wrap-up session
    dia tanya apa ni ummi?
    kata ummi: baulu matsaleh rasa oren :p

    bahan2:
    • 2biji telur saiz A
    • secubit garam
    • 1/2cwn gula, dicedok buang 1tbs
    • 1tbs orange blossom honey <-- saya guna madu biasa macam capilano
    • parutan kulit oren
    • 1sdk orange flower water atau sedikit orange extract <-- diabaikan sbb takdek 
    • 1cwn tepung <-- diayak 
    • secubit dua serbuk bunga cengkih <-- saja tambah - itu yg jadik spiced tu ;) 
    • 8sdb butter cair (lebih kurang 120g)
    • gula aising utk ditabur


    tatacara:
    1. panaskan oven 190C dan gris & tepungkan loyang madeleine.
    2. pukul telur dan garam hingga berbuih. 
    3. sebatikan gula dan orange flower water (kalau ada) dan masukkan kedalam telur. masukkan parutan kulit oren dan madu. masukkan tepung. kaupbalikkan hingga sebati (guna rubber spatula).
    4. masukkan butter cair dan kaupbalik hingga sebati.
    5. tuang kedalam acuan dan bakar lebih kurang 12-13minit.
    6. tabur gula aising sebelum dihidangkan.

    nota:
    pertama kali parut kulit oren guna microplane grater.. simply awesome! dapat zest sangat banyak! more than double compared to using grater cap ayam yg selalu buat saya rasa nak baling grater itu kedinding sebab kulit buah yang diparut jadik berair.

    bila hasil parutan banyak.. memang terasa keorenannya.. yummy! cuma terasa macam masam sangat pun ada! maybe sebab saya kurangkan gula lebih drp 1tbs kot?

    terlupa sungguh motif buat ni nak bagi budak2 makan.. tangan gatal menambah serbuk bunga cengkih. hopefully the kids tak kesah dgn rasa bunga cengkih tu.. its not obvious but it gives some 'kick'. perahsan :p

    anak teruna balik bagitau kawan2 cakap sedap dan mintak lagi. diorang suruh bawak bahulu oren banyak2!! hahaha.. kelakar betul budak2 tu..

    banana honey walnut muffins

    bila jualan disekolah semalam laku..
    (bawak pun 5ketul je :p)

    dia kata nak muffins special. apa yg special pun taktau :(
    ummi dia teringin nak terai muffins lain
    lain dalam ertikata tak pernah rasa..
    dan tak pernah cuba buat sebelum ni
    bila tanya banana & walnut ok tak?
    mula2 katanya taknak walnut.. kemudian dia kata ok jelah..




    banana honey walnut muffins
    adapted from onceuponachef
    •       ¾ cup chopped walnuts
    •       ⅓ cup plus 1 tablespoon honey
    •        ½ teaspoon cinnamon
    •             1½ cups all-purpose flour
    •           1½ teaspoons baking powder
    •            ½ teaspoon salt
    •            1 stick unsalted butter, at room temperature
    •             ⅔ cup granulated sugar
    •            2 large eggs
    •            ½ cup mashed bananas (you'll need 1 large very ripe banana)
    •            1 teaspoon pure vanilla extract
    •            ⅓ cup whole or low fat milk 

    1. Preheat the oven to 350°. Spray a 12-cup muffin tin with non-stick cooking spray, then line with paper liners (it is necessary to do both so that muffin tops don't stick to pan).
    2. In a small bowl, toss the nuts with the 1 tablespoon of honey and cinnamon until nuts are evenly coated (obviously, it will be very sticky).
    3. In a medium bowl, combine the flour with the baking powder and salt. Use a whisk to blend well. Set aside.
    4. In a large bowl, using an electric mixer, beat the butter with the sugar and the remaining 1/3 cup of honey until fluffy, 2-3 minutes. Scrape down sides of bowl with rubber spatula if necessary. At medium speed, add the eggs one at a time and beat until fully incorporated between additions. Beat in the banana and vanilla until blended. (It will look grainy.) At low speed, beat in the dry ingredients in 2 batches, alternating with the milk.
    5. Spoon the batter into the prepared muffin tin (I like to use an ice cream scooper) and sprinkle with the nut topping. Bake the muffins until the tops are golden and a toothpick inserted in the center comes out clean, about 30 minutes. Let the muffins cool in the pan for 10 minutes, then turn them out onto a rack and let cool for at least 15 minutes before serving.
         verdict: 
         sangat lembut & ringan. its the lightest banana cake/ muffins i ever taste!
         and the sweetness is just nice :) 
         harapnya laku la jugak jualan kat sekolah tu ;)
         tapi yang bestnya.. hasil jualan masuk tabung sekolah 
         ini macam bangkraplah tokey! :p

    goat's cheese, tomato and basil tart

    resepi inilah yang mula2 mencuri perhatian ketika membelek buku popina ni
    tapi ditangguhkan dulu sebab ketidak-cukupan bahan2..
    dah ada goat's cheese (saya guna feta) dan tomato, yogurt pulak takdak!
    semalam, semua bahan dah lengkap.. terus saya execute walaupun badan sgt letih
    sebab kepingin sangat2 nak rasa.. tart using pizza dough as a base. rasa pizza ke rasa tart?
    and this recipe is surprisingly easy todo!
    tak sangka within 30mins dah siap & already in the oven :)

    bahan2:
    doh pizza
    • 220g tepung roti
    • 1sdk yeast kering
    • 1/3sdk garam
    • 2sdb minyak zaitun
    • 1biji telur
    • 80ml air suam
    filling
    • 2biji telur
    • 100g greek yogurt
    • 100g strong, soft goat's cheese, dilenyek2 <-- i use feta cheese
    • 1sdk baking powder
    • 50g tepung gandum
    • 1sdk garam
    • 1/2sdk black pepper
    • 2tbs fresh basil, di 'chop' halus <-- saya ganti dgn daun bawang
    topping
    • 340g cherry tomatoes, halved
    • 40g strong, soft goat's cheese, crumbled
    • minyak zaitun, utk drizzle
    • sedikit fresh basil, utk decorate <-- patut daun bawang juga tp lupa!


    tatacara:
    1. doh pizza: gaulkan tepung, yis dan garam dalam mangkuk. buatkan lubang ditengah2 dan tuang minyak, telur dan air suam. gaulkan hingga sebati dan menjadi doh lembut. pindahkan doh keatas permukaan rata yang telah di'tepung'kan dan ulli sekejap. canai doh dengan rolling pin sehingga tebal = 3mm. tekapkan doh pada tart pan bersaiz 23cm. kalau ada lebihan doh jangan trim lagi.
    2. panaskan oven 170C.
    3. filling: gaulkan kesemua bahan filling hingga sebati (the cosistency is quite soft). tuang keatas doh tadi.
    4. topping: tabur bahan2 topping keatas filling - mula2, cherry tomato cut size up kemudian, tabur goat's cheese. akhir sekali drizzle minyak zaitun dan barulah trim doh yang berlebihan disekeliling tart pan tersebut (kalau ada).
    5. bakar selama 30minit atau sehingga doh berwarna keemasan.
    6. keluarkan dari oven dan tabur daun basil.

    verdict:
    this is so yummy and fulfilling! more to pizza-y rather than tart-y.
    i plan to have this as breakfast.. tapi kensel. i'll have it for lunch instead! and 2 slices are more than enuf! kalau makan as breakfast kang terlelap pulak depan pc akibat kekenyangan :p

    anak teruna gebu tolong buat filling & tabur topping.. & he really loves it! siap nak bagi kawan2. sori ye sayang.. yang sedap ni utk kawan2 ummi. hehe.. busuk punya ummi :p. kawan2 14org tak cukup la nak oii.. malam ni ummi buat something else utk kawan2 luqman ok? :)

    supermoist chocolate cake

    sedap makan kek coklat yg k.shidah bagi..
    muaz mintak ummi buatkan kek utk dia..
    kebetulan dah berniat nak cuba resepi ni..
    apalagi.. sementara tunngu dough roti naik
    godek2 kejap buat kek ni..

    Bahan-bahan:
    • 100g Serbuk Koko*
    • 200g Gula pasir*
    • 1 tin Susu sejat*
    • 200g Minyak Masak Sayuran*
    • 250g Susu Pekat*
    • 4 biji Telur - pukul sehingga berbuih
    • 150g Tepung Gandum 
    • 1 st Soda Bikarbonat
    • 1st Baking Powder
    Cara-cara

    1. Campurkan kesemua bhn bertanda* dan masak dgn api perlahan sehingga licin dan gula cair sepenuhnya. Tak payah sampai menggelegak.
    2. Satukan bahan * dgn telur yg di pukul tadi dgn hand whisk. Gaulkan bhn2 kering & campurkan sedikit2 sehingga sebati sambil terus dikacau dengan hand whisk.
    3. Masukkan ke dlm tin yg di lapik & minyakkan. Bakar selama 40-45 minit bergantung pada jenis oven. kek ini juga boleh dikukus.
    4. Sejukkan dahulu sebelum di hiaskan dgn icing atau ganache.

    Penyediaan chocolate ganache:
    Bahan2:

    • 150g coklat masakan
    • 65ml whipping cream <-- saya kurangkan letak 50ml 
    • 1 sudu teh mentega
    • 1 sudu teh maple syrup <-- saja tambah. tekstur jadik likat!
    Cara2:
    1. Gunakan kaedah double boiler,cairkan coklat. Kacau sehingga benar2 cair. Tambahkan whipping cream dan mentega. Padamkan api.
    2. Sejukkan seketika (bila sejuk sedikit ganache akan sedikit memekat) barulah dituangkan di atas kek coklat yang sudah disejukkan sepenuhnya.

    verdict:
    senang bangat & sedap bangat! 
    mmg supermoist!

    anak dara bawak cuppy-size kesekolah utk dijual.. (she is really business-minded! terbalik kuang dgn ummi dia :p). her friends cakap sedap sangat-sangat! esok dia mintak buatkan saiz besar.. macam kek yang jual kat kedai. haih.. macam2 demand budak2 sekarang ni.. :-|

    cinnamon sugar pull apart bread

    akhirnya hantu roti baru mari!!! :p

    kalau baca the steps rasa macam susah.. & tak boleh imagine
    tapi bila tengok gambaq.. baru jelas tatacaranya..
    baru keluar perkataan "oo.. camni rupanya.."

    bahan2:
    • 2 3/4 cups plus 2 tbs tepung
    • 1/4 cup gula kasar
    • 2 1/4 sudu kecik yeast
    • 1/2 sudu kecik garam
    • 4 tbs butter
    • 1/3 cup susu penuh krim
    • 1/4 cup air
    • 2 biji telur (size A)
    • 1 sudu kecil Vanilla extract
    For the Filling
    • 1 cup gula kasar
    • 2 sudu kecil serbuk kayu manis (cinnamon)
    • 1/2 sudu kecil serbuk buah pala (nutmeg)
    • 4 tbs butter - dicairkan sehingga menjadi brown

    cik abe tanya apsal gambar tak penuh? cik adik kata inilah seni! :p
    1. Dalam mangkuk yang besar, campurkan 2 cups tepung, sugar, yeast, and salt. Ketepikan
    2. Pukul telur, ketepikan
    3. Dalam small saucepan, campurkan susu dan mentega, panaskan sehingga mentega cair. Ketepikan dan masukkan air dan vanilla extract. Biarkan seketika sehingga mixture menjadi suam2 kuku.
    4. Tuangkan mixture susu dan mentega tadi kedalam bahan kering, kacau dengan senduk. Masukkan telur dan kacau lagi. Add 3/4 cup tepung, dan uli sehingga sebati. The dough will be sticky. Masukkan dough kedalam mangkuk besar yang telah di gris dengan butter/minyak. Tutup dengan kain atau cling wrap, biarkan sehingga dough naik 2 kali ganda.
    5. Sementara menunggu dough naik, campurkan gula, serbuk kayu manis dan serbuk buah pala di dalam mangkuk.
    6. selepas dough naik, tumbuk perlahan untuk mengeluarkan angin. canai doh dengan rolling pin hingga menjadi bentuk 4segi bersaiz 12x20inci (saya ikut saiz placemat so, agak tebal dan gebu).
    7. beruskan butter cair dan tabur filling keatas doh. potong doh kepada 6bahagian secara memanjang. susun bertingkat hingga jadi 6tingkat (macam flat pulak :p) dan potong lagi 6. (sila refer gambar dairimama utk lebih mudah faham)
    8. Setelah dough dipotong, boleh susun dalam loaf pan secara menegak. sebelum tu, gris the pan dengan butter dan tepung.
    9. Bila dough dah naik 2 kali ganda (dalam 30-35minit), bolehla dimasukkan kedalam oven yang telah dipanaskan.
    10. Place a rack in the center of the oven and preheat to 350 degrees F. Place loaf in the oven and bake for 30 to 35 minutes, until the top is very golden brown. The top may be lightly browned, but the center may still be raw. A nice, dark, golden brown will ensure that the center is cooked as well.
    11. Remove from the oven and allow to rest for 20 to 30 minutes. Run a butter knife around the edges of the pan to loosen the bread and invert onto a clean board. Place a cake stand or cake plate on top of the upside down loaf, and carefully invert so it’s right side up. Serve warm with coffee or tea.

    menyesal den! tak cukup manis for my sweet tooth.
    kalau tak minat manis, half recipe of the filling is just nice. insyaallah.

    eggs baked in ham & potato hash

    minggu depan kena revamp weekdays dinner menu..
    tekak ni dah tak lalu nak telan pasta seminggu 2kali
    udahla bebudak nih tak adventurous dgn pasta
    balik2 bolognaise or lasagne. cemuih sungguh nak buat!
    budak2 pun dah jemu jugak tu..
    sebab bila tukar menu hari ni semua ok jek ;)
    anak2 teruna makan bertambah2..
    siap puji sedap & suruh buat lagi!

    bahan2:
    • 200g cooked ham, diced <-- saya guna sausages
    • 200g cooked russet potatoes
    • 1tin jagung <-- tak letak. kiddos didnt like them
    • 3slices cheddar cheese <-- i use 3/4C shredded cheddar
    • 1biji bawang <-- guna separuh saja
    • 2sdb kicap
    • 200ml whipping cream
    • 4biji telur <-- letak 2 saja
    • salt & pepper
    • 50g butter, divided
    • seberkas rosemary, dichop <-- saya ganti 1sdk dried rosemary
    • fresh parsley <-- takdek :(
    tatacara:
    1. dadukan ham, kentang dan bawang. panaskan oven 160C.
    2. cairkan separuh butter (25g) dan tuang kedalam loyang kaca - ratakan. dan tuang kembali butter cair kedalam kuali. masukkan rosemary dan biarkan panas seketika. tuang dalam mangkuk berasingan dan biarkan dulu.
    3. masukkan baki butter dan tumis bawang hingga layu. gaul sebati bawang, ham, kentang dan kicap. perasakan dengan garam & black pepper.
    4. tuang kedalam loyang kaca dan bentukkan lubang menggunakan cawan (lubang utk letak telur).
    5. tuang whipping cream perlahan2 kemudian bakar selama 15minit.
    6. setealah masak, keluarkan dari oven dan pecahkan telur keatas lubang tadi. drizzle butter ber-rosemary keatas bekas. masukkan semula kedalam oven dan bakar lagi 15-20minit atau sehingga telur masak.
    7. hias dengan daun parsley sebelum hidang (tak buat sebab takdak parsley).
    verdict:
    pertama kali makan.. sedapnya!!!
    tapi rasanya kalau kerap2.. aih.. boleh muak jugak :p
    cukup hanya seminggu sekali makan pasta atau menu mcm hari ni
    ataupun cuma 2 minggu sekali? hmm.. molek gak tu..
    dasar tekak melayu, nasik jugak idaman qalbu!

    heaven chocolate tart

    dah berhari2 kepingin nak makan something chocolatey
    nak buat brownies, adoi.. baru tengok resepi dah terasa kemanisannya!
    bila RC tayang chocolate tart ni.. terus save dalam minda - i will make it! soon..
    that soon comes today :)
    lepas setel masak daging kicap & sayur air utk dinner
    terus keluarkan bahan2 buat base tart ni
    molek2 ja nak masuk dalam oven, azan maghrib pun berkumandang..

    sebelum disejukkan. umpama cermin coklat!

    kulit/ kerak:

    • 1 dan 3/4 digestive biscuit <-- i suppose its a cup measurement
    • 1/4cwn serbuk koko
    • 4sdb gula icing
    • 5sdb (75g) butter cair
    isi/ filling:
    • 100g butter
    • 100g dark chocolate 55% <-- i use 70%
    • 100g white chocolate
    • 50g nutella
    • 1/4tin susu pekat <-- saya sukat 125ml
    • apa2 kekacang <-- tak letak
    tatacara:
    1. kulit/ kerak: masukkan biskut, serbuk koko dan gula kedalam food processor atau dry blender. blend hingga hancur sebati. 
    2. pindahkan adunan kedalam mangkuk. tuangkan butter cair dan gaul sebati.
    3. tekankan dan padatkan adunan pada acuan tart. bakar 120C selama 10minit atau sehingga kerak jadi keras.
    4. isi/ filling: campurkan kesemua adunan filling kedalam periuk dan panaskan dengan api kecil hingga sebati. sejukkan seketika sebelum dituang kedalam kerak tadi. 
    5. masukkan kedalam peti hingga filling 'set'
    nota:
    keluarkan pada suhu bilik sebelum dipotong.. kalau dipotong sejuk2 kemungkinan besar filling akan retak.
     



    feta & tomato muffins

    malam ini saya agak kecewa..
    kecewa kerana tidak memeluk anak teruna gebu sebelum tidur
    hanya kerana dia tidak menghafal surah al-falaq!

    bahan2:
    • 2biji telur
    • 300g tepung (~2cwn)
    • 2sdk baking powder
    • 100ml olive oil
    • 200ml whole milk <-- cuma ada susu lowfat
    • 1/3sdk vegetable buillon powder <-- ganti dgn serbuk ikan bilis
    • 1sdk garam
    • 1/3sdk crushed black pepper
    • 1small handful of fresh parsley, chopped <-- ganti dgn 1sdk dried parsley
    • 100g feta cheese, crumbled
    • 260g cherry tomatoes, halved
    tatacara:
    1. panaskan oven 170C. lapik bekas muffins dgn kertas cawan.
    2. gaulkan telur, tepung bp, olive oil, susu, buillon powder, garam, black pepper, parsley hingga sebati.
    3. kaupbalikkan feta.
    4. tuang kedalam bekas muffins, separuh kertas cawan.
    5. tabur 2 cherry tomato (yang dibelah) keatas adunan.
    6. tuang lagi sebahagian adunan keatas tomato hingga memenuhi kertas cawan.
    7. bakar selama 25minit.
    8. makan masa panas2 baru sedap!

      bolognese polenta and apple cake jamie oliver

      dalam mencari resepi yg menggunakan polenta
      terjumpa resepi pakcik jamie ni..
      teruja nak buat bila ditulis "its a bit like clafoutis"
      kalau dalam resepi melayu, lebih kurang bengkang la tu :p
      boleh bawak kerumah mak nanti.. :)

      hmm.. kenapa dinamakan bolognese ya?
      resepi ni berasal dari bologna kot?

      bahan2:
      • 100g polenta
      • 200g tepung, diayak
      • 100g breadcrumbs
      • 100g gula caster <-- saya letak 80g shj
      • 500mk susu fullfat <-- ada stok fresh milk shj
      • 3biji telur, dipukul sedikit
      • 100g madu
      • 55ml olive oil
      • 100g buah tin kering
      • 100g kismis
      • 500g buah apple, dibuang kulit dan dipotong kecil
      • 1/2sdk serbuk cinnamon
      • parutan kulit oren dan lemon <-- nehi! lupa yg ini!!!
      • 1sdk garam
      bukan lapar dah ni.. macam org kebuluran ja gayanya!

      tatacara:
      1. panaskan oven 180C dan gris loyang springform 11inci (saya guna 9inci + 6cavity muffin pan).
      2. satukan bahan2 kering: polenta, tepung, breadcrumbs dan gula. 
      3. dalam mangkuk berasingan, satukan bahan2 basah: susu, telur, madu dan olive oil. masukkan bahan basah kedalam bahan kering dan gaul hingga betul2 sebati.
      4. masukkan buah2: buah tin, kismis dan apple serta serbuk cinnamon, parutan oren dan lemon dan garam. gaul sebati.
      5. tuang kedalam loyang dan bakar selama 50minit. mungkin perlu ditutup dengan aluminium foil ketika hampir masak.
      verdict:
      memang macam clafoutis! tak rasa sangat the grains of polenta & breadcrumbs.
      plus.. agak tawar.. kalau makan dgn cream fraiche mcm jamie kata sure lagi menarik!
      bila makan gitu ja rasa macam bengkang buah epal yang kurang lemak :p


      "the polenta" yg dibeli di cold storage. rm9.90 rasanya..

        chocolate cheesecake brownies

        rasa excited nak buat dan nak makan
        tapi stok telur dah kehabisan :(
        cik abe pulak ke kedai tapi terus sambung kerja
        dalam 1am baru pulang kerumah..
        so, this had to wait till today.

        suka betul pinggan handmade dari pakistan ni..
        beli masa aman palestin  buat charity sale @bsc

        bahan2:
        • 185g butter, dicairkan
        • 1/4cwn serbuk koko, diayak
        • 1cwn gula caster <-- saya letak 3/4cwn shj
        • 2biji telur
        • 1cwn tepung, diayak
        cheesecake:
        • 285g cheese, dilembutkan dan di'chop'
        • 4 1/2sdb gula caster
        • 2biji telur
        • 1/2sdk vanilla essence <-- saja tambah 

        the "swirl" is not there :(

        tatacara:
        1. panaskan oven 150C. lapik loyang 8inci dgn baking paper.
        2. gaulkan serbuk koko, gula, telur dan tepung hingga sebati. tuang kedalam loyang.
        3. proseskan cheese, gula, telur (dan vanilla) dalam food processor hingga lembut dan sebati. tuang keatas adunan coklat. swirl dgn pisau.
        4. bakar selama 45-50minit.

        verdict:
        simple & easy recipe but delivers satisfying result.

        baked pear custard

        asal-asalan kepingin nak makan cheesecake brownies
        tapi jumlah telur tak mencukupi..
        kalau tunggu cik abe balik,
        rasanya sempat ayam bertelur dulu kot :p

        bila dibelek2 lagi resepi makcik donnahay
        rasa macam enak juga makan puding utk berbuka nanti..
        oh. bukanlah makan puding semata2..
        main dish kak shidah dah tlg supply ;)
        its a jap chae! weeeehuu!

        back to the pudding..
        kenapa pear jadi pilihan?
        sebab cik abe makan tak sampai separuh & dia kata tak sedap
        cik adik apalagi.. terus timbul mentol atas kepala..ting!
        semestinya bakal dikorbankan dalam oven :D
        walaupun cuma separuh.. jaaadiklaaaah...
        kita buat separuh resepi saja ;)

        bahan2:
        • 2cwn single cream <-- saya guna heavy cream
        • 2biji telur
        • 1biji kuning telur <-- tak letak. malas nak sukat separuh kuning telur
        • 1/3cwn gula castor
        • 1sdk vanilla
        • 1biji corella pear, dihiris nipis <-- terpaksa hiris ikut bentuk gigitan :p
        • serbuk pala, utk ditabur
        tatacara:
        1. panaskan oven 150C.
        2. didihkan cream dalam periuk kecil hingga berbuih2 sedikit dipinggir periuk (tak perlu sampai menggelegak).
        3. whisk telur, gula dan vanilla hingga sebati.
        4. tuang cream panas kedalam adunan telur. kacau hingga sebati.
        5. tuang kedalam bekas.
        6. susun hirisan pear diatas.
        7. bakar selama 20-25minit atau sehingga bahagian tengah dah "set"
        8. tabur serbuk pala sebelum dihidangkan.
        sikecik menikmati jap chae dgn penuh perahsaan. wajib berguru dgn k.shidah ;)

        sedap bangat! sudah hampir licin! tengkiu again k.shidah :)
        puding kat sebelah pun dia yg licinkan separuh

          breakfast muffins

          saya beli buku donna hay semata-mata kerana namanya
          saya berkenalan, eh, kenal namanya drp blog technicolorkitchen
          banyak resepi2 yg diadaptasi dari donna hay
          jadi, bila jumpa bukunya di bookxcess, terus rembat ;)

          resepi pertama yg menggoda: breakfast muffins 
          a combination of oats, banana, strawberry and apple
          dah lama nak buat tapi takdak stoberi
          bila dah beli stoberi, masa pulak tak mengizinkan..
          dan rasa macam rugi pulak.. beli buah mahal2, buat muffins saja??
          makanya saya bahagi-duakan stoberi tu.. separuh lg utk agenda lain

          semalam saya paksa diri walaupun dah hampir masa tidur budak2
          (budak2 tidur mak budak pun kena tidur jugak :p)
          1/3batch bake semalam.. kak insyirah tapau ke sekolah utk jamu kawan2
          1/3batch bake pagi ni.. ummi tapau ke opis. laku jugak lelong pagi ni :p
          1/3batch still in oven masa nk keluar rumah tadi. utk sedekah kat jiran2
          from 3cwn tepung.. thats how much i get: 3x12pcs.
          dalam buku kata yield 12pcs.
          besar bom gamaknya!

          bahan2:
          • 3/4cwn minyak jagung
          • 1 1/2cwn gula castor <-- saya kurangkan 1tbs tp masih manis!
          • 1/2cwn susu
          • 3biji telur
          • 3cwn tepung
          • 2sdk baking powder
          • 1 1/2sdk serbuk cinnamon
          • 1/2cwn rolled oats
          • 3/4cwn pisang, dilecek lenyek
          • 1 1/2cwn strawberries, dipotong kecil
          • 1biji apple, disagat
          • 1sdb raw sugar <-- saya guna gula perang
          tatacara:
          1. panaskan oven 180C. gris loyang muffins atau susun muffins liner.
          2. dalam mangkuk kecil, sebatikan minyak, gula, susu dan telur = bahan basah.
          3. dalam mangkuk sedang, ayak tepung, baking powder dan serbuk cinnamon. masukkan 1/3cwn rolled oats kedalam adunan tepung.
          4. masukkan buah2 kedalam adunan tepung. masukkan bahan basah. gaul sebati tapi jgn terlebih gaul -nanti muffins jadi keras. tuang kedalam acuan.  
          5. sebatikan baki rolled oats dan gula perang. tabur keatas adunan dalam acuan. bakar 25min.



          verdict:
          walaupun agak manis tapi saya sangat suka! :D

          spiced orange and cranberry snacking cake

          saya masih belum jemu membelek buku ni..
          the recipes are very simple yet, very interesting (at least to me :D)
          resepinya banyak guna buah dan rempah
          kali ni saya cuba resepi spiced orange cranberry cake
          utk dibawa kerumah amati hayati di puchong..

          bahan2:
          • 1/2cwn butter tak bergaram
          • 3/4cwn gula
          • 1sdb parutan kulit oren
          • 1/4cwn fresh orange juice
          • 2biji telur, dipukul sedikit
          • 1/2cwn sour cream
          • 1sdk vanilla
          • 1 1/2cwn tepung kek
          • 1sdk baking powder (bp)
          • 1/2sdk baking soda
          • 1/4sdk garam
          • 1/4sdk serbuk bunga cengkih
          • 1cwn buah cranberry kering <-- lebih kurang 100g

          dah tinggal seciput baru sempat snap.. dgn  tangan yg terketar2 :(

          tatacara:
          1. panaskan oven 175C. gris dan tepungkan loyang kek 4segi bersaiz 8inci.
          2. pukul butter & gula hingga kembang dan gebu. masukkan parutan kulit oren dan sebatikan.
          3. satukan bahan2 basah dalam mangkuk kecil: telur, sour cream, vanilla dan jus oren. masukkan kedalam adunan butter dan pukul sebati.
          4. satukan bahan2 kering: tepung, bp, soda, garam & serbuk cengkih. masukkan kedalam mixer sedikit demi sedikit dan pukul pada kelajuan sederhana perlahan hingga sebati.
          5. kaupbalikkan buah cranberry kedalam adunan.
          6. tuang adunan kedalam loyang dan bakar selama 35-40minit.
          masa tengah buat, bau cengkih agak kuat. tapi bila kek dah siap.. tak bau langsung! dan tak rasa sangat! kalau taktau ada letak cengkih memang takkan perasan.. tapi mmg sedap bangat kek ni :D. harum.. (bau oren), teksturnya lembut.. dan bila tergigit cranberry tu rasa macam wow! hahaha.. tak gheti nk describe :p

          almond apricot cake

          dalam dok fikir nak bawak apa utk meeting dgn staff
          opismate usulkan buat kek yg ada apple, apricot & nuts..
          tak puas agaknya makan kek apple, apricot & walnut haritu ;)
          bila tgk kek ni dlm foodbuzz, dia terus tergoda!
          (gambar2nya mmg lawa bangat!)
          tapi dia taknak glaze/ icing..
          saya cadang nak tabur baki gula+cinnamon
          tapi silap percaturan..
          tabur sebelum bakar
          maka jadilah kerak hitam manis!

          sebelum tu..
          dok belek & telek resepi nigelslater's almond apricot cake
          the volcano cake that i never got to taste..
          hmm.. tanpa raising agent.. rasa macam lagi sedap
          but the execution is a bit troublesome.

          • 1 cup butter, at room temperature
          • 3/4 cup sugar
          • 4 eggs, at room temperature
          • 1 teaspoon vanilla
          • 1/4 teaspoon almond extract
          • 1 1/4 cups almond flour
          • 1/2 cup all-purpose flour
          • 1/2 teaspoon baking powder
          • 1/4 teaspoon baking soda
          • 1/4 teaspoon salt
          • 1 cup diced fresh apricot (or dry apricot soaked in hot water for 10 minutes) <-- i soaked in hot tea


          1. In a medium bowl cream together the butter and sugar until well combined and creamy. Add the eggs one at a time, beating for 30 seconds after each addition. Stir in the vanilla and almond extract.
          2. To the butter mixture all all at once the almond flour, all-purpose flour, baking powder, baking soda, and salt. Mix on low speed until the mixture is smooth. Fold in the chopped apricots.
          3. Spread the batter into the prepared pan and bake for 35 to 45 minutes, or until the cake springs back when gently pressed in the center and the edges pull away from the sides of the pan. After 30 minutes you may need to loosely cover the top of the cake with foil to prevent over-browning. Allow the cake to cool in the pan for 15 minutes, then turn the cake out into a wire rack to cool completely.
          notes:
          am actually experimenting or rather re-trying the use of almond extract.
          i used 1/4tsp in tiramisu and i really truly regret it!
          now, am using it in a cake but..
          i think am gonna trow it away.. (the extract. not the cake).
          the taste of 1/4tsp almond extract in 1/2kg cake is so overpowering!
          ok. am exaggerating.. its just a remote taste.
          tapi tetap rasa macam ubat!!!

          apart from the weird-medicinal taste
          the cake is soft & moist!
          if i were to make this again..
          i'll opt out the almond extract/ essence.
          definitely!

          french breakfast puff

          pagi ni opis buat kenduri tahlil
          cadangnya nk bawak kek seketul dua
          tapi diusulkan utk bawak muffins
          french breakfast puff jadi pilihan sbb namanya breakfast!
          hahaha.. mcm sengal pulak bg reason tu :p

          Ingredients:

          • 1/3 cup shortening or softened butter = 75g
          • 1/2 cup sugar
          • 1 egg
          • 1 1/2 cups flour
          • 1 1/2 teaspoons baking powder
          • 1/2 teaspoon salt
          • 1/4 teaspoon nutmeg
          • 1/2 cup milk

          Topping:

          • 6 tablespoon butter, melted
          • 1/2 cup sugar
          • 1 teaspoon cinnamon

          Instructions:

          1. Cream shortening and sugar. Add egg, mixing well. Stir in milk.
          2. In a separate bowl, combine flour, baking powder, salt, and nutmeg. Add to wet mixture, stirring until moistened.
          3. Fill greased or paper-lined muffin cups with batter. Bake at 350 degrees for 20 minutes or until muffins test done.
          4. Remove muffins from pan and allow to cool for a few minutes. Combine sugar and cinnamon in a small bowl. Dip the top of each muffin in the melted butter and then in the cinnamon sugar.





          verdict:
          makan gitu aja tanpa topping pun sedap! lembut ja muffins ni..
          rasanya sipi2 macam kenny rogers vanilla muffins ;)
          ramai yg suka this sort-of-finger-food..
          my big boss nak order tapi saya pass je resepi ni..
          saya usulkan pada dia: apa kata boss suruh anak bini boss buatkan :p

          spaghetti pie

          menu dinner semalam.. a spaghetti pie.
          of course anak gebu ummi tu sgt suka!
          kakak & adik makan 'pie' saja..
          the cheese topping diserahkan kpd yang sgt suka.

          Betty says "If you hold your uncooked spaghetti together in a bundle, 4 ounces is about as big around as the size of a quarter."
          • 4 ounces uncooked spaghetti
          • 1/2 pound lean ground beef
          • 1 small green bell pepper, chopped (1/2 cup)
          • 1 small onion, chopped (1/4 cup)
          • 1 (14-ounce) jar spaghetti sauce (I used my homemade sauce)
          • 1 teaspoon chili powder
          • 1/2 teaspoon salt
          • 1/4 teaspoon pepper
          • 2 large eggs
          • 1 cup small curd creamed cottage cheese
          • 1/2 cup shredded mozzarella cheese (2 ounces)

          Heat oven to 375°. Grease pie plate, 10 x 1 1/2 inches. Cook spaghetti as directed on package.

          While spaghetti is cooking, cook beef, bell pepper and onion in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.

          Stir in spaghetti sauce, chili powder, salt and pepper. Cook 5 to 6 minutes, stirring occasionally, until sauce is thickened.
          Drain spaghetti. Place spaghetti in pie plate; gently press on bottom and 1 inch up side of pie plate.

          Mix eggs and cottage cheese; spread evenly over spaghetti. Spoon beef mixture over cottage cheese mixture. Sprinkle with mozzarella cheese.
          Bake 35 to 45 minutes or until center is set. Let stand 5 minutes before cutting.

          apple, apricot and walnut quickbread

          i shall call this cake a 2am cake!
          brg2 dah keluarkan sebelum 10pm
          tapi pembuatannya dilaksanakan pada jam 2pagi!
          ok ok.. no big deal.. others who take orders also bake at wee hours
          but am not taking orders.. just doing it out of excitement to feed my officemates

          am really happy to see them munching the cake.. to their heart content
          haha.. ayat yg sgt over! :p
          but i think my boss really like it..
          he kept coming to the pantry looking for it.
          how do you feel when ppl like what you've prepared?
          happy-ness.. hilang rasa mengantuk dek tak cukup tidur :)

          bahan2:
          • 225g tepung wholemeal
          • 1sdk baking powder
          • secubit garam
          • 175g gula perang <-- saya kurangkan ke 150g
          • 115g marjerin sunflower, lembut, pada suhu bilik
          • 2biji telur, dipukul sedikit
          • sebiji oren, diparut kulitnya dan diambil jusnya ~ 50ml
          • 1biji apple, dipotong dadu kecil
          • 50g apricot kering, dipotong kecil
          • 50g walnut, dipotong kecil
          tatacara:
          1. panaskan oven 180C dan lapik loyang gris paper atau grease & tabur tepung pada loaf pan 9X5inci.
          2. ayak tepung wholemeal, baking powder dan garam. tuang sisa2 wholemeal kedalam mangkuk tepung tadi. masukkan gula, marjerin, telur serta jus dan kulit oren. pukul menggunakan mixer. (saya pukul guna senduk je. hand mixer dah sedekah kat adik).
          3. masukkan apricot, apple dan walnut dan gaul sebati.
          4. tuangkan kedalam loyang dan bakar selama 1jam.



          hmm.. do you think this cake is healthy?
          100% wholemeal flour + fruits = healthy?
          am not sure..

            strawberry marble cheesecake bars

            i have no idea why i made this..
            and for whom..
            but am glad i did it..
            boleh dibawa ke rumah kakak ipar esok.. :)
            boleh jamu kawan2 yg datang ke rumah.. kat opis :):)



            terlintas nak buat ni sebab cik abe ada belikan strawberry yogurt
            he has a habit of buying things that he feels the kids or me, will eat
            yogurt, chocolate, ice creams, fruits .. and he used to buy SR cakes as well
            the truth is.. we do eat them but if its too frequent.. one will get bored. rite?
            tapi saya tak bising kat dia.. saya terima saja apa yg dibelinya
            (lebih baik ada sesuatu drp takdak langsung, kan? :D)
            bila dah lama bersemadi dlm peti, saya korbankan dulu sblm ditongsampahkan

            bahan2:
            • 100g biskut marie, dihancurkan
            • 50g butter cair
            • 200g cream cheese <-- saya terus guna seketul 250g
            • 75g gula castor
            • 135g strawberry yogurt (1bekas kecil)
            • 80ml heavy cream
            • 10g tepung jagung
            • 1biji telur
            • 1/2sdb lemon juice
            • 1/2sdb parutan kulit lemon
            • sedikit strawberry emulco atau 3sdb jem strawberry+1sdb air panas
            tatacara:
            1. gaulkan biskut marie cair bersama butter cair dan tekan2 pada dasar loyang ciskek 7inci (yang boleh bukak dasarnya). balut loyang dengan aluminium foil.
            2. masukkan loyang kedalam peti sejuk selama 15minit.
            3. panaskan oven ke suhu 150C.
            4. putar cream cheese  hingga hancur dan lembut. masukkan gula dan putar hingga gula sebati.
            5. masukkan yogurt dan heavy cream. putar sebati.
            6. masukkan telur dan lemon juice, putar pada kelajuan perlahan.
            7. tuang adunan keatas biskut tadi.
            8. sebatikan jem strawberry bersama air panas dan tuang keatas adunan ciskek. lorek dengan lidi atau hujung mata pisau untuk membentuk kesan marble.
            9. bakar secara bain marie (letak loyang dlm bekas berisi air panas) selama 1jam 20minit.
            10. biarkan dalam oven selama 1jam selepas dibakar baru keluarkan ke suhu bilik.
            11. sejukkan dalam peti semalaman atau sekurang-kurangnya 4jam sebelum dipotong.


            nota:
            • saya guna 2 loaf pan (untuk dapatkan ciskek yg nipis - berhajat nak buat style bars) so, masa bakar dikurangkan ke 1jam 10minit sahaja.
            • saya guna strawberry jem sugar free so, tak manis langsung! tapi ciskek tu sendiri dah agak manis :p
            budak kecik kat blkg tu habiskan kesemua ciskek dlm pinggan tu..
